MEDITERRANEAN WHITE BEAN SPREAD WITH FRESH HERBS

Mediterranean White Bean Spread With Fresh Herbs image

This spread or dip is a bit different than others I've tried. The flavor reminds me of herbed olive oil that you dip bread into. Fresh herbs are a must, but any white bean can be used in place of the cannellini beans. I used purple basil, which gave the spread a nice color. It is good any way you'd normally use hummus or most any dip, but I think it is especially good on crostini or crackers, or as a sandwich spread. This is adapted from a recipe from Kraft.

Time 10m

Yield 4 serving(s)

Number Of Ingredients 8

1 (15 ounce) can white kidney beans, rinsed and drained (cannellini)
3 cloves garlic
1 1/2 tablespoons lime juice
1 tablespoon olive oil
1 tablespoon basil, fresh, snipped into medium size pieces
1 tablespoon thyme, fresh
1/4 teaspoon salt, to taste
1/4 teaspoon fresh ground black pepper, to taste

Steps:

  • Place beans, garlic, lime juice, and olive oil in food processor or mini-chopper; process until smooth.
  • Add the rest of the ingredients and pulse until well mixed and the herbs are chopped as coarsely or finely as you like (I like them almost liquified).
  • Refrigerate for at least a few hours so the flavors blend (overnight is even better).

HERB TOAST

Herb Toast image

This toast is great to serve with soup or salad. You can use up your older loaves of bread with this recipe, as long as they're not completely dried up. Prep time does not include the 'butter softening time'.

Number Of Ingredients 7

1/4 lb butter, softened
1/4 teaspoon dried oregano

HERB GARLIC BAGUETTES

Herb Garlic Baguettes image

Another recipe from the Instructions and Recipes booklet which came with my KitchenAid mixer. It's actually very similar to my Herb Batter Bread, but with the addition of the garlic and that the loaves are baguettes. Prep time includes mincing the garlic cloves in a mini-chopper, but does NOT include rising times.

Time 40m

Yield 2 loaves

Number Of Ingredients 12

3 1/4 cups all-purpose flour
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
2 cloves fresh minced garlic
1 teaspoon salt
3/4 cup cold water
1 tablespoon dry active yeast (1 packet)
1 teaspoon sugar
1/4 cup warm water (105°F to 115°F)
1 egg
1 teaspoon water

Steps:

  • Put 3 1/4 cups flour, basil, oregano, thyme, garlic and salt in bowl.
  • Mix using dough hook (s) until well blended, scraping bowl if necessary.
  • Dissolve yeast and sugar in warm water.
  • Continue mixing on slow speed and slowly add yeast mixture and cold water.
  • If dough is sticky you may add up to 1/4 cup extra flour, a little bit at a time.
  • If dough is too dry you may add a little extra water.
  • Continue mixing until dough is smooth and elastic, about 3 minutes.
  • Cover and let rise in a warm place (70° to 80°F) until doubled in size, about 1 1/2 to 2 hours.
  • When doubled, turn out on a lightly floured surface and punch down several times to remove air bubbles.
  • Divide dough in half.
  • Shape each half into a 12 inch long loaf.
  • Place loaves on a greased baking sheet.
  • With sharp knife make 3 or 4 shallow diagonal slices on top of loaf.
  • Combine egg and 1 TSP water, whisking until well blended.
  • Brush top of each baguetter with egg mixture.
  • Cover with greased plastic wrap and let rise until doubled in size, about 1 to 1 1/2 hours.
  • Preheat oven to 450°F.
  • Remove plastic wrap and brush top of each baguette with egg mixture again.
  • Bake at 450°F for 15 to 20 minutes, or until loaves are deep golden brown.
  • Remove and cool on wire racks.

Yield Makes about 3 1/2 cups spread and about 75 toasts

Number Of Ingredients 12

For toasts
1 baguette (about 22 inches)
1/2 stick (1/4 cup) unsalted butter
For spread
two 19-ounce cans white beans such as cannellini
1 cup packed fresh flat-leafed parsley leaves
2 large garlic cloves
1 teaspoon salt
2 teaspoons minced fresh thyme leaves
2 teaspoons drained capers
3 tablespoons fresh lemon juice
6 tablespoons extra-virgin olive oil

Steps:

  • Make toasts:
  • Preheat oven to 375°F.
  • Cut baguette crosswise into 1/4-inch-thick slices. In a saucepan melt butter with salt to taste over moderate heat and brush butter on one side of each slice. Arrange baguette slices, buttered sides up, on 2 large baking sheets and toast in upper and middle thirds of oven until golden, about 12 minutes. (Toasts may be made 2 days ahead and kept in an airtight container.)
  • Make spread:
  • Drain beans in a colander. Gently rinse beans and drain well. Mince parsley. In a food processor blend together all spread ingredients except oil until smooth.
