Nonstick cooking spray, for greasing the pan
1 1/2 cups all-purpose flour
1 cup granulated sugar
1/2 cup cocoa
3/4 teaspoon kosher salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup brewed coffee, at room temperature
6 tablespoons buttermilk
6 tablespoons oil
1 teaspoon vanilla extract
1 large egg
1 cup confectioners' sugar
2 tablespoons brewed coffee, or more as needed
1 tablespoon milk
1 cup chopped toasted hazelnuts
Sprinkles, for decorating

Steps:

  • For the chocolate donuts: Preheat the oven to 375 degrees F.
  • Spray a 12-cavity donut pan with cooking spray and set it aside.
  • Whisk together the flour, granulated sugar, cocoa, salt, baking powder and baking soda in a large bowl. Whisk together the coffee, buttermilk, oil, vanilla and egg in a separate medium bowl until combined. Add the wet ingredients to the dry ingredients and mix to combine.
  • Transfer the batter to a piping bag. Fill each cavity with batter until it comes about three-quarters of the way up the sides of the pan.
  • Bake until a toothpick inserted into a donut comes out clean, about 12 minutes. Cool the donuts in the pan for 5 minutes, then remove to a rack and cool completely.
  • For the coffee glaze: Mix together the confectioners' sugar, coffee and milk in a bowl until smooth. If it seems too thick, add more coffee little by little.
  • Dip each donut halfway into the glaze, then allow excess to drip off. Sprinkle the tops with hazelnuts and sprinkles. Let set, about 30 minutes.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease donut pans well.
  • Sift flour, sugar, cocoa, baking powder, and salt together into a large bowl.
  • Whisk milk, egg, butter, oil, and 2 teaspoons vanilla extract together in a small bowl. Stir into flour mixture until just combined.
  • Spoon batter into the prepared donut pans, filling each well 3/4 full.
  • Bake in the preheated oven until a toothpick inserted into a donut comes out clean, about 10 minutes. Remove from the oven and let cool for about 5 minutes; tap donuts out onto a sheet pan.
  • Combine confectioners' sugar, hot water, and remaining vanilla extract in a bowl to make the glaze.
  • Place parchment paper under a wire cooling rack. Transfer cooled donuts to the rack and coat in glaze, letting excess drip onto parchment paper; coat the donuts a second time if desired.

Healthy gluten free baked donuts topped with a simple chocolate glaze and sprinkles! These chocolate frosted vanilla donuts are made with simple and healthy ingredients like almond flour, maple syrup, greek yogurt, and dark chocolate.

2 eggs
2 ½ Tbsp plain Greek yogurt (I used 2%)
⅓ cup almond milk or plant milk
½ cup coconut sugar
1 ½ tsp vanilla extract
2 cup super-fine almond flour (packed)
1 tsp baking powder
1 tsp baking soda
½ tsp of cinnamon
¼ tsp salt
½ cup chocolate chips
1 Tbsp coconut oil or butter
1 Tbsp maple syrup
1 Tbsp almond milk (plus more as needed)
1 tsp vanilla extract
Sprinkles

Steps:

  • Preheat your oven to 350°F and generously grease a donut pan.
  • In a large mixing bowl, whisk eggs and Greek yogurt until fully combined.
  • Add in almond milk, coconut sugar, and vanilla extract. Mix until fully combined.
  • Fold in almond flour, baking powder, baking soda, cinnamon, and salt.
  • Spoon the batter evenly into the greased donut mold, making 8 - 10 donuts depending on the size of your pan. The batter should fill donut molds to the center but do not cover.
  • Bake for full-sized donuts for 15 - 18 minutes until golden brown and toothpick comes out clean.
  • Let sit 5 - 10 minutes before removing them from the pan and letting them cool on a wire rack.
  • Meanwhile, in a microwave-safe bowl melt the chocolate chips and coconut oil in 20-second intervals so you do not burn the chocolate. Whisk in the maple syrup, almond milk, and vanilla extract (note: can add 1 - 2 more teaspoons of almond milk until desired consistency).
  • Dip each cooled donut into the frosting and add sprinkles as desired. Enjoy!

2 tablespoons butter, melted
1 teaspoon vanilla extract
¼ cup butter
1 tablespoon heavy cream
1 tablespoon milk
2 teaspoons corn syrup
1 teaspoon vanilla extract
1 ounce bittersweet chocolate, chopped
1 ounce semisweet chocolate chips
1 ¼ cups powdered sugar

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Spray 11 donut cups with cooking spray.
  • Mix flour, sugar, cocoa powder, baking powder, baking soda, and salt together in a bowl. Beat in 3/4 cup plus 2 tablespoons milk, eggs, 2 tablespoons melted butter, and vanilla extract using an electric mixer. Beat until well blended.
  • Pour batter into a zip-top bag and cut off 1 corner. Fill each donut cup about 3/4 full using the zip-top bag.
  • Bake in the preheated oven until a toothpick inserted into a donut comes out clean, about 10 minutes. Allow to cool slightly, 5 to 10 minutes.
  • While donuts cool, combine 1/4 cup butter, cream, milk, corn syrup, and vanilla extract in a small saucepan over medium-low heat until butter is completely melted, 2 to 3 minutes. Reduce heat to low and stir in bittersweet and semisweet chocolate until melted, 2 to 3 minutes more. Remove from heat and whisk in powdered sugar to combine. Dip each cooled donut into the glaze and let cool and set, about 15 minutes.
