CREAMY LEEK SOUP

Creamy Leek Soup image

I usually pair leeks with potatoes to make a creamy puree, but this time I used basmati rice, and the results are comforting and delicious. You could add something creamy to this if you wanted to - yogurt or milk or creme fraiche. But I found it utterly satisfying with no further enrichment.

Provided by Martha Rose Shulman

Categories     soups and stews, appetizer, side dish

Time 50m

Yield 4 to 6 servings

Number Of Ingredients 10

1 tablespoon extra virgin olive oil
4 large leeks, white and light green parts only, cleaned and sliced
4 garlic cloves, minced
7 cups chicken stock, vegetable stock or water
1/2 cup basmati rice
1 bay leaf
Salt and freshly ground pepper
Pinch of cayenne (optional)
1/2 cup milk, plain yogurt or a combination of milk and creme fraiche
Chopped chives and/or croutons

Steps:

  • Heat the olive oil over medium heat in a large, heavy soup pot and add the leeks and a generous pinch of salt. Cook, stirring, until leeks are tender, about 5 minutes. Add the garlic and stir for about a minute, until the garlic smells fragrant. Add the stock or water, the rice, bay leaf and salt to taste. Bring to a boil, reduce the heat, cover and simmer 30 minutes. Taste and adjust salt. Remove the bay leaf and discard.
  • Puree the soup with an immersion blender or a food mill, or in batches in a blender, taking care to remove the lid or take out the center insert and to cover with a towel to avoid hot splashes. Return to the pot, heat through, and add pepper to taste and a pinch of cayenne if desired. Serve hot or cold. If you wish you can thin out with milk, plain yogurt or a combination of milk and creme fraiche. Garnish with chopped chives or croutons.

Yield Makes 6 (first course) servings with leftovers

Number Of Ingredients 15

8 medium leeks (3 pound), trimmed, leaving white and pale green parts only, and chopped
1 medium onion, chopped
1 large carrot, chopped
2 celery ribs, chopped
1 teaspoon salt
1/2 teaspoon black pepper
1 stick (1/2 cup) unsalted butter
1 small boiling potato (6 ounces)
1/2 cup dry white wine
3 cups chicken stock or reduced-sodium chicken broth (24 fluid ounces)
3 cups water
1 Turkish bay leaf or 1/2 California
1 1/2 cups fresh flat-leaf parsley leaves
1/4 cup all-purpose flour
1/2 cup chilled heavy cream

Steps:

  • Wash sliced leeks in a large bowl of cold water, agitating them, then lift out and drain well in a colander.
  • Cook leeks, onion, carrot, celery, salt, and pepper in 4 tablespoons butter in a 5- to 6-quart heavy pot over moderate heat, stirring occasionally, until softened, about 8 minutes. Peel potato and cut into 1/2-inch cubes, then add to onion mixture along with wine, stock, water, and bay leaf. Bring to a boil, then reduce heat and simmer, partially covered, until vegetables are tender, about 15 minutes.
  • Stir in parsley and simmer soup, uncovered, 5 minutes. Discard bay leaf and keep soup at a bare simmer.
  • Melt remaining 4 tablespoons butter in a 1-quart heavy saucepan over moderate heat, then add flour and cook roux, whisking, until golden, about 3 minutes. Remove from heat and add 2 cups simmering stock (from soup), whisking vigorously (mixture will be thick), then whisk mixture into remaining soup and return to a simmer, whisking.
  • Blend soup in 4 batches in a blender until smooth (use caution when blending hot liquids), about 1 minute per batch, transferring to a 3- to 4-quart saucepan. Reheat if necessary, then season with salt and pepper.
  • Beat cream in a bowl with an electric mixer at medium speed until it almost forms soft peaks. Serve soup topped with cream.

POTATO, BACON, HAM, & RAMP (WILD LEEK) SOUP

Potato, Bacon, Ham, & Ramp (Wild Leek) Soup image

Ramps grow from South Carolina to Canada, and in many areas they're considered a spring delicacy and even a reason for celebration. The flavor is a cross between a green onion or scallion and garlic. Dig these spring treasures now because their growing season is limited to a few short weeks. My husband and I are fortunate to...

6 c diced red or yukon gold potatoes (i don't peel them)
1 c diced ham
2 c diced onion
4 c water
4 tsp chicken bouillon granules or 4 cubes
1/2-1 tsp salt (depends on how salty the ham is)

2 c ramps (wild leeks), sliced or chopped (use both the green and white parts)
2 c milk (i used 2 %)
4 Tbsp flour
several pats of butter

Steps:

  • 1. Sautee the bacon with the onion until the onion is translucent or almost tender. Add the water, bouillon, potatoes, ham, salt, and pepper. Simmer until the potatoes are tender.

  • 3. Note: Regular cultivated leeks, found in most grocery stores, make an excellent substitute for wild leeks in this recipe but trim off and discard the tough part of the green tops if using them.

CREAM OF RAMPS (WILD LEEKS) SOUP

Cream of Ramps (Wild Leeks) Soup image

The flavor of ramps is similar to onions, particularly like scallions, but wilder. They can be used just like scallions. In Appalachia, they are so popular that festivals are dedicated to them. They've been a staple of Southern Appalachian cooking for generations. If ramps are unavailable, feel free to sub regular leeks or scallions.

POTATO AND WILD LEEK SOUP

Potato and Wild Leek Soup image

Leeks (some call them "ramps" ) grow wild here in the foothills of the Alleghenies. I adpated this from a recipe that I found online. The ingredient list below says "ramps" because Recipezaar kept changing it from "wild leeks" to "leek" which is a completely different vegetable.

Time 1h

Yield 8 serving(s)

Number Of Ingredients 8

3 lbs potatoes
1 tablespoon butter

  • Scrub and dice potatoes, skin and all.
  • Melt butter in a 5 quart pot, add diced potatoes and salt and saute till lightly golden.
  • Add water and bouillon cubes, simmer.
  • Wash and trim the leeks.
  • Using kitchen shears snip half of of the leeks into small pieces and add to the pot.

CREAM OF LEEK SOUP

Cream of Leek Soup image

This soup is super creamy in texture, but it contains no actual cream. The butter and flour mixture -- what's called a roux -- gives it body and silkiness.

Provided by Martha Stewart

Categories     Food & Cooking     Soups, Stews & Stocks     Soup Recipes

Time 1h

Number Of Ingredients 6

1/4 cup (1/2 stick) unsalted butter
10 sliced medium leeks (white and light-green parts only), rinsed thoroughly after slicing (about 8 cups)
1/4 cup all-purpose flour (spooned and leveled)
4 cups low-sodium chicken broth
1 tablespoon chopped fresh tarragon
Coarse salt and ground pepper

Steps:

  • In a medium pot, melt butter over medium. Add leeks and cook, stirring occasionally, until softened, 8 minutes.
  • Add flour and cook, stirring, until combined, 1 minute.
  • Whisking constantly, add broth and 1 cup water and bring to a boil over high. Reduce heat and simmer, whisking occasionally, 10 minutes. Add tarragon.
  • Transfer mixture to a large bowl. In batches, fill a blender halfway with mixture and puree until smooth; to allow heat to escape, remove cap from hole in lid, cover lid with a dish towel, and hold down firmly while blending. Return soup to pot as pureed.
  • Heat over medium until warmed through. Season with salt and pepper. Thin with broth or water, if desired.

  • Cut off the dark green leaves from your leeks. You can either throw these leaves away or keep them for later to make a broth. Chop the white part of the leeks into thin rings. The sliced leeks should weigh roughly 12 ounces (340g). Place the sliced leeks in a bowl of cold water. Rinse them thoroughly to remove any dirt. Drain the water from the bowl and set the leeks aside.
  • Heat the olive oil in a large pot and add the minced garlic, leeks, potatoes, rosemary, and thyme. Cook everything in the pot over medium heat for 5 to 7 minutes, until the garlic becomes fragrant and the leeks become slightly limp. Add the vegetable broth and water and bring to a boil. Once the soup is boiling, reduce the heat and simmer for 20 minutes until the leeks and potatoes are tender.
  • Puree the soup with an immersion blender, or in a blender in batches, until smooth. Add the milk and rice to the soup and bring to another boil. Reduce the heat and simmer, stirring often to prevent the rice from sticking to the bottom of the pot, for 20 to 30 minutes until the rice is tender.
