NUTTY CRISPY SUGAR COOKIES
I worked with a woman that baked 80 dozen or more cookies during the holidays. Every day she brought 1/2 dozen of every cookie she'd baked the night before; this is my favorite. I sometimes roll the dough into balls and then roll them in some granulated sugar rather than making these as drop cookies. These freeze well.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease cookie sheets. Stir together the flour, baking soda, cream of tartar, and salt; set aside.
- In a large bowl, cream together the butter and sugar until smooth. Beat in eggs, vegetable oil, and vanilla. Gradually stir in flour mixture until smooth. Stir in nuts. Drop dough by rounded teaspoonfuls onto the prepared cookie sheets. Flatten cookies with a fork.
- Bake in the preheated oven for 10 to 12 minutes, or until the edges begin to brown. Cool on baking sheets for a minute before transferring to wire racks to cool completely.

NUTTY FINGERS
My grandmother gave me this recipe. I made it for my husbands family get together. Ever since then I have been asked to make this every time we have a family reunion or holiday.

Steps:
- Preheat oven to 300 degrees.
- Cream 2 sticks of butter.
- Add 1/4 cup of powdered sugar, 2 cups all purpose flour, 2 tablespoons vanilla extract, and 1 1/3 cups of chopped pecans.
- Roll into a ball or lengthwise about the size of a finger.
- Bake on greased cookie sheet in preheated oven for 20-25 minute.
- Cool for 1 minute then roll in powdered sugar.
- Enjoy!

NUTTY MERINGUE COOKIES

Steps:
- Preheat the oven to 225 degrees F.
- In a large bowl, using a hand beater, beat the egg whites, cream of tartar, salt and vanilla until soft peaks form. Gradually add the sugar and beat until the sugar dissolves and stiff peaks form, about 3 minutes. Gently fold in the chopped nuts.
- Drop the batter onto silicone mats or parchment lined baking sheets (will need 2) with a teaspoon, spacing at least 2 inches apart. Bake until the meringues are dried through, about 2 to 2 1/2 hours. The cookies will remove easily from the parchment or silicone mat when ready.
- Cook's Note: Do not bake on humid days. Dye these any color to suit a seasonal event. For orange cookies, add 5 drops of food coloring.
NUTTY SANDWICH COOKIES

- Preheat the oven to 325 degrees F. Line 2 baking sheets with parchment. Pulse the nuts, confectioners' sugar and granulated sugar in a food processor until finely ground. Add the flour, cinnamon and salt and pulse until combined. Add the butter and pulse to form a soft dough.
- Roll heaping teaspoonfuls of dough into balls and arrange 1 1/2 inches apart on the prepared baking sheets. Lightly flatten the balls with your fingers. Sprinkle with coarse, raw, sanding or brown sugar. Press a whole nut into the top of some of the cookies or sprinkle with chopped nuts.
- Bake the cookies until lightly golden, about 15 minutes. Let cool 3 minutes on the baking sheets, then transfer to racks to cool completely. Spread your choice of filling on the flat side of a cookie; sandwich with another cookie. Repeat with the remaining cookies.
CRUNCHY NUTTY FINGERS COOKIES
Snowball cookies, Nutty Fingers, Russian Tea cookies are all very similar cookies to these incredibly easy and flaky cookies. My 7 year old daughter made these, so that should tell ya that these are that easy!

- Cream margarine; mix in sugar and vanilla then flour and nuts.
- Form cookies the size of a pinky finger and bake 20-25 minutes in a 350° oven, or until edges are brown.
- Cool and roll in powdered sugar (dredge them again for an extra layer of sugar if desired.)

- Preheat the oven to 350° and place racks on middle and lower third tracks.
- In a medium mixing bowl, whisk flour with baking soda and salt. If you are using self-rising flour you can skip this step, you wont need the salt or soda.
- In a large mixing bowl beat the butter at medium speed until creamy with a handheld electric mixer. Add brown sugar and granulated sugar and beat until fluffy. Add eggs and vanilla and beat until smooth. Lower speed and beat in the dry ingredients. Stir in chocolate chips and nuts.
- Place heaping tablespoons of the cookie dough at least 1 1/2" apart on 2 baking sheets and bake for about 11 minutes for soft and chewy cookies, about 13 minutes for chewy cookies or about 16 minutes for crisp cookies.
- Leave cookies to cool on baking sheets for 2 minutes before moving them to wire racks.
PECAN FINGERS
You can't go wrong with the combination of butter and pecans in this recipe. I never serve these cookies without receiving requests for it.
