Pork Bistek is a delicious take on the classic Filipino beefsteak. With tender pork chops and a tangy and savory sauce, it's sure to be a family favorite.

3 pounds bone-in pork chops, about 1/4 inch thick
1/2 cup calamansi or lemon juice
1/4 cup soy sauce
1 large onion, peeled and sliced thinly
1 head garlic, peeled and minced
1/4 teaspoon pepper
3 tablespoons canola oil
1 cup water
salt to taste
1 small onion, peeled and sliced into rings

Steps:

  • In a bowl, combine pork, calamansi or lemon juice, soy sauce, onions, garlic, and pepper. Massage the marinade into the meat and marinate for about 30 minutes.
  • Drain meat, onions, and garlic from marinade, squeezing and reserving excess liquid. Set aside.
  • In a pan over medium-high heat, heat 2 tablespoons of the oil. Add pork chops and cook for about 2 to 4 minutes per side or until lightly browned. Spoon out and reserve released meat juices during frying. Remove meat from pan and keep warm.
  • In the pan, add the remaining 1 tablespoon oil. Add the reserved onions and garlic, and cook, stirring regularly, until softened.
  • Return meat to pan.
  • Add reserved marinade and meat juices.
  • Add water and bring to a boil, skimming scum that floats on top. Cover, lower heat and simmer for about 40 to 50 minutes or until meat is fork-tender and liquid is reduced.
  • Season with salt to taste.
  • Add the onion rings. Turn off heat, cover and allow onion slices to cook slightly in the steam. Serve hot.

The Pork Steak or Pork Bistek is a variety of another popular Filipino dish named Bistek, which is actually a derivation of the words 'beef steak'.

5 pcs pork chops (cut into smaller pieces)
2 pcs pcs lemon (or 8 pcs calamansi) (extracted into juice)
1 pc medium-sized onion (cut into rings)
6 cloves garlic (minced)
4 tbsp soy sauce
1 cup water
salt and pepper ( to taste)
4 tbsp cooking oil (for frying)

Steps:

  • In a mixing bowl, add-in pork chops, minced garlic, lemon juice, and soy sauce. Set aside and marinate for 30 to 60 minutes.
  • In a cooking pan, pour-in and heat oil in medium to high heat.
  • Add-in the pork chop (reserve the marinade liquid for later). Cook for 2 to 4 minutes per side or until lightly browned.
  • Remove excess liquids and then pour-in water and reserved marinade liquid. Lower heat and simmer for 40 to 50 minutes or until pork is tender.
  • Add-in onion rings and season with salt and pepper as desired. Cook for 2 to 3 minutes or until aromatic.
  • Transfer to a serving plate or a serving tray. Serve and enjoy!

This is a variation of a popular Filipino dish called Bistek a la pobre. This is a mainstay in my family's weekly diner menu back home. The beauty of this recipe is that it is very flexible and you can make it any way you want it. My mom would sometimes make this with finely chopped carrots. I prefer adding chopped spring onions to the stir fried onion rings for garnish. Serve it with steamed rice.

1/2 kg thinly sliced sirloin steak
2 tablespoons soy sauce
2 teaspoons sugar (reserve half for later)
3 garlic cloves, pounded
1 tablespoon fresh ground black pepper
1 teaspoon fish sauce
2 tablespoons lemon juice (calamansi, or filipino lime works best)
1 teaspoon oil
1 large white onion, sliced in thick rings (you can substitute this with chopped spring onions)
3 tablespoons oil (for stir-frying)

Steps:

  • Pat the beef dry.
  • Marinate beef in soy sauce,1 teaspoon of sugar, lemon juice, fish sauce,garlic, pepper and oil (to lock the moisture in meat) for 30 minutes to an hour.
  • Put the pan in high heat, heat oil till smoking hot and stir-fry beef along with the marinade until cooked and tender. This takes about 5 minutes.
  • Add the remaining 1 teaspoon of sugar and onion rings, sautee until translucent and slightly caramelized. Serve immediately.
