Combining two favorite flavors-rich chocolate and ripe bananas-makes these muffins doubly good. -Donna Brockett, Kingfisher, Oklahoma

Yield about 1 dozen.

Number Of Ingredients 10

1-1/2 cups all-purpose flour
1 cup sugar
1/4 cup baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1-1/3 cups mashed ripe bananas (about 3 medium)
1/3 cup canola oil
1 large egg, room temperature
1 cup miniature semisweet chocolate chips

Steps:

  • Preheat oven to 350°. Whisk together the first 6 ingredients. In a separate bowl, whisk bananas, oil and egg until blended. Add to flour mixture; stir just until moistened. Fold in chocolate chips., Fill greased or paper-lined muffin cups three-fourths full. Bake until a toothpick inserted in center comes out clean, 20-25 minutes. Cool 5 minutes before removing from pan to a wire rack. Serve warm.

  • Mash bananas. Add sugar, yogurt, vanilla and vegetable oil. Stir until combined.
  • Add flour, cocoa powder, baking soda, and baking powder. Mix until combined.
  • Fold in chocolate chips.
  • Bake at 350 degrees for 20-25 minutes.

1-1/2 cups all-purpose flour
2/3 cup sugar
1/2 cup baking cocoa
1 teaspoon baking powder
1/2 teaspoon baking soda
1-1/3 cups mashed ripe bananas (about 2 to 3 medium)
1/2 cup plain yogurt
1/3 cup canola oil
1-1/2 teaspoons vanilla extract
3/4 cup semisweet chocolate chips
Baking cocoa, optional

Steps:

  • Preheat oven to 350°. In a large bowl, whisk the first 5 ingredients. In another bowl, whisk the bananas, yogurt, oil and vanilla until blended. Add to flour mixture; stir just until moistened. Fold in chocolate chips. , Fill 12 greased or foil-lined muffin cups three-fourths full. Bake until a toothpick inserted in center comes out clean, 15-20 minutes. Cool 5 minutes before removing from pan to a wire rack. If desired, dust with baking cocoa. Serve warm.

1 1/2 cups all-purpose flour
1/2 cup sugar
1/3 cup unsweetened cocoa powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup low-fat buttermilk
3/4 cup mashed banana
1/4 cup canola oil
2 teaspoons vanilla extract
cooking spray

Steps:

  • Preheat over to 350°F
  • Coat a 9x5 loaf pan, three 6x3 mini loaf pans or a 12 cup muffin tin with cooking spray.
  • Whisk together flour, sugar, cocoa, baking soda, and salt in a bowl. Set aside.
  • Whisk together buttermilk, mashed banana, oil, and vanilla in a separate bowl.
  • Fold the buttermilk mixture into the flour mixture.
  • Scoop batter into the desired prepared pans.
  • Bake until toothpick inserted in the center comes out clean: Large loaf 50 to 60 minutes, Mini-loaves 35 to 45 minutes, or Muffins 18 to 22 minutes.
  • Cool 5 minutes in pans.
  • Unmold and cool completely.

  • Melt 1 ounce chopped bittersweet chocolate in a double boiler or in microwave at low (20%) power. Drizzle over cooled loaf or muffin.

You won't believe your taste buds once you get a piece of this muffin in your mouth. These are so easy to make, and make a large size muffin. These can be frozen also. This recipe is courtesy of Joanna Lund. Each serving is only 186 calories as posted. I have also substituted applesauce for the vegetable oil, and I use egg substitute. In my oven it took closer to 25 minutes. Diabetic Exchanges per serving: 1 Starch, 1 Fruit and 1 Fat

3/4 cup artificial sweetener (Splenda)
1/4 cup unsweetened cocoa
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/3 cups bananas, mashed (4 ripe medium)
1 egg (or equivalent in egg substitute)
2 tablespoons vegetable oil (or unsweetened applesauce)
1/4 cup fat free sour cream
1/4 cup miniature chocolate chip

Steps:

  • Preheat oven to 375 degrees.
  • Spray 8 wells of a 12 hole muffin pan with butter-flavored cooking spray or line with paper liners.
  • In a large bowl, combine flour, Splenda, cocoa, baking powder and baking soda.
  • In a small bowl, combine bananas, egg, oil/applesauce and sour cream.
  • Add banana mixture to flour mixture.
  • Mix gently to combine.
  • Fold in chocolate chips.

1 teaspoon baking soda
1 cup caster sugar
1/4 cup cocoa
100 g butter
1 egg
1 cup yoghurt
1/2 cup milk
1/2 teaspoon vanilla
1/2 cup chocolate chips
nonstick cooking spray

Steps:

  • Sift the flour, baking soda and cocoa into a large mixing bowl.
  • Melt the butter and add the castor sugar, egg, yoghurt, milk, vanilla and 1/4 cup of chocolate chips.
  • Mix until you have a relatively smooth consistency.
  • Fold the dry ingredients (flour, baking soda, cocoa) into the combined liquid ingredients (butter, castor sugar, egg, yoghurt, milk, vanilla and chocolate chips) until the dry ingredients are dampened but not smooth.
  • Spoon the mixture into 12 medium sized muffin pans that have been well coated with non-stick cooking spray.
  • Sprinkle with an additional 1/4 cup of chocolate chips.
  • Bake at 200 degrees celcuis for 10-15 minutes.
  • Leave to stand in the muffin pans for about 3 minutes before putting on wiring rack to cool.
