2 C. All purpose flour
¼ C. Granulated sugar
1 tsp. Salt
2 C. Cheddar cheese shredded
1 tsp. Baking soda
1 C. Sour cream
2 Large eggs
¼ C. Butter unsalted and melted
¼ C. Milk

Steps:

  • Preheat the oven to 400 degrees.
  • Place the ingredients into a mixing bowl, and beat until well combined.
  • Spoon the batter into 12 sections of a muffin tin that have been well greased or lined with cupcake liners. Fill each one to the top with the batter.
  • Bake for 15-20 minutes until browned and cooked through.

2-1/2 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon Italian seasoning
1/2 teaspoon baking soda
1/2 teaspoon salt
1 large egg, room temperature
1-1/2 cups buttermilk
1/3 cup canola oil
2 garlic cloves, minced
2 cups shredded cheddar cheese
4 green onions, sliced
1/2 cup finely chopped sweet red pepper
2 tablespoons finely chopped oil-packed sun-dried tomatoes, patted dry
1/3 cup shredded Parmesan cheese

Steps:

  • Preheat oven to 400°. In a large bowl, whisk flour, sugar, baking powder, Italian seasoning, baking soda and salt. In another bowl, whisk egg, buttermilk, oil and garlic until blended. Add to flour mixture; stir just until moistened. Fold in cheddar cheese, onions, pepper and sun-dried tomatoes., Fill greased muffin cups three-fourths full. Sprinkle with Parmesan cheese. Bake 15-18 minutes or until a toothpick inserted in center comes out clean. Cool 5 minutes before removing from pans to wire racks. Serve warm.

1 cup milk
3 tablespoons unsalted butter, melted & then cooled
1 large egg, lightly beaten
1 pinch cayenne pepper
1 3/4 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon granulated sugar
1/2 teaspoon salt
3/4 cup grated sharp cheddar cheese

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, combine milk, melted butter, egg& cayenne.
  • In a second bowl, sift together flour, baking powder, sugar& salt.
  • Stir in cheese.
  • Add flour mixture to milk mixture and stir batter until it is just combined.
  • The batter should be lumpy.
  • Spoon the batter into muffin tins (buttered or lined) filling each about 2/3 full.
  • Bake 20- 25 minutes.

1 cup plain yogurt

  • Preheat oven to 400 degrees F (200 degrees C). Grease 12 large muffin cups.
  • Mix flour, sugar, baking powder, salt, and baking soda together in a large mixing bowl; stir Cheddar cheese into the flour mixture. Pour yogurt, eggs, and butter over the flour mixture; stir until the dry ingredients are just moistened. Spoon the batter into the prepared muffin cups.
  • Bake in the preheated oven until the tops just start to lightly brown, 18 to 20 minutes.

1/4 teaspoon salt
1 teaspoon dry mustard
3/4 cup cheddar cheese (shredded)
1 teaspoon sugar
1/4 cup vegetable oil
1 large egg (lightly beaten)
1/3 cup milk
1/3 cup water
Garnish: Paprika for sprinkling tops

Steps:

  • Preheat the oven to 400 F.
  • Grease a 12-cup muffin tin.
  • In a medium bowl, combine the all-purpose flour, baking powder, salt, dry mustard, cheddar cheese, and sugar.
  • In a small bowl, mix the vegetable oil, egg, milk, and water.
  • Add the mixed liquid ingredients to the bowl of dry ingredients. Quickly mix the ingredients altogether, making sure not to overmix.
  • Fill each muffin cup two-thirds full with the batter. Sprinkle paprika on the tops of each muffin cup. Bake at 400 F for 25 minutes or until done.
  • Let the muffins cool in the muffin tin for about 10 minutes.
  • Lift the muffins out with a spoon and serve them with butter.

1 cup cornmeal (I like to use coarser polenta)
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup sugar
1 large egg
1 cup milk
4 tablespoons unsalted butter, melted
1 1/4 cups grated sharp cheddar cheese

Steps:

  • Preheat oven to 425 degrees.
  • Butter the insides and the top of a regular muffin pan (1/3 cup).
  • In large bowl thoroughly combine the flour, cornmeal, baking powder, salt and sugar.
  • In medium bowl, beat the egg.
  • Beat in the milk and the melted butter.
  • Combine with the dry ingredients until just evenly moistened.
  • Do not overmix.
  • Stir in 1 cup of cheese.
  • Immediately spoon the batter into the muffin pan.
  • Evenly sprinkle the remaining cheese on top of the muffins.
  • Bake 17 minutes or until a knife inserted in the center of the muffin comes out clean.
  • Best served warm.
