This Greek Meatloaf takes spinach, feta, olives, and tomatoes to create a delicious Mediterranean meatloaf bursting with flavor. It's low carb and lightened up using ground turkey. Make it ahead for an easy healthy dinner during the week or freeze.

2 slices wheat bread (use glute-free, if needed)
1/4 cup milk
2 eggs
2 lbs ground turkey (93/7)
1 10 ounce package frozen chopped spinach (Thaw and drain. See notes.)
1 1/2 cups crumbled feta cheese
1/3 cup pitted chopped greek olives
1 14.5 canned diced tomatoes (drained)
1 tablespoon Worcestershire sauce
1 teaspoon granulated garlic
2 teaspoons oregano
1 teaspoon salt
1 teaspoon pepper
1/2 cup marinara sauce

Steps:

  • Preheat oven to 350 degrees.
  • In a large mixing bowl mash together bread and milk until a paste forms. If you need to use a little more milk that's fine.
  • Mix in the 2 eggs.
  • On top of the bread and egg mixture add the turkey, spinach, feta cheese, olives, diced tomatoes, garlic, oregano, salt, and pepper.
  • Using your hands, mix everything together until all the ingredients are evenly distributed. Try not to over mix.
  • On a baking sheet sprayed with cooking spray form meatloaf mixture into a loaf. Spread marinara sauce on top.
  • Bake for 1 hour 15 minutes.
  • Let the meatloaf cool for 5 minutes and serve.

1 small red onion, diced small
2 garlic cloves, finely chopped
2 large celery stalks, diced small

1 pound ground white-meat turkey
1 pound ground dark-meat turkey

2 slices white sandwich bread, cut into small pieces
4 ounces feta, crumbled (1 cup)
1/4 cup fresh dill, chopped

Steps:

  • Preheat oven to 350 degrees. In a medium skillet, heat oil over medium. Add onion, garlic, and celery and cook, stirring occasionally, until vegetables are soft, 7 minutes. Season with salt and pepper.
  • In a large bowl, combine vegetables, turkey, egg, bread, 1 1/4 teaspoons salt, and 1/2 teaspoon pepper. Using your hands, mix until combined. Mix in feta and dill. Transfer to a parchment-lined rimmed baking sheet and form into a 4-by-10-inch loaf. Bake until cooked through, 45 to 55 minutes, rotating sheet halfway through. Let rest 10 minutes before slicing.

1 tablespoon olive oil
1 onion (finely chopped)
2 carrots (peeled and finely chopped)
2 teaspoons garlic
2 large eggs
½ teaspoon Kosher or coarse salt (to taste)
Freshly ground black pepper (to taste)
¾ cup panko bread crumbs
2 teaspoons dried oregano
1 15-ounce can petite diced tomatoes with juice
1 cup crumbled feta
½ cup roughly chopped kalamata olives (optional)
3 pounds ground turkey (preferably a mixture of white and dark meat, or a blend of 85/15%)
⅔ cup ketchup

Steps:

  • Preheat the oven to 350°F. Line a rimmed baking sheet with parchment paper, or lightly oil or spray with nonstick cooking spray.
  • Heat a large pan over medium-high heat and add the olive oil. Add the onion and carrots and sauté for 5 minutes, until tender. Add the garlic and sauté for 2 more minutes until you can smell the garlic. Remove from the heat and set aside.
  • In a large bowl, beat the two eggs with the salt and pepper. Stir in the bread crumbs and oregano, then add the can of tomatoes, the cooked vegetables, and the feta. It will be very gloppy. The add the turkey and use you hands to gently mix everything together until it's all well blended; it will still be a soft mixture. Use you hand to form a rectangular loaf on the tray (see Make Ahead Note). Smear the top and sides with the ketchup.
  • Bake for 60 to 70 minutes until cooked through. You can turn the oven to broil if you like a nicely browned top and give it a couple of extra minutes. Let it cool on the tray for 15 minutes, then transfer carefully, using a couple of large spatulas, to a serving dish, or cut and serve right from the baking sheet.

1 cup crumbled feta cheese
2 eggs, beaten
4 tablespoons dried oregano
3 tablespoons Worcestershire sauce
3 tablespoons Dijon mustard
1 ½ tablespoons garlic powder
½ tablespoon onion powder
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a loaf pan with nonstick cooking spray.
  • Mix turkey, feta cheese, eggs, oregano, Worcestershire sauce, mustard, garlic powder, onion powder, salt, and pepper together in a large bowl. Transfer to the loaf pan and shape into a loaf.

1 pound ground turkey
1/4 cup grated onion
1 large egg
1/3 cup breadcrumbs
1 cup chopped spinach
1/2 teaspoon dried dill
zest of 1 lemon
1/2 cup chopped oven roasted tomatoes (or sun-dried)
1/4 cup crumbled feta cheese
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper
2 tablespoons tomato paste
1/2 teaspoon honey
1 teaspoon water

Steps:

  • Preheat oven to 375F degrees.
  • In a medium bowl, mix the ground turkey, onion, egg and bread crumbs just until mixed.
  • Stir in spinach, dill, lemon zest, tomatoes, feta cheese and salt and pepper and evenly combine.
  • Transfer meatloaf mixture to a prepared loaf pan; in a small bowl, combine tomato paste, honey and water. Brush over the meatloaf.
  • Bake meatloaf for 40 minutes or so until cooked all the way through. Remove from oven and let cool for 10 minutes before slicing and serving.

Steps:

  • Place an oven rack in the center of the oven. Preheat the oven to 375 degrees F.
  • Spray a 9 by 5-inch loaf pan with cooking spray.
  • In a large bowl, stir together the bread crumbs, parsley, sun-dried tomatoes, garlic, if using, eggs, milk, feta, salt, and pepper. Add the turkey and gently stir to combine, being careful not to overwork the meat.
  • Carefully pack the meat mixture into the prepared pan and bake until the internal temperature registers 165 degrees F on an instant-read thermometer, about 45 minutes. Remove from the oven and let rest for 5 minutes. Transfer to a cutting board and slice. Put on a serving platter and serve.

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Mix lamb and hamburger together.
  • Combine with eggs, milk, and oats. Set aside.
  • Saute onion in oil over moderate-low or low heat for 20 to 30 minutes until translucent and golden. Estimate the cooking time for the onions and approximately 3 to 4 minutes before the end of the cooking, add the garlic.
