Yesterday, after a weekend of brisket, chocolate cake, and innumerable other naughty delights, suddenly all I wanted was a cold, healthy salad.

12 oz. weight Farfalle (bowtie) Pasta
2 tbsp. Extra Virgin Olive Oil
1 whole Lemons (more To Taste)
Salt
Freshly Ground Black Pepper
2 whole Zucchini, Cut Into Small Wedges Or Diced
10 oz. weight Grape Tomatoes, Halved Lengthwise
1/3 c. Minced Fresh Parsley
6 oz. weight Crumbled Feta Cheese

Steps:

  • Cook pasta until done. Drain and rinse in cold water until completely cool. Add olive oil and lemon juice, then add salt and pepper to taste (do not undersalt). Toss to combine. Add zucchini, tomatoes, parsley, and feta, and toss to combine. Add more of what you think it needs; I like to go heavy on the feta! Squeeze in a little more lemon juice/drizzle more olive oil if it needs more moisture.Cover in plastic wrap for at least a couple of hours. Pasta is best when chilled for a few hours before serving. *Note: Add grilled shrimp, grilled chicken, or grilled flank steak if you need a little protein.

A lemony healthy pasta salad with delicious ingredients such as roasted tomato and zucchini. This greek-style pasta salad recipe has the absolute BEST pasta salad dressing!

Number Of Ingredients 20

5 1/2 oz whole wheat fusilli, 160 g. Or your favorite pasta
1/2 zucchini, half inch half moon slices
1 spring onion, thinly sliced, optional
1 cup cherry tomatoes, either whole or cut in half
1 carrot, julienned
3 cloves garlic, grated. reserve 1/4 teaspoon to vinaigrette
1 tablespoon olive oil
salt and pepper, to taste
1/4 cup edamame peas, skinned. optional. 4 tbsp
3 cups salad, e.g. mixed romaine, arugula, spinach, lettuce
1/2 cup feta cheese, crumbled. 70g
2 tablespoon pine nuts
fresh basil, to garnish, optional
1/2 lemon, 1 tablespoon juice and 1 teaspoon zest
3 tablespoon extra virgin olive oil
1/4 teaspoon fresh garlic, as reserved from above
1/4 teaspoon salt
1 teaspoon honey, or maple syrup for vegan
1 teaspoon Dijon mustard, or other mustard for vegan
1 teaspoon fresh basil

Steps:

  • Slice the zucchini into half inch slices and then to half moons. I love to julienne the carrot just for added interest and texture, but you may cut it to any shape. Sometimes I also add sliced onion.
  • Cook pasta according to package instructions.
  • Add zucchini, tomatoes, carrot, white parts of the spring onion to a roasting pan, along with garlic, olive oil and a little salt and pepper to taste. Bake in a pre-heated oven of 400F (200C) for 20 minutes. If you want you can add the carrots later (15-16 minutes into the bake time) to keep its bite, but it's not necessary.
  • Chop your favorite greens, add to a big bowl along with skinned edamame peas, fresh basil, crumbled feta cheese and dry roasted pine nuts. To dry roast pine nuts you add pine nuts to a dry non-stick pan on medium high heat and cook until fragrant. Swirl the pan.
  • To make the pasta salad dressing you add all the ingredients to a glass or jar with a lid. Shake until combined.
  • Serve cold: Wait until both pasta and roasted vegetables are cold before combining.
  • Serve hot: Wait with cooking pasta so that it's freshly cooked when the roasted vegetables are done. Drain the pasta and serve rather immediately. My preferred way.
  • Drizzle over the desired amount of basil lemon vinaigrette. A little goes a long way! Start with 2 teaspoon and see what you like.

This quick pasta with tomatoes and zucchini is bursting with flavor, juicy, and packed with fresh vegetables. It makes a terrific vegan family meal ready in about 20 minutes!

8 oz (220 grams) pasta (penne, fusilli, spaghetti...)
1 Tbsp olive oil or extra virgin olive oil
½ red onion (any other color is fine), diced
1 lb (450 grams) zucchini, diced
¼ tsp chili flakes (optional)
10 oz (300 grams) cherry tomatoes, halved
salt and pepper, to taste
2 Tbsp fresh parsley, chopped
1 Tbsp extra virgin olive oil, to drizzle
freshly ground black pepper
grated Parmesan cheese

Steps:

  • Fill a large pot with salty water and place over high heat to bring it to a boil. Add the pasta to the pot while you're cooking the zucchini.
  • Cook until al dente according to the package directions. Reserve about ½ cup of cooking water when you drain the pasta.
  • Cut the tomatoes in half, and dice onion and zucchini. If zucchini is large, cut it lengthwise, than cut each half into three long batons. Then slice off the seeds from each baton and cut it into ½-inch cubes.
  • Heat the olive oil over medium heat in a large non-stick sauté pan. Add the red onions and cook, stirring frequently, until very soft and pale purple in color, 5-6 minutes. Do not brown.
  • Add the zucchini, chili flakes, about ¼ tsp of salt and freshly ground black pepper. Give a good stir and cook over medium-high heat for about 10 minutes or until the zucchini are cooked but still crisp, not mushy.
  • Add the tomatoes, stir and cook until the skins burst and the tomatoes begin to release their juices, about 4 minutes. Taste and adjust the seasoning according to your taste.
  • Add pasta and parsley to the pan and toss gently to combine. Add a touch of pasta cooking water if the pasta dries out (you don't need all of it, but use just as much as you need to keep everything moist and juicy).
  • Taste again and make sure you're happy with the seasoning.
  • Remove from the stove and serve immediately with a drizzle of extra virgin olive oil, black pepper and garnished with fresh parsley and parmesan cheese, if you wish.

12 ounces bow tie pasta
2 tablespoons olive oil
1 whole lemon, juiced
salt
fresh ground black pepper
2 zucchini, cut in half lengthwise, then cut in half again lengthwise, then cut into slices
6 ounces feta cheese, crumbled
10 ounces cherry tomatoes, halved lengthwise
1/3 cup minced parsley

Steps:

  • Cook bowtie pasta in boiling, salted water until al dente, about 10 minutes. Drain and rinse. Add olive oil and lemon juice, salt and pepper. Pioneer Woman says DO NOT UNDERSALT! Toss and then add zucchini, tomatoes, parsley and feta cheese. Toss.
  • Add more of whatever you think it needs. PW says she likes to go heavy on the feta. Squeeze in a little more lemon juice and/or drizzle in a little more olive oil if it looks like it needs more moisture. Cover and refrigerate a few hours before serving.

1 large tomatoes, coarsely chopped
1 small zucchini, thinly sliced
2 tablespoons green onions, sliced
1 teaspoon fresh basil leaves, snipped or 1/4 teaspoon dried basil, crushed
2 tablespoons fat-free Italian salad dressing
1 leaf lettuce
2 tablespoons feta cheese, crumbled or 2 tablespoons part-skim mozzarella cheese, shredded

Steps:

  • In a medium mixing bowl combine tomato, zucchini, green onions, basil, and Italian salad dressing. Toss lightly to mix.
  • Line 4 salad plates with lettuce. Divide tomato mixture among plates. Sprinkle each serving with some of the cheese. Makes 4 servings.

If you love Greek food then you might want to give this recipe a try, this is not your average everyday salad the zucchini, eggplant and bell peppers are broiled firstly, you may adjust the veggie amounts slightly or double the complete recipe, to save some time you can broil the zucchini and bell pepper and cook the pasta shells up to a day ahead, you may omit the eggplant and use two zucchini if desired

1/4 cup white wine vinegar
2 tablespoons Dijon mustard
1 -2 teaspoon fresh minced garlic
1/2 teaspoon salt
2/3 cup extra virgin olive oil
1 -2 teaspoon honey (optional) or 1 -2 teaspoon white sugar (optional)
1 large zucchini (sliced lengthwise into about 1-inch thick slices)
1 large yellow bell pepper (halved lengthwise then seeded, can use 2 medium peppers)
1 medium eggplant (chopped into about 1-inch cubes)
2 -3 tablespoons olive oil
1 lb uncooked medium pasta shell
1 -1 1/2 lb cooked small shrimp
8 ounces large cherry tomatoes, halved
1 cup crumbled feta cheese
1 small red onion, diced
2 -3 teaspoons dried oregano (or to taste)
salt and black pepper (to taste)

Steps:

  • For the vinaigrette; in a blender process vinegar with mustard, garlic and salt for about 5 seconds.
  • Slowly drizzle in the oil until blended.
  • Add in honey or sugar if desired, then season with black pepper to taste.
  • Refrigerate until ready to use.
  • Adjust oven rack to the top position.
  • Place the zucchini slices, yellow bell pepper halves and cubed eggplant onto a greased baking sheet.
  • Drizzle the oil over veggies and and toss with hands to coat.
  • Lightly season both sides with salt and black pepper.
  • Broil for 8-10 minutes or until lightly browned, turning over once.
  • Cool then cut into bite-size pieces; place into a large bowl (DO NOT clean the baking sheet, you will cool the cooked pasta on it).
  • Boil the pasta shells in a large pot of boiling salted water until just al dente; drain but DO NOT rinse; spread onto the baking sheet that you broiled the veggies on; set aside and cool.
  • Place the cooled pasta into the bowl that has the cooked chopped zucchini and bell peppers in, then add in cooked shrimp, cherry tomatoes, feta cheese, red onion and dried oregano; toss well to combine.
  • Season with lots black pepper.
  • At this point you may add in the dressing; toss to combine then season with salt and pepper, or you may add in the dressing before serving.
