- Preheat grill for high heat.
- In a medium bowl, mix together brown sugar, vinegar, vegetable oil, and mustard. Thread ham and pineapple chunks alternately onto skewers.
- Lightly oil grill grate. Place skewers on the prepared grill, and brush liberally with the brown sugar mixture. Cook for 6 to 8 minutes, turning frequently and basting often. Serve when heated through and richly glazed.

- Melt the butter in a large skillet over medium heat. Saute the ham, onions and pineapple chunks in the butter for about 5 minutes.

- Drain pineapple, reserving 1/2 cup juice. Place pineapple chunks and vegetables in a large bowl; set aside. , In a small saucepan, combine reserved pineapple juice with the soy sauce, olive oil, brown sugar and seasonings; bring to a boil. - To assemble the skewers, cut the ham, onion, pepper, mushrooms and fresh pineapple into 1” cubes and thread onto metal or wood skewer sticks, alternating ingredients.
- To make the grilling sauce, combine the pineapple juice, ketchup, soy sauce, garlic cloves and brown sugar in small sauce pan. Bring to a boil, then reduce heat to low and simmer for at least 10 minutes. Allow to cool before use.
- Cover skewers with grilling sauce. This can be done ahead of time and then stored in the refrigerator, if needed.
- To cook skewers, heat grill to medium-high and sear each side for about 5 minutes until all ingredients have been heated through and have nice sear marks.
