CARROT AND SWEDE MASH
This carrot and swede mash is low on calories and is the perfect vegetable side dish. It makes the best side to heavier meat dishes. Low glycaemic index.

Steps:
- Boil the vegetables in salted water for 10 minutes or until tender.
- Drain and let the vegetables steam dry for 5 minutes before mashing with the olive oil until desired consistency.
- Stir in the nutmeg and pepper. Serve immediately.

CARROT AND SWEDE MASH
A simple but tasty winter side dish. It makes a lovely accompaniment to all sorts of dishes, but is particularly good with a roast dinner, pie or sausages. Use olive oil instead of butter to make it dairy-free or vegan.

Steps:
- Peel the swede, then chop the flesh into rough cubes - about 1 ½ cm sq.
- Scrub the carrots well, then top and tail. No need to peel. Chop into similar sized piece to the swede.
- Place in a large lidded pan along with the bay leaf and salt.
- Almost, but not quite, cover with water. Bring to the boil with the lid on then simmer for about 15 to 20 minutes until the cubes are cooked, but not mushy. You can test by inserting a knife into a cube of each. If it goes in easily, it's done.
- Drain through a colander, reserving the cooking liquid for gravy or soup. Allow to steam dry a little, then return to the pan. Add the butter, nutmeg and pepper and mash to your desired consistency.

- Cook the carrots and swede together in a saucepan of boiling salted water for 30-35 minutes, or until tender. Drain and return to the pan.
- Add the butter, crème fraîche and horseradish, mash well and season with salt and pepper to taste. Serve.
EASY CARROT & SWEDE MASH

- Bring a pan of salted water to the boil and cook the chopped swede and carrot for 20 minutes until tender. Drain in a colander.
- Put the drained swede and carrot back into the pan it was cooked in and add the butter and cream. Use a potato masher or potato ricer (for a finer mash) to mash it all together. If you like your mash really smooth and creamy see my top tip below!
- Mix in the grated nutmeg, salt, and pepper, and serve. Alternatively, allow the mash to cool before storing it in the fridge. You can also freeze it for use at a later date.

- Cut the veg into similar-sized chunks. Tip into a pan of cold salted water, bring to a boil, cover, then cook for 15-20 mins until all the vegetables are tender.

- Peel the swede (a vegetable peeler is easiest) and chop into ½ inch chunks, then repeat with the carrots.
- Put it all into a large saucepan and add enough cold water to just cover the vegetables. Add the salt and bring it to the boil, then reduce the heat and simmer for 20 minutes or until the vegetables are soft.
- Drain, then pour the cooked vegetables back into the pan over a low heat and cook for 2 minutes, gently stirring so it doesn’t scorch, to evaporate some of the moisture.
- Mash the swede either by hand or in a food processor (this will yield smoother results, though mashed swede will always be a bit chunky), along with the butter and nutmeg. Season with salt and pepper to taste.
