This recipe is an old favourite - the apples sink to the bottom as it cooks, leaving a light sponge with a crisp sugary crust.

2 eggs
6 ounces superfine sugar, plus extra for sprinkling
1/2 teaspoon vanilla extract
3 1/2 ounces butter
4 tablespoons milk
4 1/2 ounces all-purpose flour
1/2 teaspoon ground cinnamon
2 1/4 teaspoons baking powder
2 cooking apples, peeled, cored and thinly sliced
heavy cream, to serve

Steps:

  • Preheat the oven to 400°F Line the sides and base of a 8 x 8in square cake tin with parchment paper.
  • Using an electric whisk, whisk the eggs, superfine sugar and vanilla extract in a large bowl until the mixture is thick and mousse-like and the whisk leaves a figure of eight pattern (this will take about 5 minutes).
  • Melt the butter in a saucepan with the milk, then pour onto the eggs, whisking all the time. Sift in the flour, cinnamon and baking powder and fold carefully into the batter so that there are no lumps of flour. Pour the mixture into the prepared tin and smooth the surface.
  • Arrange the apple slices over the batter. (They will sink to the bottom.) Sprinkle over a tablespoon of sugar and bake in the oven for ten minutes, then reduce the oven temperature to 350F and bake for a further 20-25 minutes or until well risen and golden brown.
  • Remove the cake from the oven and allow to cool in the tin. Cut into squares and serve warm with cream.

1 20 ounce can apple pie filling
0.5 cup dried cherries, dried cranberries, or raisins
1 cup all-purpose flour
0.25 cup granulated sugar
1 teaspoon baking powder
0.25 teaspoon salt
0.5 cup milk
2 tablespoon butter, melted
0.5 cup chopped walnuts, toasted
1.25 cup apple juice
0.333 cup packed brown sugar
1 tablespoon butter
1 recipe Sweetened Whipped Cream (optional)
Chopped walnuts, toasted (optional)

Steps:

  • Lightly coat a 3-1/2- or 4-quart slow cooker with cooking spray; set aside. In a small saucepan bring apple pie filling to boiling. Stir in cherries. Transfer apple mixture to prepared cooker.
  • In a medium bowl stir together flour, granulated sugar, baking powder, and salt. Add milk and melted butter; stir just until combined. Stir in the 1/2 cup walnuts. Pour and evenly spread batter over apple mixture in cooker, spreading evenly.
  • In the same small saucepan combine apple juice, brown sugar, and the 1 tablespoon butter. Bring to boiling. Boil gently, uncovered, for 2 minutes. Carefully pour apple juice mixture over mixture in cooker.
  • Cover and cook on high-heat setting for 2 to 2-1/2 hours or until a wooden toothpick inserted near center of cake comes out clean. Remove crockery liner from cooker, if possible, or turn off cooker. Cool, uncovered, for 30 to 45 minutes.
  • To serve, spoon warm cake and its sauce into dessert dishes. If desired, top each serving with Sweetened Whipped Cream and additional walnuts.

2 small or 1 large Granny Smith or Golden Delicious apples
2 1/2 ounces heavy cream, to serve

Steps:

  • This cake has been made at Ballymaloe for years. We even have guests who ask for it specifically every time they visit. The fruit sinks to the bottom as it cooks, leaving a light sponge on top with a lovely sugary crust.
  • Preheat the oven to 400 degrees F. Line the sides and base of a 8 by 8-inch square cake pan with parchment paper.
  • Using an electric whisk or hand held mixer, whisk the eggs, 6 ounces caster sugar, and vanilla extract in a large bowl, until the mixture is thick and mousse-like, and the whisk leaves a figure of eight pattern, this will take about 5 minutes.
  • Melt the butter in a saucepan with the milk, and then pour the mixture onto the eggs, whisking continuously. Sift in the flour, cinnamon, and baking powder, and fold carefully into the batter so that there are no lumps of flour. Pour the mixture into the prepared pan, and smooth the surface.
  • Peel and core the apples, and cut them into thin slices, and then arrange them over the batter. They will sink to the bottom. This is meant to happen! Sprinkle the cake with the remaining 1/2 ounce sugar, and bake in the oven for 10 minutes. Reduce the oven temperature to 350 degrees F, and bake until well risen and golden brown, about 20 to 25 minutes.
  • Allow the cake to cool in the tin, cut into squares and serve warm. It is delicious with cream!

I found this recipe in a magazine a long time ago (can't recall the name). It's very simple and absolutely delicious, especially when served warm with vanilla ice cream. I added a streusel topping for the "cobbler effect" which may be omitted, if you wish. My friends and family loved it. I hope you do, too!

3 -4 large granny smith apples
1 tablespoon butter
1/2 cup milk
1 teaspoon baking powder
1 cup sugar
1 egg
1 1/4 cups flour
1/2 cup sugar
1 tablespoon cornstarch
1 cup boiling water
2 tablespoons butter
1 1/2 teaspoons vanilla
1/2 cup packed light brown sugar
1/2 cup unsifted flour
1/4 cup cold butter or 1/4 cup margarine, cut up in little pieces

Steps:

  • Peel, core, and cut apples into small pieces.
  • Place in greased pie plate.
  • Sprinkle with a little sugar.
  • Cream the rest of the sugar with remaining cake ingredients.
  • Beat well and pour over apples.
  • Bake 30 minutes at 350 degrees.
  • While cake is baking, prepare streusel.
  • In medium bowl, combine 1/2 cup firmly packed light brown sugar and 1/2 cup unsifted flour; cut in 1/4 cup cold margarine or butter and press together with your fingers until crumbly.
  • Remove pie plate from oven after 30 minutes of baking and top with streusel.
  • Bake for another 15-20 minutes until golden.
  • Let cake cool for 10-15 minutes.
  • Cut in slices and serve warm or cold with warm vanilla sauce.
  • For sauce, microwave all ingredients until thick and clear (or heat in a saucepan on medium, stirring often).
  • *Don'tforget the vanilla ice cream!
  • It's soooo good together.

Steps:

  • Preheat oven 375F.

  • With a pastry blender or 2 knives, cut in 1 1/2 T margarine.
  • Add egg whites, milk and vanilla; beat until smooth.
  • Batter will be stiff.
  • Spoon into prepared pan and spread batter to fit pan.
  • Arrange apple slices, overlapping, in 2 concentric circles to cover batter.
  • In a small bowl, combine 3 T sugar and cinnamon; sprinkle over apple slices.
  • Dot with 1/2 T margarine.
  • Bake 30 min.
  • Cool 10 min before serving.

Is there anything nicer than the smell of apples and cinnamon? This is such a comforting dessert. Easy to make and low in fat too. You probably already have everything at hand. A good friend gave this to me many moons ago. I believe she got it from a women's group in Meaford Ontario. This is also terrific baked in individual ramekins or onion soup bowls. For a change of pace, try adding raisins or whole cranberries to the apples prior to pouring on the batter.
