- In a large pot, bring 2-2.5 quarts/liters of water to a boil. Add 1/2 tablespoon salt, followed by the pasta. Cook until al dente (i.e., slightly firm to the bite, not crunchy nor soft). Drain well.
- As the pasta boils, make the sauce: In a large skillet (large enough to accommodate the pasta), melt 2 tablespoons butter over medium or medium-high heat. Add onion and sauté until tender, stirring occasionally. Add garlic and mushrooms, and cook until mushrooms are tender, about 4-5 minutes. Season with salt and pepper to taste.
- Add the rest of the butter and heavy cream, and bring just to a boil. Reduce heat and let simmer for several minutes, until sauce has thickened slightly. Stir in nutmeg. Add 1/4 cup parmesan, then more if desired. Adjust seasoning to taste. Stir in pasta and cook on very low heat, tossing to combine for 1 minute until warm.
- Serve immediately. Garnish with parsley or chives if desired.

- To make the vegan parmesan, combine ingredients together in a food processor until a fine crumb or meal is formed. Store in a jar or container in the fridge. This will last up to 3 weeks.
- Bring a large pot of salted water to a boil. Cook noodles to al dente. Drain but do not rinse.
- Meanwhile, rinse and drain cashews from the soaking water and add to a high-powered blender along with water, apple cider vinegar, and lemon juice. Blend until very smooth.

- Heat the oven to 200°C/180°C fan/gas 6. Put the cherry tomatoes on a roasting tray and cook for 20 minutes.
- Put each chicken breast between 2 pieces of baking paper and bash with a rolling pin until 2cm thick. Mix the breadcrumbs with the 40g grana padano and put in a shallow bowl. Put the beaten egg and flour into 2 separate shallow bowls.

- For the mushroom tagliatelle, bring a large pan of salted water to the boil, add the tagliatelle and cook for 2 minutes less than it says in the pack instructions.
- Meanwhile, heat another frying pan with a glug of oil and add the shallots, garlic and mushrooms. Fry gently for 5-6 minutes until soft and beginning to turn golden, then add the cream, a spoonful of the pasta cooking water, the spinach and the lemon zest and juice. Bring to a simmer and cook for 3-4 minutes until the spinach is tender.

After some experimentation I came up with this recipe for my Mother-in-Law's birthday party and it was unbelievable. Everyone loved it! - Boil pasta according to instructions on the box. For the Mushroom Alfredo Sauce: In a saucepan add 1 stick of unsalted butter, 16 ounces of heavy whipping cream, and 2 ounces of cream cheese.
