1 1/2 cups fresh pineapple chunks
1 sweet bell pepper (cut into 1" chunks)
1/2 cup barbecue sauce

Steps:

  • Weave ham strips onto the skewers, alternating with pineapple and peppers.
  • Eat cold, or brush with barbecue sauce and grill for 5-10 minutes until slightly caramelized. You can also baking in the oven until hot if desired.

3 tablespoons brown sugar
2 tablespoons distilled white vinegar
1 tablespoon vegetable oil
1 teaspoon prepared mustard
¾ pound cooked ham, cut into 1 inch cubes
1 (15 ounce) can pineapple chunks, drained
skewers

Steps:

  • Preheat grill for high heat.
  • In a medium bowl, mix together brown sugar, vinegar, vegetable oil, and mustard. Thread ham and pineapple chunks alternately onto skewers.
  • Lightly oil grill grate. Place skewers on the prepared grill, and brush liberally with the brown sugar mixture. Cook for 6 to 8 minutes, turning frequently and basting often. Serve when heated through and richly glazed.

2 tablespoons butter
2 ½ cups cooked and cubed ham
2 green onions, chopped
1 cup pineapple chunks, drained
1 ⅓ cups pineapple juice
4 teaspoons cider vinegar
2 tablespoons brown sugar
2 teaspoons prepared mustard
2 tablespoons cornstarch

Steps:

  • Melt the butter in a large skillet over medium heat. Saute the ham, onions and pineapple chunks in the butter for about 5 minutes.
  • In a separate medium bowl, combine the pineapple juice, vinegar, brown sugar, mustard and cornstarch. Stir this together well and pour over the ham mixture in the skillet. Stir well and allow to heat through and thicken, about 5 minutes.

3 cups cubed fully cooked ham
1 medium onion, thinly sliced
1 small green pepper, cut into rings
2/3 cup raisins
3/4 cup pineapple tidbits, drained
3/4 cup packed brown sugar
3 tablespoons cornstarch
3 teaspoons ground mustard
1/4 teaspoon salt
1-1/2 cups pineapple juice
1/2 cup cider vinegar
4-1/2 teaspoons reduced-sodium soy sauce
Hot cooked rice

Steps:

  • Preheat oven to 350°. In a greased 2-qt. baking dish, layer ham, onion, green pepper, raisins and pineapple. , In a large saucepan, combine brown sugar, cornstarch, mustard and salt. Stir in pineapple juice and vinegar until smooth. Bring to a boil; cook and stir 2 minutes or until thickened., Remove from heat; stir in soy sauce. Pour over pineapple. Cover and bake 30-35 minutes or until heated through. Serve with rice.

1 can (20 ounces) unsweetened pineapple chunks
2 large green peppers, cut into 1-inch pieces
1 large onion, quartered, optional
12 to 16 fresh mushrooms
16 to 18 cherry tomatoes
1/2 cup soy sauce
1/4 cup olive oil
1 tablespoon brown sugar
2 teaspoons ground ginger
1 teaspoon garlic powder
1 teaspoon ground mustard
1/4 teaspoon pepper
Cooked rice, optional

Steps:

  • Drain pineapple, reserving 1/2 cup juice. Place pineapple chunks and vegetables in a large bowl; set aside. , In a small saucepan, combine reserved pineapple juice with the soy sauce, olive oil, brown sugar and seasonings; bring to a boil. Reduce heat and simmer, uncovered, for 5 minutes. Pour over vegetable mixture; cover and refrigerate for at least 1 hour, stirring occasionally. , Remove pineapple and vegetables from marinade and reserve marinade. On eight metal or soaked wooden skewers, alternately thread the pineapple, green pepper, onion if desired, mushrooms and tomatoes. , Grill kabobs for 20 minutes or until soft, turning and basting with marinade frequently.
