RICH FRUIT KUCHENS

Steps:
- In a large bowl, dissolve yeast in warm water. Add the milk, sugar, salt, oil, egg and 2-1/2 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough. Place in a greased bowl, turning once to grease top. Do not knead. Cover and refrigerate overnight., The next day, for custard, whisk the eggs, cream and sugar in a large bowl until combined; set aside. Divide dough into 4 portions. , On a lightly floured surface, roll each portion into a 10-in. circle. Press each circle onto the bottom and up the sides of an ungreased 9-in. pie plate. Arrange 2 to 2-1/2 cups of fruit in each crust. Pour 1 cup custard over fruit., For topping, combine the sugar, flour and cinnamon in a small bowl. Cut in butter until mixture resembles coarse crumbs. Sprinkle 1/3 cup over each coffee cake. Cover edges of dough with foil. Bake at 350° for 35-40 minutes or until golden brown and custard reaches 160°.

FRUIT KUCHEN
Delightful coffee cake topped with various fruits. My family prefers prunes but it can be made with apricots, cherries, etc.

Steps:
- Prepare the hot roll mix according to manufacturers instructions, adding the 2 tablespoons of sugar. Cover dough and put in a warm draft free place to rise. Let rise until doubled, then punch down and divide into three pieces. Roll pieces of dough out into a circle about 8 or 9 inches in diameter. Place dough into three greased 8 or 9 inch pans, and let rise until doubled.
- In a saucepan over medium heat, combine the prunes and water. Simmer for 5 minutes, then remove from heat and cover. In a small bowl or cup, stir together the remaining sugar and cinnamon. Set aside.
- Preheat oven to 375 degrees F (190 degrees C). When the dough has risen, spread the prune puree over the three cakes. Stir sour cream to soften, and spread over the prunes. Dust with the cinnamon sugar mixture.
- Bake for 20 to 25 minutes in the preheated oven, until top edges are golden. Cover with more sour cream and cinnamon sugar if desired before serving.

- In a bowl, combine flour, salt and sugar; cut in butter until mixture resembles cornmeal. Mix egg and milk; add to flour mixture., Press into a greased 13x9-in. baking dish. Arrange fruit on crust. Combine remaining filling ingredients; pour over fruit. For topping, combine ingredients until crumbly; sprinkle over filling. Bake at 350° for 50-60 minutes or until fruit is tender.

PEACH KUCHEN

Steps:
- Preheat oven to 400 degrees. Place flour, butter, 2 teaspoons sugar, salt, and baking powder in a 9-by-13-inch baking dish. Cut ingredients together until the mixture resembles cornmeal. With hands, press mixture onto bottom and sides of pan, evenly coating.
- Arrange peaches evenly over top of crust. In a small bowl, combine the remaining 1/2 cup sugar and cinnamon and sprinkle over peaches.
- Place in oven and bake for 10 minutes, or until crust begins to turn golden and sugar is bubbling.
- Meanwhile, in a medium bowl, combine heavy cream and egg yolks. Remove kuchen from oven and pour cream-egg yolk mixture over peaches. Lower oven temperature to 350 and bake kuchen 20-30 minutes more, until custard mixture is set. Allow to cool slightly, then cut. Serve warm.
GERMAN KUCHEN
When I worked at the bank I had a customer who use to always come to my window to make his deposits for his business. He owned a bakery. He always smelled like doughnuts! lol I asked him one day if he would give me his recipe for his kuchens that he sold. He wouldn't do it till the week he decided to close his bakery and...

Steps:
- 1. Dough- Scald milk and add butter, sugar, and salt. Dissolve yeast in warm water in seperate bowl and then add to milk mixture. Beat in eggs and then flour. Cover and let rise until doubled. About an hour. Punch down and divide into 5 pieces. Roll out into desired shape and let rise 30 minutes. Then choose your topping. I used a 9" round cake pan for mine.
- 2. Cinnamon Topping: Use a pastry blender to mix butter and brown sugar and flour. Add cinnamon and sprinkle over dough after it rises the second time. Dot with Butter if desired. Bake at 375 for 20 minutes.
- 3. Cherry Topping: Heat can of dark cherry pie filling and spread on crust after it rises second time. Bake for 20 minutes at 375.
- 4. Cheese Topping; Mix cottage cheese, egg and sugar in blender intil creamy. Heat slowly until warm on stove. Pour on dough after rises second time. Bake at 375 for 25 minutes.
- 5. Butter Topping: Beat together sugar, eggs, and vanilla. Slowly beat in oil. Add oil too fast and it will curdle. Heat on top of stove until hot and pour on crust after second rising. Bake 25 minutes at 375.
- 6. Apple Topping: Peel and slice thinly 3 apples. Sprinkle with cinnamon and sugar and nutmeg to taste. Roll this dough out in a rectangle. Fill the center with apples and dot with butter. Bake 20 minutes at 375.
KUCHEN
This is a German coffee cake that was handed down from my Grandmother. These freeze very well and can be stacked two to a package with waxed paper between. The prep time is estimated.If you wrap them in saran wrap and then in foil they should stay good indefinately. I have kept them in the freezer for at least 5 months.

- Mix the ingredients for the crust,well;Divide into 7 balls.
- Roll out each and put into pie tins.
- Arrange fruit (apples peaches,rhubarb or any other fruit you prefer), in single layer, on the dough.
- Sprinkle sugar on the fruit.
- Mix together filling ingredients and pour on the fruit.
- (I like more filling so I make enough for 8 kuchen).
- Sprinkle with cinnamon.
- Bake 375º till filling is set.
- About 33 minutes (If you stick a table knife in filling and it comes out clean it s done.).
EASY FRUIT KUCHEN
I like this recipe because you can change it up so easily. Just add any fruit that you like. Canned or fresh, its perfect either way.

- 1. HEAT oven to 375. Coat 13x9 metal baking pan with non stick cooking spray.
- 2. COMBINE flour and 1/2 cp of sugar in large bowl. Cut in butter with pastry blender or two butter knives until mixture resembles coarse crumbs. Beat milk and egg with fork just until blended. Stir into flour mixture with fork just until moistened. Spread evenly in prepared pan. Overlap slices of fruit. Drizzle with melted butter.

Almost any kind of raw or poached fruit can be used, allowing 1 1/2 to 2 cups for each tart.

- Add vegetable shortening and sugar to scalded milk and stir to melt thoroughly.
- When mixture is lukewarm (105 to 115 degrees), add yeast and stir to dissolve. Add well-beaten eggs and flour to yeast mixture. Beat thoroughly.
- Place dough in a large, greased mixing bowl, and cover with a damp kitchen towel. Set aside in a warm, draft-free place to rise for 8 hours or overnight. The dough will be very spongy.
- Almost any kind of raw or poached fruit can be used, allowing 1 1/2 to 2 cups for each tart. The ingredients listed are suggested toppings. If necessary, drain the fruits well.
- Unsweetened fruit may benefit from 1/2 cup of sugar sprinkled over it and mixed well before the fruit is added to the tart.
- Using an electric mixer, beat eggs and sugar together until they are thick, pale yellow and form a ribbon. Add milk, flour and salt. Beat briefly to blend well. (See note.)
- Divide the dough in two. Roll out half the dough, and use it to line a lightly greased 9-inch pie pan. Arrange fruit on dough, and set aside for an hour or more for the dough to rise until double in bulk.
- When ready to cook, preheat oven to 350 degrees. Spoon custard mixture over fruit and place in preheated oven. Bake for about 30 minutes, or until custard is set and tart is baked through. Serve warm or at room temperature.
