- 1. In a large pot of cold water, bring the potatoes and garlic to a boil. Salt the water and cook until the potatoes are tender, about 20 to 30 minutes.2. Meanwhile, heat the cream, 4 tablespoons butter, 1 tablespoon chopped sage, and the thyme sprigs over medium heat until the butter has melted. Remove from the heat and let the herbs sit in the warm cream until the potatoes are done. Remove the thyme sprigs before adding to the potatoes. 3. Drain the potatoes, return the potatoes to the pot and mash over low heat, or mash in the bowl of stand mixer fitted with the paddle attachment. Add the herbed cream and crème fraîche. 4. In a skillet, melt 6 tablespoons butter and the sage leaves over medium heat until just browned. The butter will melt, foam and froth, then begin to brown along the bottom. Whisk browned bits off of the bottom of the pan. Remove the sage leaves. Pour the browned butter into the warm mashed potatoes. Taste and season with salt and pepper.5. Serve the potatoes warm, topped with the remaining 2 tablespoons butter, sage and fresh chopped chives.

- In a large saucepan, combine the potatoes, 1 teaspoon salt and cold water to cover. Bring to a boil over high heat. Lower the heat to maintain a simmer and cook until fork-tender, about 10 minutes. - Peel the potatoes and chop them in one inch cubes. This will not only speed up the cooking time, but will also make mashing more manageable. Rinse the potatoes under cold running water to wash away the excess starch and transfer them to a pot. Add enough cold water so the potatoes are covered by one inch of water.
- Over high heat, bring the potatoes to a boil. Add a generous pinch of salt to the pot - about a half a teaspoon - and stir. Lower the heat to medium-high and continue to cook the potatoes until they are fork tender - about 20-25 minutes.
- Remove the potatoes from the heat and drain well. Set them aside to cool slightly while you prepare the other ingredients.
- Transfer the potatoes back to the pot. Mash them using your favourite mashing technique. That could be with a hand-held masher or a potato ricer. I always use a hand mixer to mash potatoes; try it - they are always light and fluffy. Once the potatoes are mashed, add all of the remaining ingredients to the pot and either use your hand mixer to combine or stir well with a wooden spoon.
- At this point, the mashed potatoes are ready to serve. You can plop them right onto individual plates or you can transfer them to a serving bowl and top them with extra melted butter and fresh parsley for garnish. To keep the potatoes warm, leave them in the pot and cover with a lid. Keep the potatoes on a burner of the lowest heat setting. Stir regularly to avoid burning the potatoes or drying them out.

- Beat the butter in a small bowl with a rubber spatula until creamy. Add the parsley, 1/4 teaspoon salt and the nutmeg and mix to combine. Scrape the butter onto a piece of plastic wrap and form into a log. Wrap tightly and refrigerate until firm, at least 30 minutes, or freeze up to 1 week.
- Combine the milk, 1 teaspoon salt and the bay leaf in a large saucepan. Peel the potatoes and cut into 1-inch pieces, adding them to the pot as you go so they don't discolor. Bring to a gentle simmer over medium heat; cook, stirring to prevent the milk from scorching, until the potatoes are very tender, 15 to 20 minutes.

GARLIC HERB MASHED POTATOES
Steps:
- Peel and cut the russet potatoes into 1-inch cubes. Place the cubed potatoes in a colander and rinse well with cool water.
- Place the rinsed potatoes in a pot and add enough water to cover the potatoes by one inch. Season the water with 1/2 tsp salt. Cover the pot and bring it to a boil over high heat. Boil the potatoes until they are VERY tender, about 7-10 minutes.
- Drain the cooked potatoes in a colander, then rinse briefly with hot water.
- Add the butter, milk, and garlic herb seasoning o the pot used to boil the potatoes. Stir and heat over low until the butter has melted and the milk is hot.
- Once the milk is hot, add the potatoes back to the pot, turn off the heat and mash with a potato masher. Once the potatoes are mostly mashed, use a hand mixer to briefly whip the potatoes until they are light and fluffy. Taste the potatoes and add salt to taste, if needed, then serve.
