A brief stint in the refrigerator with a soy-and-ginger marinade gives the pork flavor while tenderizing the meat.

1/4 cup plus 2 tablespoons low-sodium soy sauce
1/4 cup vegetable oil
3 tablespoons finely grated fresh ginger
3 tablespoons light-brown sugar
1 scallion, finely chopped
Freshly ground pepper
4 bone-in pork chops (8 ounces each; 3/4 inch thick)
Garnish: 1 scallion, thinly sliced

Steps:

  • Whisk together soy sauce, 3 tablespoons oil, the ginger, sugar, chopped scallion, and 1/2 teaspoon pepper.
  • Arrange pork chops in a 9-by-13-inch nonreactive baking dish. Reserve 3 tablespoons marinade, and pour remainder over pork chops. Marinate, covered with plastic wrap, flipping chops halfway through, for 45 minutes.
  • Heat remaining tablespoon oil in large skillet over medium-high heat. Remove pork chops from marinade, and sear for 3 1/2 to 4 minutes. Reduce heat to medium. Flip chops, and sear until just cooked through, 3 1/2 to 4 minutes more. Transfer chops to a board or platter. Let rest for 5 minutes.
  • Add reserved 3 tablespoons marinade to skillet. Simmer over medium heat until thickened, about 30 seconds. Spoon sauce over chops. Garnish with thinly sliced scallion.

1 tablespoon vegetable or canola oil
1 ½ tablespoons finely grated fresh ginger
1 tablespoon minced garlic
⅔ cup low-sodium soy sauce (or ½ cup soy sauce and 3 tablespoons water)
½ cup lightly packed dark brown sugar
½ teaspoon crushed red pepper (optional)
4 1-inch thick pork chops (bone-in or boneless your choice)
Freshly ground pepper to taste
Thinly sliced scallions (both white and light greens parts (optional), to serve)
Lime wedges to serve
Hot cooked rice for serving (optional)

Steps:

  • In a small saucepan, heat the oil over medium heat. Add the ginger and garlic and stir until you can really smell everything and the garlic turns golden, about 3 minutes. Add the soy sauce, brown sugar and crushed red pepper, if using, raise the heat to medium-high and simmer until slightly reduced and syrupy, stirring occasionally, about 5 minutes. Set aside to cool completely.
  • Pour the marinade into a container or a zipper-top bag and add the pork chops. Seal the container or the bag, and place the chops in the fridge. Refrigerate for 3 to 24 hours.
  • Preheat the grill to medium.
  • Remove the pork chops from the marinade. Grill the pork chops for about 4 minutes on each side, until the pork chops reach an internal temperature of 140°. Allow them to sit for 5 minutes before serving or slicing. Top with the scallions, and serve with the lime wedges for squeezing over the chops.

½ cup honey
2 cloves garlic, minced
½ teaspoon ground ginger
1 pinch red pepper flakes, or to taste

Steps:

  • Whisk soy sauce, honey, garlic, ginger, and red pepper flakes together in a large bowl and pour into a resealable plastic bag. Add pork chops, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator, 8 hours to overnight.

One 14-ounce block extra-firm tofu, drained and sliced into eight 1/2-inch-thick steaks
Kosher salt and freshly ground black pepper
1/3 cup low-sodium soy sauce or tamari
1/4 cup fresh cilantro leaves, roughly chopped
1/4 cup lime juice (from about 2 limes)
2 tablespoons light brown sugar
1 tablespoon chopped fresh ginger
2 cloves garlic, minced
2 scallions, whites finely chopped and green tops sliced thin
4 heads baby bok choy, halved lengthwise through the stems
3 tablespoons extra-virgin olive oil, plus more for the grill
2 tablespoons toasted sesame seeds

Steps:

  • Put the tofu steaks on a paper towel-lined rimmed baking sheet and top with more paper towels, pressing gently to remove excess moisture. Remove the paper towels and towel and sprinkle the tofu with salt and pepper on both sides.
  • Stir to combine the soy sauce, cilantro, lime juice, brown sugar, ginger, garlic and scallion whites in a medium bowl. Pour 1/3 cup of the marinade over the tofu steaks, flipping to coat both sides. Reserve the remaining marinade for serving.
  • Put the bok choy on another rimmed baking sheet and brush all sides with olive oil and sprinkle with salt and pepper.
  • Prepare a grill for medium heat and brush the grates of the grill with oil.
  • Put the tofu steaks and bok choy, cut-sides down, on the grill at an angle across the grates. Close the lid of the grill and cook for 5 minutes, then rotate both the tofu and the bok choy 90 degrees and cook another 5 minutes with the lid closed. Flip the tofu steaks and bok choy and cook for another 10 minutes with the lid closed, rotating 90 degrees halfway through to create crosshatch grill marks.
  • Remove the tofu and bok choy to a platter. Spoon the reserved marinade over the tofu and bok choy and sprinkle the tofu steaks with the scallion greens and toasted sesame seeds.

1/4 cup diced green pepper
1/4 cup packed brown sugar
4 teaspoons chopped onion
1/2 teaspoon ground ginger
2 garlic cloves, minced
4 pork loin chops (1 inch thick)
2 teaspoons sugar
2 teaspoons cornstarch
1/2 cup water

Steps:

  • In a blender, combine the soy sauce, green pepper, brown sugar, onion, ginger and garlic; cover and process until smooth. Set aside 2 tablespoons for sauce. Pour the remaining marinade into a large resealable plastic bag or shallow glass container. Add pork chops and turn to coat. Seal or cover and refrigerate for 8 hours or overnight; drain and discard marinade. , Grill chops, covered, over medium heat for 4-5 minutes on each side or until a thermometer reads 145°. Let meat stand for 5 minutes before serving., In a saucepan, combine the sugar, cornstarch, water and reserved soy sauce mixture; stir until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with chops.

1 teaspoon dry ginger powder (or use 3 teaspoons fresh minced ginger, or to taste)
2 tablespoons minced fresh garlic (or to taste)
1/2 cup sherry wine
1/4 cup honey
1/4 cup soy sauce
1 tablespoon sesame seeds
1 tablespoon orange rind
1 teaspoon hot pepper sauce (or to taste)
1 large green onion (sliced into 4 large pieces)
1/2 teaspoon black pepper
4 large pork chops
1 teaspoon cornstarch
2 tablespoons cold water

Steps:

  • Pierce small holes in both sides or the pork chops.
  • In a bowl stir together the sherry, honey, soy sauce, sesame seeds, orange peel, hot pepper sauce, ginger, garlic and black pepper.
  • Pour about 1/2 cup marinade into a small bowl; set aside.
  • Pour the remaining marinade (with green onion pieces) into a large resealable bag; add in the pork chops.
  • Seal the bag and turn to coat.
  • Refrigerate for 6 hours or up to 24 hours.
  • When ready to grill, in a small saucepan combine the cornstarch with water until smooth; add in the reserved 1/2 cup marinade; bring to a boil and cook for about 1 minute, or until thickened.
  • Drain and discard the marinade from the pork.
  • Season the pork chops with salt and pepper.
  • Heat grill to medium heat and grill the chops about 4 minutes.
  • Turn the chops and baste with a small amount sauce; grill for about 15-20 minutes longer, or until the chops are cooked through, basting again towards the end of cooking.
  • Serve any remaining sauce with the chops.
  • Delicious!

  • In a spice grinder, finely grind the star anise pod. Transfer to a small bowl and stir in the cumin, coriander, fennel, paprika, cinnamon and ½ teaspoon each of salt and pepper. Rub the spice mix all over the pork chops. Set the chops in the roasting pan and broil 6 inches from the heat until golden and cooked through, 4 to 5 minutes per side. Transfer the pork chops to plates.
  • Add the soy sauce, vinegar, sesame oil and ginger to the roasting pan and simmer over moderate heat for 2 minutes, stirring and scraping up any browned bits with a wooden spoon. Whisk in the butter.
