This recipe is so good that I double it whenever I make it. Since it is peanut butter balls dipped in chocolate it is almost like candy. Real buckeyes are nuts that grow on trees and are related to the horse chestnut.

1 ½ cups peanut butter
1 cup butter, softened
½ teaspoon vanilla extract
6 cups confectioners' sugar
4 cups semisweet chocolate chips

Steps:

  • In a large bowl, mix together the peanut butter, butter, vanilla and confectioners' sugar. The dough will look dry. Roll into 1 inch balls and place on a waxed paper-lined cookie sheet.
  • Press a toothpick into the top of each ball (to be used later as the handle for dipping) and chill in freezer until firm, about 30 minutes.
  • Melt chocolate chips in a double boiler or in a bowl set over a pan of barely simmering water. Stir frequently until smooth.
  • Dip frozen peanut butter balls in chocolate holding onto the toothpick. Leave a small portion of peanut butter showing at the top to make them look like Buckeyes. Put back on the cookie sheet and refrigerate until serving.

Creamy Peanut Butter Balls dipped in chocolate are the perfect treat.

1 ½ cups peanut butter
½ cup butter (softened)
½ teaspoon vanilla
4 cups powdered sugar
3 cups chocolate chips (semi-sweet)
1 tablespoon shortening (or coconut oil)

Steps:

  • Combine peanut butter, butter and vanilla with a mixer on medium until fluffy.
  • Mix in powdered sugar a little bit at a time until incorporated. Chill mixture 30 minutes.
  • Roll into balls and place on a parchment lined pan. Chill mixture 30 minutes.
  • Combine chocolate chips and shortening in a small bowl. Microwave at 50% power for 1 minute. Stir and continue microwaving in 30 second increments just until melted.
  • Place a toothpick into each peanut butter ball and dip in chocolate leaving a little bit of the peanut butter peeking out the top.
  • Place on a parchment lined pan and chill.

2 ½ cups confectioners' sugar
2 cups creamy peanut butter
½ cup melted margarine
½ cup brown sugar
½ teaspoon vanilla extract
1 (12 ounce) bag chocolate chips

Steps:

  • Grease a 10x15-inch jelly roll pan.
  • Mix confectioners' sugar, peanut butter, margarine, brown sugar, and vanilla together in a bowl. Press peanut butter mixture into the prepared pan.
  • Melt chocolate chips in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching.
  • Pour melted chocolate evenly over the peanut butter layer. Let buckeye bars cool completely before cutting into squares.

A delightful combination of peanut butter balls dipped in chocolate is reminiscent of your favorite peanut butter cup candy.

3/4 cup Skippy peanut butter
1/2 cup butter, room temperature
2 cups powdered sugar
1/2 teaspoon vanilla extract
1-2 teaspoons shortening or coconut oil
1/2 cup chocolate chips or 1/2 bag of Wilton Dark Chocolate Melts
Wax paper
Toothpicks

Steps:

  • Stir together butter and peanut butter in a medium mixing bowl. I used a wooden spoon.
  • Stir in powdered sugar and vanilla until the ingredients are combined in to a stiff, coarse dough.
  • Use a small cookie scoop to make balls with the peanut butter mix. Drop balls on to a wax paper lined cookie sheet. Stick a toothpick in to each ball.
  • Once all the dough has been scooped, stick the cookie sheet in the freezer for an hour.
  • After an hour, melt chocolate chips in a Wilton chocolate melting pot. Add a teaspoon of palm shortening, if desired (I'm not convinced this is necessary).
  • Once the chocolate is completely melted, remove the peanut butter balls from the freezer. Carefully remove the balls, on the wax paper, to the counter. Lay another sheet of wax paper on the cold cookie sheet.
  • Dip the peanut balls about 3/4 of the way in to the chocolate. Roll to allow chocolate to drip off and place the balls on the wax paper on the cookie sheet.
  • The chocolate should set up quickly on the cold balls and cookie sheet, but if it doesn't , put the sheet back in the freezer to allow the chocolate to harden.
  • Keep refrigerated.

Who doesn't love a confection inspired by nature? In this case, it's a peanut butter truffle dipped in chocolate, which resembles the nut from Ohio's state tree, the buckeye.

2 1/2 cups sifted confectioners' sugar
1 cup smooth peanut butter
6 tablespoons unsalted butter, melted
1/2 teaspoon pure vanilla extract
1/4 teaspoon kosher salt
8 ounces semisweet or bittersweet chocolate, chopped
1 teaspoon vegetable shortening

Steps:

  • Line a baking sheet with parchment. Beat the confectioners' sugar, peanut butter, butter, vanilla and salt with an electric mixer in a medium bowl until well combined. Scoop 2-teaspoonful mounds, and roll into balls; arrange them on the prepared baking sheet. Refrigerate until firm, about 20 minutes.
  • Microwave the chocolate and shortening in a microwave-safe medium bowl in 30-second increments, stirring in between, until the mixture is completely melted and smooth, about 2 minutes.
  • Stick a toothpick or skewer into the top center of a peanut butter ball. Dip the ball into the melted chocolate, leaving a circle of peanut butter visible on top. Let the excess chocolate drip off, then return the buckeye to the baking sheet. Repeat with the remaining peanut butter balls and chocolate.
  • Chill the buckeyes until firm, about 30 minutes. Smooth out the hole left by the toothpick with an offset spatula. Serve at room temperature or well chilled. Refrigerate in an airtight container for up to 5 days.

There are a lot of buckeye candy recipes floating around out there, but I have found this one to be the best. Very popular during the holidays especially. One warning, once served they will be devoured before you can blink an eye.

1 lb confectioners' sugar
2/3 lb peanut butter (smooth variety)
6 tablespoons unsalted butter (softened)
1/2 lb semisweet chocolate
1/2 lb milk chocolate
1 tablespoon shredded paraffin wax

Steps:

  • Blend sugar, peanut butter and butter together thoroughly.
  • Roll mixture into walnut-sized balls and insert a toothpick into each.
  • Place balls on a waxed paper lined cookie sheet and then put them in the freezer for about 10 minutes, or until firm.
  • Melt chocolate and paraffin in a double boiler.
  • Holding onto the toothpick, dip each chilled peanut butter ball into the melted chocolate, leaving a small round area near the toothpick. This will be the "eye" of the buckeye. The dipping of each ball should be done quickly so the warm chocolate does not thaw the peanut butter too much. This can cause the ball to slide off the toothpick and into the chocolate.
  • Place a fresh liner of waxed paper on the cookie sheet and put the buckeys on it. Refrigerate at least one-half hour before serving. You can then place the buckeyes in a container. For best results, keep them refrigerated until you serve them.

I make about 30 varieties of cookies and candies during the holidays and these are the most requested. They are fairly easy and delicious. I serve them on a tray in miniature muffin liners. I have tried many different buckeye recipes, but this one, given to me years ago, is the best one I have used. ADDED 12/17/06: Instead of chips and paraffin wax, this year I used chocolate bark coating and it worked really well. You will need about Five - 2 oz. blocks of bark.

1 (18 ounce) jar creamy peanut butter
1/2 cup butter (softened) or 1/2 cup margarine (softened)
1 lb confectioners' sugar (about 3.5 cups)
1 tablespoon vanilla
12 ounces chocolate chips (milk or semi-sweet)
3 -4 ounces paraffin wax (I use 1/4 of a standard block)
use 1/2 tsp of shortening per oz of chocolate instead paraffin wax

Steps:

  • Cream peanut butter and butter.
  • Add sugar and vanilla and mix well.
  • Form into 1 inch balls and refrigerate.
  • Melt chocolate chips with parafin wax in a double boiler.
  • Dip balls into chocolate with a toothpick about 3/4 of the way covered.
  • Place chocolate side down on waxed paper.
  • Let set at room temperature or refrigerate.
