For the Dough:
3 1/3 cups bread flour
1 cup milk
1/4 cup butter (1/2 stick, or margarine)
1 large egg
3 tablespoons sugar
2 teaspoons active dry yeast (or 1 1/2 teaspoons bread machine/rapid rise yeast)
1/2 teaspoon salt
For the Filling:
1/4 cup butter (melted)
1/3 cup nuts (chopped and lightly toasted )
1/4 cup sugar
2 teaspoons cinnamon
1/2 teaspoon nutmeg
For the Icing:
1 cup powdered sugar
1 to 2 tablespoons milk
1/2 teaspoon vanilla extract

Steps:

  • Gather the ingredients.
  • Add the ingredients to your bread machine in the order recommended by the manufacturer (for example, wet ingredients, dry ingredients, yeast). Program the appliance for the dough cycle.
  • When the cycle is done, place the dough onto a floured surface. Knead the dough for about 1 minute, then let it rest for 15 minutes.
  • Roll the dough out into a rectangle, about 15 by 10 inches.
  • Brush the melted butter over the dough, leaving a 1-inch border.
  • Mix the chopped nuts, sugar, cinnamon, and nutmeg in a bowl. Sprinkle the mixture evenly over the dough.
  • Starting on the long side, roll the dough up tightly. Press the edges to seal forming a 15-inch long, evenly shaped roll.
  • With a knife or 8-inch piece of unwaxed dental floss, cut the entire roll into 1-inch pieces.
  • Grease a 13 x 9-inch baking pan .
  • Position a rack in the center of the oven and heat to 375 F. Place the rolls cut-side down in the pan. Cover and let rise in a warm, draft-free place until they double in size, 30 to 45 minutes.
  • Bake the rolls until golden, about 20 to 25 minutes.
  • Gather the ingredients.
  • Combine 1 cup confectioners' sugar, 1 to 2 tablespoons milk, and the vanilla in a bowl. Stir the mixture until smooth. If too thin or too thick, add more confectioners' sugar or milk, respectively, until the desired consistency is reached.
  • Cool the rolls in the pan for 10 to 15 minutes. Drizzle with the icing, and serve warm from the pan.

1 cup milk
3 tablespoons water
1 egg, beaten
1/4 cup butter
3 1/3 cups all-purpose white flour
3 tablespoons granulated sugar

2 tablespoons softened butter or 2 tablespoons margarine
3/4 cup powdered sugar
1/4 teaspoon vanilla
2 -3 teaspoons milk

Steps:

  • Put yeast in bread machine first on bottom, then flour, sugar and salt.
  • Then melt butter in microwave. Add beaten egg, milk and water.
  • Pour onto dry ingredients in bread machine on the dough setting.
  • When dough is done, put it onto a lightly floured surface.
  • Knead in enough flour to make it easy to handle.
  • If it is too elastic, cover and leave 10 minutes.
  • Use floured rolling pin to roll out dough on floured surface.
  • Roll out into rectangular shape to approx 1/4-inch thick.
  • Use filling and spread over entire surface of dough with spoon.
  • Roll up dough.
  • Cut into circle with a sharp knife about 1-inch thick; place these in a greased 9x13-inch pan.
  • Cover with a tea towel and leave in a warm place for approx 30 minutes, until double in size.
  • Bake in a 350° oven for about 25 minutes, light brown on top.
  • When done, make glaze and swirl over buns.

1/3 cup granulated sugar

1 batch Basic Sweet-Roll Dough, recipe follows
1 1/4 cups confectioners' sugar
4 tablespoons unsalted butter, melted
3 tablespoons milk
1/2 teaspoon vanilla extract
Pinch of salt
1/2 cup whole milk
1 1/4 -ounce packet active dry yeast (2 1/4 teaspoons)
1/4 cup sugar
4 tablespoons unsalted butter, melted and slightly cooled, plus more for brushing
1 large egg yolk
1 1/2 teaspoons vanilla extract
2 3/4 cups all-purpose flour, plus more for dusting
3/4 teaspoon salt
1/2 teaspoon freshly grated nutmeg (optional)

Steps:

  • Make the rolls: Butter a 9-by-13-inch baking dish. Whisk the sugar and cinnamon in a bowl. On a floured surface, roll out the dough into a 10-by-18-inch rectangle. Spread the butter over the dough, leaving a 1-inch border on one of the long sides. Top with the cinnamon sugar. Brush the clean border with water. Tightly roll the dough into an 18-inch log, rolling toward the clean border; pinch the seam to seal.
  • Slip a long taut piece of thread or unflavored floss under the roll, about 1 1/2 inches from the end. Lift the ends of the thread and cross over the roll, pulling tightly to cut off a piece. Repeat, cutting every 1 1/2 inches, to make 12 rolls. Place the rolls in the prepared baking dish.
  • Cover the rolls loosely with plastic wrap and let rise in a warm place until doubled in size, about 1 hour, 10 minutes.
  • Preheat the oven to 350 degrees F. Uncover the rolls and bake until they spring back when pressed, 25 to 30 minutes. Let cool 10 minutes in the pan. (You can freeze the baked rolls for up to 2 weeks. Cool completely before freezing, then thaw, warm up and glaze before serving.)
  • Make the glaze: Whisk the confectioners' sugar, melted butter, milk, vanilla and salt in a bowl until smooth. Drizzle over the warm rolls.
  • Warm 1/2 cup water and the milk in a saucepan over low heat until a thermometer registers 100 degrees F to 110 degrees F. Remove from the heat and sprinkle the yeast on top, then sprinkle with a pinch of the sugar; set aside, undisturbed, until foamy, about 5 minutes.
  • Whisk the melted butter, egg yolk and vanilla into the yeast mixture until combined. In a large bowl, whisk the flour, the remaining sugar, the salt and nutmeg. Make a well in the center, then add the yeast mixture and stir with a wooden spoon to make a thick and slightly sticky dough. Turn out onto a floured surface and knead until soft and elastic, about 6 minutes. Shape into a ball.
  • Brush a large bowl with butter. Add the dough, turning to coat lightly with the butter. Cover with plastic wrap and let rise at room temperature until the dough is doubled in size, about 1 hour, 15 minutes.
  • Turn the dough out of the bowl and knead briefly to release excess air; re-form into a ball and return to the bowl. Lightly butter a large piece of plastic wrap and lay it directly on the surface of the dough. Cover the bowl tightly with plastic wrap and refrigerate at least 4 hours or overnight.

1 cup milk (lukewarm)
1/3 cup melted butter
2 eggs
4 cups of flour
1/4 cup sugar
1 teaspoon salt
1 packet of bread machine yeast
1/2 cup white sugar

2 teaspoons cinnamon
1 teaspoon nutmeg
¼ cup unsalted butter (melted)
1 ½ cups icing sugar
¼ cup butter (room temperature)
1 cup cream cheese (room temperature (about 8oz.))
1 teaspoon vanilla bean paste

Steps:

  • Place ingredients, in the order listed, into your bread machine and select the dough program (this will take about 90 minutes).
  • Roll the dough out on a lightly floured surface, into a 12"x15" rectangle. Brush melted butter all over the dough and generously sprinkle all the cinnamon sugar mixture. Tightly roll up the dough and cut into 12 even pieces. Each piece is about 2½ inches wide. This recipe make 12 cinnamon rolls. Place cinnamon buns on baking paper in a baking pan. Carefully cover with cling wrap, cover with a kitchen towel and allow to rise for about 20-30 minutes until they double in size. I place them in a slightly warm over that is turned off.
  • Bake in 190°C/375°F preheated oven until golden brown, or about 12 minutes.
  • Take the softened cream cheese and butter and whisk together with icing sugar and vanilla bean paste. Be generous! Spread on warm cinnamon buns before serving, with extra cream cheese while you eat!

ANNA'S CINNAMON CARAMEL ROLLS (BREAD MACHINE)

Everything Anna made was wonderful, and these cinnamon rolls are no exception. Although this is an old recipe, my Mom modified the directions to allow mixing and rising of the dough in a bread machine. The ingredients and quantities are exactly the same if you choose to hand mix and let the dough rise without the machine, but I haven't included the directions for that method. If you want to do it that way, then simply follow the basic mix and rise directions of any other roll recipe. I'll add those steps myself when I finally make them that way.

  • Add the remaining dough ingredients to the bread machine in the order listed above.
  • If you bread machine has a "dough" setting, use that. If not, run your machine through the first cycle. My machine beeps at the end of the first cycle, but I also have a dough option.
  • FILLING.
  • When the dough is ready, remove it from the machine and put it on a floured board. Using your hands, spread the dough evenly to approximately to a 15" x 8" rectangle.
  • Spread the butter over the dough and sprinkle the sugar and cinnamon evenly over that. The quantities for the filling are approximate, so feel free to play.
  • Starting on the long side, roll the dough up and cut it into 12 pieces.
  • TOPPING.
  • In the bottom of a 9" x 13" pan, mix butter, brown sugar, syrup and pecans (again, the quantities are approximate, so feel free to increase or decrease). Add the 12 rolls.
  • Cover the rolls with a clean towel and put the pan in a warm place to rise.
  • Let the rolls rise until they're up to the top of the pan (can take up to an hour).
  • Remove and bake in a 350 oven for 30 minutes.
