Steps:
- Melt the butter in a pan.
- Add the onions and slowly cook until they caramelize, about 20-30 minutes.
- Add the butter and let it melt.
- Add the mushrooms and saute until the mushrooms start to caramelize, about 10-15 minutes.
- Add the garlic, thyme, salt and pepper and saute until fragrant, about a minute.
- Add the sherry and deglaze the pan.
- Add the green beans and saute until bright green and just starting to turn tender but still crisp, about 5 minutes.
- Melt the butter in a small sauce pan.
- Add the flour and stir until lightly golden brown.
- Add the milk and simmer until it thickens.
- Add the blue cheese and simmer until it melts.
- Add the green beans and mushrooms and toss to coat.
- Pour the mixture into an 8×8 inch baking dish.
- Top with the panko bread crumbs and french fried onions.
- Bake in a preheated 400F/200C oven until the sides are bubbling and the top is golden brown, about 5-10 minutes.

- Preheat the oven to 400 degrees.
- Bring a pot of salted water to boil over high heat. Blanch the beans for 5 minutes, drain well in a colander, and transfer into a lightly buttered casserole dish. Pour in the cream and crumble the blue cheese evenly on the top. Melt the 2 tablespoons of butter in a saucepan over low heat, and mix together with the breadcrumbs in a small bowl. Sprinkle the breadcrumbs evenly over the top of the casserole. Bake for 15 minutes, or until browned and bubbling.
- Let rest for 15 minutes before serving.

- Preheat oven to 400F.
- Drain green beans in a colander. Allow to drain thoroughly.
- Heat EVOO in a large skillet. Add onions and cook over medium heat until soft and translucent, about 5 minutes. Add garlic, cook one minute more. Add 1/4 cup butter to pan, melt and stir into onions. Sprinkle flour over butter mixture, stir and cook flour for another 1-2 minutes. Slowly stir in heavy cream. Bring to a simmer, add blue cheese and turn off heat. Stir until blue cheese is incorporated (small pieces are okay). Season to taste with salt and pepper.
- Gently add green beans to skillet and mix until well-coated. Pour mixture into a baking dish.
- In a small bowl, melt remaining butter in microwave. Add chopped french fried onions and breadcrumbs, mix thoroughly. Sprinkle mixture over casserole.
- Bake for 10-15 minutes or until hot and bubbly and topping is nicely browned. Serve immediately.

- Cook green beans in boiling water for 5-10 minutes or until cooked but still crispy. (Remember to put the beans in the pan only when water starts boiling hard.) Drain and rinse with very cold water to stop cooking process.

- In a mixing bowl, combine mushroom soup, milk, cheddar cheese, and half of the onions. Mix together.

- Heat 1 tbsp of the butter and the oil in a large pan and fry the mushrooms for 10-15 mins until golden. Stir in the green beans and cook for another 3-4 mins until the beans turn bright green. Scoop out the veg onto a plate.
- Heat the oven to 200C/180C fan/gas 6. Melt the remaining butter in the pan until foaming. Remove from the heat briefly and sprinkle over the flour, stirring into the butter to make a golden brown paste. Return to the heat and add the milk, a splash at a time, continually stirring until all the milk has been added and you get a smooth, thick white sauce. Season well. Stir the beans and mushrooms into the white sauce, and spoon into a medium ovenproof dish.
- Scatter over the crispy onions, then bake for 20-30 mins until bubbling and golden, covering if the onions brown too quickly.

- Pre cook beans in lightly salted water about 5 to 6 minutes.
- While beans are cooking, mix bread crumbs and butter.
- Drain beans in bowl lined with paper towels to absorb moisture.

I hesitated to even post this recipe, since there are so many green bean casseroles on here. And yes, this one uses soup and canned French fried onions. The difference is, this recipe uses cheddar cheese soup, not cream of mushroom. I first ate it in 1973 at the home of a (then) middle-aged couple who invited my husband and me to dinner shortly after we were married.

- Drain and rinse beans (My mother always taught me to do this when using canned green beans, to get rid of the "can taste").

- Set oven to 350°F.
- Grease a medium casserole dish.
- Steam broccoli florets until firm-tender (about 2-3 minutes) drain well then pat dry with paper towels.
- In a large saucepan melt 2 tbsp butter over med-low heat; add in flour and stir for 1 minute.
