2 lbs lean ground beef
2 large garlic cloves, minced
2 stalks celery, finely chopped
2 large onions, finely chopped
2 tablespoons chili powder
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper
1 (28 ounce) can diced tomatoes with juice
1 (19 ounce) can red kidney beans, drained and rinsed
2 tablespoons cocoa powder
1 tablespoon brown sugar
3 -4 cloves (I only add these sometimes)
1 teaspoon white vinegar
1/2 teaspoon black pepper
1 medium green pepper, finely chopped

Steps:

  • In a large non-stick skillet over medium heat combine ground beef, garlic, celery and onions. Cook until vegetables are tender and meat is no longer pink. Add Chilli powder, oregano, an cayenne; cook 1 minute longer. With a slotted spoon, transfer mixture to slow cooker.
  • Add tomatoes (with juice) kidney beans, cocoa, sugar, cloves, vinegar and pepper, stir to combine. Cover and cook on low for 6-8 hours or on high for 3-4 hours until hot and bubbling. Add green pepper and stir to combine. Cover and cook 20-25 minutes longer. Season to taste with salt and pepper.

  • Brown ground beef in frying pan; pour off extra fat.
  • Put browned meat in bottom of crock pot; add chopped vegetables then all other ingredients.

1 lb bacon, cut up in small chunks
4 lbs ground beef
4 (1 lb) cans canned kidney beans
28 ounces canned crushed tomatoes (Hunts has them spiced for chili)
12 ounces tomato paste
2 onions, finely chopped
4 ounces chili powder
4 ounces cayenne pepper (dry powder)
2 (10 ounce) cans beef broth
2 fresh tomatoes
2 jalapeno peppers or 2 serrano peppers
3 garlic cloves
1 tablespoon ground cumin
1 tablespoon oregano
1 1/2 tablespoons paprika

Steps:

  • Fry the bacon until it starts to brown, then put it into the crock pot.
  • In the bacon drippings, brown the ground beef.
  • Put the ground beef, beans, crushed tomatoes, tomato paste, onions, chili powder (In Southern California we have a great variety available, but Gebhardt's would work), and the cayenne into the crock pot with the beef broth.
  • Cut the stems off the fresh jalapenos and cut them in two or three chunks.
  • place the peppers along with the garlic and whole fresh tomatoes into a food processor and puree the three ingredients.
  • Put this into the crock pot, stir to mix and let it all cook for 10-12 hours on low or 5-6 hours on high.
  • By making a puree out to of the peppers and garlic, you get a more evenly dispersed blend.
  • I used the tomatoes to give some moisture to the puree.
  • Serrano chilies are three times hotter than jalapenos so don't let their small size fool you.

This great chilli recipe has to be one of the best dishes to serve to friends for a casual get-together. An easy sharing favourite that uses up storecupboard ingredients.

1 large onion
1 red pepper
2 garlic cloves
1 tbsp oil
1 heaped tsp hot chilli powder (or 1 level tbsp if you only have mild)
1 tsp paprika
1 tsp ground cumin
500g lean minced beef
1 beef stock cube
400g can chopped tomatoes
½ tsp dried marjoram
1 tsp sugar (or add a thumbnail-sized piece of dark chocolate along with the beans instead, see tip)
2 tbsp tomato purée
410g can red kidney beans
plain boiled long grain rice , to serve
soured cream , to serve

Steps:

  • Prepare your vegetables. Chop 1 large onion into small dice, about 5mm square. The easiest way to do this is to cut the onion in half from root to tip, peel it and slice each half into thick matchsticks lengthways, not quite cutting all the way to the root end so they are still held together. Slice across the matchsticks into neat dice.
  • Cut 1 red pepper in half lengthways, remove stalk and wash the seeds away, then chop. Peel and finely chop 2 garlic cloves.
  • Start cooking. Put your pan on the hob over a medium heat. Add 1 tbsp oil and leave it for 1-2 minutes until hot (a little longer for an electric hob).
  • Add the onion and cook, stirring fairly frequently, for about 5 minutes, or until the onion is soft, squidgy and slightly translucent.
  • Tip in the garlic, red pepper, 1 heaped tsp hot chilli powder or 1 level tbsp mild chilli powder, 1 tsp paprika and 1 tsp ground cumin.
  • Give it a good stir, then leave it to cook for another 5 minutes, stirring occasionally.
  • Brown 500g lean minced beef. Turn the heat up a bit, add the meat to the pan and break it up with your spoon or spatula. The mix should sizzle a bit when you add the mince.
  • Keep stirring and prodding for at least 5 minutes, until all the mince is in uniform, mince-sized lumps and there are no more pink bits. Make sure you keep the heat hot enough for the meat to fry and become brown, rather than just stew.
  • Make the sauce. Crumble 1 beef stock cube into 300ml hot water. Pour this into the pan with the mince mixture.
  • Add a 400g can of chopped tomatoes. Tip in ½ tsp dried marjoram, 1 tsp sugar and add a good shake of salt and pepper. Squirt in about 2 tbsp tomato purée and stir the sauce well.
  • Simmer it gently. Bring the whole thing to the boil, give it a good stir and put a lid on the pan. Turn down the heat until it is gently bubbling and leave it for 20 minutes.
  • Check on the pan occasionally to stir it and make sure the sauce doesn't catch on the bottom of the pan or isn't drying out. If it is, add a couple of tablespoons of water and make sure that the heat really is low enough. After simmering gently, the saucy mince mixture should look thick, moist and juicy.
  • Drain and rinse a 410g can of red kidney beans in a sieve and stir them into the chilli pot. Bring to the boil again, and gently bubble without the lid for another 10 minutes, adding a little more water if it looks too dry.
  • Taste a bit of the chilli and season. It will probably take a lot more seasoning than you think.
  • Now replace the lid, turn off the heat and leave your chilli to stand for 10 minutes before serving. This is really important as it allows the flavours to mingle.
  • Serve with soured cream and plain boiled long grain rice.

This is my favourite version of chili, that I make often. It freezes wonderfully for a great make-ahead meal or freeze the leftovers for lunches or a quick dinner. It is not overly spicy so my daughter will eat it! If you like things spicy, increase the chili powder and cumin. One tip if your child still finds it too spicy, is to add additional canned beans in tomato sauce to their portion. It works! :) This is great with corn bread on the side. NOTE: You can substitute part of the ground beef with TVP (textured vegetable protein, SOY) without reconstituting first. I substitute 1/4 - 1/2 lb of the ground beef with 1/4 - 1/2 cup TVP bits. Add this into the pot with the other ingredients, do not saute with the ground beef.

1 (398 ml) can baked beans in tomato sauce, undrained
1 (398 ml) can no-salt-added tomato sauce
1 (284 ml) can canned mushroom slices, drained (optional)

Steps:

  • In frying pan, saute ground beef, onions and garlic until beef is browned and onions are translucent. Transfer to slow cooker.
  • Add all other ingredients to pot and mix well.
  • Cook on low for 6-8 hours.
  • To FREEZE: Cool completely, freeze in desired portions in freezer bags or containers.
  • To REHEAT: Thaw in refrigerator overnight. Heat in saucepan until heated through, OR reheat it in the microwave after it's defrosted, and if it's not fully defrosted I use the microwave defrost first, then reheat on high until hot, really quick. :).

3 tbsp olive oil
500g beef mince
1 onion , finely chopped
1 celery stick , finely chopped
1 large red pepper , thickly sliced
2 garlic cloves , finely grated
2 tsp ground cumin
1 tsp smoked paprika
2 tsp dried oregano
2-3 tbsp chipotle chilli paste
3 tbsp tomato purée
400g can chopped tomatoes
400ml beef stock
2 x 400g can black beans , drained
4 small squares dark chocolate
tortilla chips or cooked rice and soured cream, to serve

Steps:

  • Set the slow cooker to low. Heat 1½ tbsp oil in a large, non-stick pan over a high heat and fry the mince for 10-12 mins or until evenly browned. Tip into the slow cooker.
  • Heat the remaining oil in the pan. Fry the onion, celery and pepper for 10 mins or until softened. Add the garlic, cumin and paprika and fry for 1 min. Tip into the slow cooker.
  • Stir in the oregano, chipotle paste, tomato purée, tomatoes and stock. Season. Cover and cook for 6-8 hrs.
  • Stir in the beans and chocolate during the final 30 mins of cooking. Serve with a bowl of rice or tortilla chips and a dollop of soured cream.

8 slices bacon, chopped medium
3 1/2 lbs boneless chuck roast (trimmed and cut in 1 1/2 inch pieces)
1 cup onion (chopped)
3 jalapeno chiles (stemmed, seeded, minced)
3 tablespoons chili powder
2 tablespoons cumin
5 garlic cloves, minced
1 teaspoon table salt
1/2 teaspoon black pepper
28 ounces crushed tomatoes
6 (6 inch) corn tortillas, torn into 2 inch pieces
4 cups low sodium chicken broth
2 chipotle chiles in adobo (chopped medium)
2 teaspoons sugar
1/4 cup cilantro, minced
2 tablespoons fresh lime juice
15 ounces kidney beans (drained and rinsed)

Steps:

  • Cook bacon in 12 inch skillet over medium heat until crisp, about 8 minutes. Add to slow cooker, reserving the fat.
  • Dry the beef with paper towels, season with salt and peper. Add 2 teaspoons of bacon fat to the skillet and heat over medium-high heat until just smoking. Brown half of beef, about 10 minutes, and add to slow cooker. Return skillet to medium-high heat,repeat with 2 teaspoons of bacon fat, and remaining beef.
  • Add remaining 2 teaspoons of bacon fat (use vegetable oil if not enough reserved) return to medium heat until shimmering. Add the onion, jalapenos, chili powder, cumin, and 1/4 teaspoon of salt. Cook until onion is softened, about 5 minutes. Stir in garlic and cook for 15 seconds. Stir in tomatoes, scraping up any browned bits. Bring to a simmer then pour into slow cooker.
  • Combine the tortillas and 1 cup of the chicken broth in a microwave safe bowl and microwave on high until mushy, about 2 minutes. Puree the mixture in a food processor or blender until smooth, about 1 minute. Stir into the slow cooker. Add the remaining 4 cups of broth, chipotles, and sugar to the slow cooker.
  • Cover and cook on either low (9-10 hours) or high (6-7 hours) until the meat is tender . Stir in beans during last hour of cooking. Before serving stir in cilantro and lime juice, season with salt and pepper to taste.
  • To make in advance, prepare to the slow cooking point but refrigerate browned bacon and meat separately from the liquids and the pureed tortillas. When ready to cook combine in slow cooker and proceed.

2 yellow onions, diced
3 garlic cloves, minced
2 jalapenos, diced
14 1/2 ounces diced tomatoes, can
15 ounces tomato sauce, can
6 ounces tomato paste, can
7 ounces diced green chilies, can
2 tablespoons chili powder
2 tablespoons cumin
1 tablespoon cajun seasoning (see Cajun Seasoning Mix by Mirj2338)
1 teaspoon unsweetened cocoa powder (trust me you won't be sorry)
1 teaspoon salt
1/2 teaspoon smoked paprika (standard paprika can be substituted)
1 cup water

Steps:

  • In a medium skillet brown the meat in olive oil, add salt and pepper to taste, move the browned meat to the crock pot. .
  • Brown the diced onion and minced garlic in the same pan and add to the crock pot.
  • Stir in the diced jalapenos, diced tomatoes, tomato sauce, tomato paste, diced green chilies, cumin, chili powder, cajun seasoning, unsweetened cocoa powder, salt, smoked paprika, and water.
  • Cook 4 hours on high or 7-8 hours on low -- until the meat is very tender.
  • For more spice-heat use additional jalapenos or substitute a spicier chili. Since it's chili I assume you don't want less spice-heat so no instructions needed :).
  • Toppings: grated cheese, sour cream, green onions. Don't be afraid to add your favorite hot sauce if you want even more spice-heat. If you really like heat try my personal favorite - Melinda's Naga Jolokia, but be careful :).
  • Eat with: corn bread, flour tortillas, good bread, your favorite beer.
