DANISH PORK BURGERS
Danish frikadeller pork burgers recipe. Ground pork mixed with eggs, crumbled saltine crakers and onions, shaped into patties and fried. Serve with Dijon mustard.

- Make the ground pork mixture: Using your hands to combine, mix together the pork, saltines, onion, eggs, milk, salt, and pepper in a large bowl.
- Fry the patties: Lightly brush a large, nonstick frying pan with vegetable oil. Heat the pan on medium high. Divide the pork mixture into 8 equal portions. Working in batches, drop each portion into the hot pan, spacing them as not to crowd the pan. Pat them down with the back of a spoon to form them into patties. Cook the patties, turning once, for 4 to 5 minutes per side, until golden brown. Serve the pork burgers with Dijon mustard.

DANISH BREADED PORK PATTIES
This traditional dish is in Danish called Karbonader or sometimes Krebinetter. I have always called them Krebinetter. However, I must confess after having searched around the internet I think the most common name for this dish is Karbonader. The word Karbonader can't be translated into English but they can be called Danish Breaded Pork Patties. I am not sure if this dish was originally invented in Denmark. However, it has always been a popular and traditional dish on the Danish dinner table.

Steps:
- 1. Start by dividing the meat into 5 portions of about 100 g each (or 1/5 lb each) and shape them into circular thick patties. 2. In a deep plate; beat the egg together with the water. 3. In a second plate; mix the bread crumbs together with salt and pepper. 4. Now dip the pork patties in the egg mixture and then in the breadcrumbs. Make sure the entire patty is covered with breadcrumbs. One time should be enough but if you like a thicker layer of breading - then repeat this step one more time. 5. On a frying pan; add the butter and fry the breaded pork patties for about 5-8 minutes. Flip them over from time-to-time.

- In a small bowl, combine the mayonnaise, garlic, parsley and vinegar. Season with salt and pepper.
- In a skillet, heat the 1 tablespoon of oil. Add the ham; cook over moderately high heat, turning once, until crisp, 2 minutes. Drain on paper towels.
- Light a grill. Mix the pork, paprika, 1 tablespoon salt and 1/2 teaspoon pepper. Shape into four 3/4-inch-thick patties. Grill over moderately high heat for 5 minutes per side, or until just cooked through. Top with the cheese, cover and cook until melted. Transfer to a plate. - Use a sharp knife to cut long deep grooves in the rind of the pork roast. The grooves should be about 5 mm (1/5 inch) apart. Make sure to make deep grooves in the rind but do not cut into the actually meat.
- Rub the entire roast thoroughly with coarse salt. Especially, make sure that you get lots of salt in the grooves.
- Place the roast on a rack with a roasting pan underneath. In the roasting pan; add 1/2 liter (2 cups) of water and some sliced carrots and onions. This water with the vegetables can later be used to make a nice gravy. Make sure that the roast is lying in a horizontal position. You can use a ball of aluminium foil under the roast to level it. If you do not do this you risk that the rind gets an uneven color or get burned.
