1/4 cup (50 mL) teriyaki baste and glaze (from 12 oz bottle)
1/4 cup (50 mL) frozen (thawed) orange juice concentrate
2 tsp (10 mL) grated orange peel
1/2 lb (250 g) uncooked chicken breast tenders
1 cup (250 mL) sugar snap pea pods
1 cup (250 mL) sliced fresh mushrooms
1 medium zucchini, cut into 1/2-inch (1.25 cm) slices (2 cups/500 mL)
1/2 medium red bell pepper, cut into 1-inch (2.5 cm) pieces (3/4 cup/175 mL)

Steps:

  • In small bowl, mix teriyaki glaze, orange juice concentrate and orange peel. Reserve 2 tablespoons mixture. Add chicken to remaining mixture; toss to coat. Cover and refrigerate 30 minutes.
  • Meanwhile, heat gas or charcoal grill. Place grill basket (grill "wok") over medium heat. Remove chicken from marinade; discard marinade. Place chicken in grill basket.
  • Cover and grill over medium heat 6 to 8 minutes, shaking basket or stirring chicken occasionally, until chicken is brown.
  • Add remaining ingredients to grill basket. Cover and grill 6 to 8 minutes, shaking basket or stirring occasionally, until vegetables are crisp-tender and chicken is no longer pink in centre. Add 2 tablespoons reserved marinade; stir to coat vegetables and chicken. Cover and grill 2 to 3 minutes or until heated through.

3 tablespoons canola oil, divided
4 medium carrots, julienned
1 medium sweet onion, julienned
1/2 cup soy sauce
1/4 cup packed brown sugar
Hot cooked rice
Sesame seeds, toasted, optional
Sliced green onions, optional

Steps:

  • In a large skillet or wok, stir-fry chicken in 2 tablespoons oil until no longer pink, 6-8 minutes. Remove chicken and set aside. , In the same skillet, stir-fry carrots in remaining oil for 2 minutes. 2 boneless skinless chicken breasts
1 cup fresh orange juice, plus
3 strips orange zest
1/2 cup soy sauce
1/3 cup honey
4 cloves garlic, minced
4 green onions, white part minced,green part thinly sliced for garnish
1 tablespoon minced fresh ginger
1 cinnamon stick
2 teaspoons sesame oil

Steps:

  • Wash and dry chicken breasts, trimming off any fat or sinew.
  • Halve breasts; place in shallow baking dish.
  • In saucepan, boil orange juice until reduced by half.
  • Add soy sauce, honey, garlic, green onion whites, ginger, cinnamon stick and sesame oil.
  • Boil about 5 minutes, until thick and syrupy.
  • Remove pan from heat and strain glaze into a bowl.
  • Let cool to room temperature.
  • Pour half over the chicken breasts, turning breasts to coat both sides.

1/4 cup ketchup
2 tablespoons hoisin sauce
2 tablespoons light brown sugar
2 tablespoons fresh lime juice
2 teaspoons sesame oil
1 small garlic clove, grated
Kosher salt and freshly ground pepper

Steps:

  • Place chicken breasts between two layers of plastic wrap and lightly pound them to an even thickness (about 1/2 inch). Let stand at room temperature about 30 minutes.
  • While chicken rests, whisk together ketchup, hoisin, brown sugar, lime juice, sesame oil, and garlic.

1 whole organic chicken, cut into 10 pieces
2 cups water
1 cup light brown sugar
1/2 head garlic, unpeeled
4 slices fresh ginger root, gently bashed to open up
2 tablespoons kosher salt
8 sprigs fresh thyme
2 cups teriyaki sauce
1/4 cup honey
1 large (1-inch) piece fresh ginger root, sliced and bashed to open up
1 head garlic, halved crosswise
1 teaspoon toasted sesame oil, plus 1/2 cup
Freshly ground black pepper
Scallion threads, for garnish
Toasted sesame seeds, for garnish

Steps:

  • Begin by making the brine. Combine the water, brown sugar, garlic, ginger, salt and thyme in a large resealable bag and swirl to dissolve the sugar. Add chicken pieces and allow to brine for 1 to 2 hours in the refrigerator.
  • Preheat grill to low-medium heat.
  • Make teriyaki glaze: In a small saucepan, over medium heat, combine teriyaki sauce, honey, ginger, garlic, and 1 teaspoon of sesame oil, and simmer until rich and slightly reduced.
  • Remove chicken from brine and pat dry. Discard the brine. Add the chicken to a large mixing bowl, drizzle with the 1/4 cup toasted sesame oil and season with freshly ground black pepper.   • Place the pork chops in a plastic bag and pour half of the teriyaki sauce over them. Place the chicken breasts in a plastic bag and pour half of the BBQ sauce over them. Marinate the pork chicken in the refrigerator overnight.
  • Preheat the grill to medium heat. Remove the pork chops and the chicken from their plastic bags and season with salt and pepper. Place the pork and chicken on the grill. Grill the chicken about 6 minutes per side or until cooked through, turning at a 45 degree angle to create grill makes. Baste the pork with the rest of the teriyaki sauce and the chicken breasts with the rest of the BBQ sauce throughout the cooking process. 1 skin-on whole chicken, cut up, breasts split

  • For the marinade/glaze: In a small pot on medium heat, whisk together the honey, miso, orange juice, a shake or two of chili flakes and plenty of coarse ground pepper. Cook, whisking, until everything is combined and the liquid reduces and thickens a bit to a glaze consistency, 6 to 8 minutes. Let cool to room temperature.
