These veggie chips are a Crunchy, crispy and a guilt-free snack that takes just 20 minutes to make! Low in calories and fat, and so much better than store bought!

Steps:
- Preheat the oven to 200C/400F.
- Slice all the veggies into uniformly thin slices with a knife or mandoline. In a bowl, toss them with the oil, salt, and pepper until evenly coated.
- Spread out on a baking pan lined with parchment paper, minimizing overlap. Bake for 10 minutes at 400F. Flip. Bake for another 5-10 minutes until crispy and slightly brown but not burnt. Watch them carefully and even remove some early if they are browning before the others.
- Remove from the oven and allow to cool for a few minutes before eating.

CAVIAR DIP WITH ROOT-VEGETABLE CHIPS

- Stir together sour cream and creme fraiche in a serving bowl. Gently stir in caviar and 2 tablespoons chives until well combined. Cover, and refrigerate for 1 hour (or up to 1 day).
- Sprinkle the dip with caviar and remaining 2 teaspoons chives for garnish. Set serving bowl in a larger bowl filled with ice. Serve immediately with root-vegetable chips.
AIR FRYER VEGGIE CHIP MEDLEY
Sweet, earthy beets and crispy, salty potatoes come together in this easy air-fryer chip medley that's inspired by the favorite store-bought variety. It will take a couple batches to complete, but the final result is a super satisfying snack you can enjoy any time of the day.

- Thinly slice both potatoes on a mandoline, about 1/16 inch thick. Transfer to a medium bowl and run under cold water until almost all the white starch comes off and the water runs clear. Dry well between a few paper towels. Dry the bowl as well.
- Return the dry potatoes back to the bowl and toss with 1 tablespoon of the oil, 1/2 teaspoon salt and a few grinds of pepper until evenly coated.
- Preheat a 3.5-quart air fryer to 320 degrees F. Shingle the potatoes in the bottom of the basket; it's okay if there are two layers. Cook until the potatoes are golden around the edges and crisp, tossing every 5 minutes with tongs so they're evenly cooked, 20 to 25 minutes. If you notice a few slices are finished cooking and completely crisp before others, remove to a bowl and continue air frying the remaining pieces.
- Meanwhile, thinly slice both beets on the mandoline, about 1/16 inch thick. Transfer to another medium bowl and toss with the remaining 1 tablespoon oil, 1/2 teaspoon salt and a few grinds of pepper until evenly coated.
- Return the air fryer to 320 degrees F. Shingle the beets in the bottom of the basket; it's okay if there are two layers. Cook until the beets are darkened around the edges and crisp, tossing every 5 minutes so they're evenly cooked, about 30 minutes. If you notice a few slices are finished cooking and completely crisp before others, remove to a bowl and continue air frying the remaining pieces.
- Combine the beet chips and potato chips in a large bowl, season with a pinch of salt and toss to combine. Serve immediately or let cool and store in an airtight container for up to 2 days.

HOMEMADE ROOT VEGGIE CHIPS WITH CAVIAR
This easy and impressive appetizer gets its appeal from the combination of colorful, earthy potato slices and rich, briny caviar.

- Preheat oven to 350°F. Trim ends of potatoes. Using a mandolin or very sharp knife, cut potatoes into very thin slices, each no more than ⅛-inch thick (you'll want to have at least 24 slices, but slice up extras so you can choose the best-looking chips for your caviar). Arrange slices on paper towels and sprinkle on both sides with salt. Let sit 15 minutes, then blot dry with paper towels.
- Oil 2 large baking sheets; arrange potato slices in a single layer over the baking sheets. Bake until crisped, 20 to 25 minutes. Transfer to a wire rack to cool. (Chips can be stored in an airtight container for up to 4 hours.)
- Place 24 chips on a platter. Top each chip with a generous ½ teaspoon crème fraîche, a scant ¼ teaspoon caviar and a sprinkling of chives. Serve immediately.

- Using a vegetable peeler, peel parsnips into long, thin strips, turning often, and stopping when you get to the tough core. With a mandoline or a hand slicer, slice potatoes, sweet potatoes, and beets into very thin rounds (less than 1/8 inch thick). Transfer vegetables to separate bowls, and separate slices with your fingers.
- Heat 3 inches of oil in a deep, heavy pot until it reaches 360 degrees. Working in small batches, fry parsnips, stirring to separate, until light gold and crisp, 30 to 45 seconds. With a wire-mesh skimmer, transfer to a baking sheet lined with a double layer of paper towels. Spread parsnips into a single layer, and sprinkle with salt. Repeat with potatoes and then sweet potatoes, cooking each batch about 1 minute. Replace paper towels between batches. (Adjust heat between batches as needed to maintain oil temperature.)
- Toss beet slices with Wondra flour, and shake off excess. Fry beets until crisp and golden, stirring to separate slices, about 1 minute. With a wire-mesh skimmer, transfer to a baking sheet lined with a double layer of paper towels. Spread beets in a single layer, and sprinkle with salt. Let chips dry and cool completely before serving or storing. Wrap chips in paper towels, then plastic wrap, and store in a resealable plastic bag for up to 1 day.

- Preheat oven to 375° F. and brush 3 large baking sheets generously with some oil.
- With a mandoline or other manual slicer cut 1 potato crosswise into 1/8-inch-thick slices. Immediately arrange slices in one layer on 1 baking sheet and brush with some remaining oil. Sprinkle potatoes with dill and salt and pepper to taste.
- Bake slices in middle of oven until golden, 15 to 20 minutes, and with a metal spatula immediately transfer to a rack to cool completely. Repeat procedure with remaining potatoes and baking sheets in same manner. Potato chips may be made 3 days ahead and kept in an airtight container at room temperature.
- Top potato chips with 1 teaspoon each of caviar and crème fraîche or sour cream, side by side.

- Heat lard/tallow in a large diameter pot or Dutch oven over medium-high heat. (If it begins to bubble before the veggies are sliced, reduce heat a tad to prevent burning).
- Meanwhile, slice the vegetables in small batches and in the order listed above to minimize oxidation while they wait their turn to be fried (start with just the yuca and parsnips – when those are almost done frying, slice the potato, and so on). The red beets can also discolor the lard, so be sure to fry them last.
- When the melted lard is 350-375 degrees or when a test slice crackles when dropped in, it’s ready. Drop enough slices to create a single layer on the surface of the lard. Cook for 2-3 minutes, using metal tongs to stir/flip chips as needed to ensure even cooking.
