Steps:
- Mix first 6 ingredients well & set aside. Mix flour & water until it is pasty but not dry. Put about 1/3 cup chichen mix into each tortilla roll tightly, Put paste on the bottom flap of tortilla and place flap side down for about 10 min so it will stay sealed. I like to cut them in half & fry at 350 until golden brown.
- These are good with salsa or sweet & sour sauce.

CRISPY BAKED BLACK BEAN BURRITOS
Kids love these! Make extras because the burritos can be frozen prior to baking. Just defrost them and then bake according to the directions.

Steps:
- Preheat oven to 400. Combine black and refried beans in a saucepan, and add the chili powder, cumin and garlic. Simmer for 5 minutes. Mash the bean mixture into a thick puree (I use a potato masher right in the pan).
- On a plate, lay a tortilla flat and place 2 tablespoons of the bean mixture in the center of the tortilla. Top with some scallions, tomatoes and cheese. Roll up into a tube shape and place into a 9x13-inch baking pan, seam side down. Repeat until you've used all the tortillas and/or bean mixture.
- Bake the burritos until they are browned, about 15 minutes. Top with salsa and/or sour cream as desired.
ALL-IN BAKED BURRITOS
These burritos are so good and easy to make. I adapted this recipe from one posted in Quick Cooking magazine.

Steps:
- Brown ground beef and onion; add taco seasoning mix and water; cook as directed on package.
- In a bowl, combine the beans, salsa, rice and 1 cup cheese.
- Spoon about 1/3 cup off-center on each tortilla.
- Fold the sides and ends over filling and roll-up.
- Arrange burritos in a greased 13X9 baking dish.
- Sprinkle with the remaining cheese.
- Cover and bake at 375 degrees for 20-25 minutes or until heated through.

Steps:
- Preheat oven to 350°.
- Brown hamburger, onion, jalapeño and seasoning.
- Add beans and simmer for 15-20 minutes uncovered.
- Pour off any juice.
- To assemble:.
- Place 2 hefty spoonfuls on one end of a tortilla.
- Cover the mixture with cheese - as much as you want.
- Roll up burrito style.
- Place on a cookie sheet, seam down.
- Make sure the burritos don't touch.
- Place the burritos in the oven and bake for 20 minutes, or until the tortillas are light brown and the cheese is bubbly.
- Serve with your favorite salsa.
- These are good hot or cold!
CRISPY BASKET BURRITOS (BAKED TORTILLA BOWLS)
These tortilla bowls are baked, not fried. They're crispy and not as greasy as the deep-fried ones. Just be careful not to burn them trying to get the inside bottom crispy.

- Preheat oven to 375 degrees F (190 degrees C).
- Brush both sides of tortilla with oil.
- Invert ramekin on a work surface; center tortilla on the bottom of the ramekin. Gently shape the tortilla down around the sides. Place a double layer of aluminum foil over the tortilla and press to form the bowl around the ramekin. Place right side up on a baking sheet and leave about 1/2 inch of the edge of the tortilla above the foil so it gets browned and crispy when you bake it. Repeat with the second tortilla.
- Place baking sheet in preheated oven for 5 minutes. Remove sheet from oven and use tongs to carefully remove the ramekins from inside the shells. Transfer sheet back to the oven. Bake shells until lightly browned, about 5 minutes. Remove baking sheet from oven.
- Carefully remove foil from around the shells; reserve the foil. Flatten foil sheets and invert shells on them. Bring foil up just around the bottom of the shells to protect the top edge.
- Transfer sheet back to the oven. Bake until browned and crispy, 8 to 10 minutes. Remove sheet from oven and invert the shells once again so they are right side up. Place on foil and transfer sheet back to oven for the final crisping, 3 to 5 minutes. Watch them carefully so they don't burn.
- Remove sheet from oven; transfer basket burritos to a rack to cool completely.

CRISPY BAKED CHICKEN AND CHEESE BURRITO
I usually get two meals out of this recipe. I make half for dinner that night and then freeze half for another night - a big time saver! These burritos are loved by everyone in the family and so easy to throw in the oven on those "what's for dinner" kind of nights.

- 1. Pat dry chicken breasts, cover both sides with taco seasoning and put in your slow cooker. Top with can of diced tomatoes and chilies. Cook for 4 hours on low.
- 2. Drain broth, leave about 2 tablespoons in crockpot. (I put the broth in a mason jar and save in my fridge for other recipes such as my tortilla soup recipe.) Shred chicken, using two forks. Mix in cream cheese and salsa.
- 3. Preheat oven to 400.
- 4. Put about 3 tablespoons chicken mixture in the center of one 8-inch tortilla, top with 2-3 tablespoons cheese, fold in ends and roll tightly. Place seem side down on a baking sheet. Repeat for remaining 15 tortillas.
- 5. Spray burritos with cooking spray. Bake for 15 minutes, longer for crispier burritos.
- 6. Freezer Directions: After burritos are rolled (do not bake) put burritos in a freezer safe container, seem side down. To bake when frozen, place burritos on a baking sheet, cover with foil (so the tops don't burn) and bake for 20 minutes. Remove foil and bake an additional 15. You can also thaw overnight in the fridge and then bake as in step 5.
