OATMEAL-FLAX CHOCOLATE CHIP COOKIES
Provided by Food Network Kitchen
Time 1h
Yield about 32 cookies
Number Of Ingredients 12
Steps:
- Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
- Whisk the flour, oats, flaxseed, baking soda, salt and cinnamon in a bowl.
- Beat the butter, granulated sugar and brown sugar in a large bowl with a mixer on medium-high speed until fluffy, about 4 minutes. Beat in the eggs one at a time, beating well after each addition. Beat in the vanilla. Reduce the mixer speed to low; add the flour mixture and beat until just combined, scraping down the bowl as needed. Stir in the chocolate chips.
- Drop heaping tablespoonfuls of dough onto the prepared baking sheets, about 2 inches apart. Bake until golden brown, 10 to 12 minutes. Let the cookies cool 3 minutes on the baking sheets, then transfer to racks to cool completely.
FLAX SEED COOKIES
These cookies come from my godmother. I made them a few times when I was a teen and living with my parents.

Steps:
- Mix everything together until you have a nice consistency. Add between 2 and 3 cups of flour. When the dough holds together, it means it's enough flour. Put by teaspoon on a baking sheet and bake at 350 F around 12-14 minutes until they are just a little bit golden. But don't cook them too much.

FLAXSEED BREAD
Provided by PetraScott
Number Of Ingredients 6
Steps:
- Preheat the oven to 360°F/180°C.
- Grind the flaxseeds into very fine flour. Ideally, sift the flaxseed flour to make sure there are no actual "seeds".
- In a large mixing bowl, mix together the flaxseed meal, baking powder, baking soda, and salt. Add the apple cider vinegar and water, and stir until the flaxseed meal becomes sticky and holds together in a lump, for about 30 seconds. Then use your hands to roughly form the dough into a loaf shape. (Don't over-knead the dough. Handle it as little as possible). The loaf should have a nice smooth surface.
- Place the loaf into a greased (or parchment paper-lined) loaf pan. The bread fits perfectly into a 1-pound loaf pan (8.5" x 4.5"). However, if you only have 1.5-pound loaf pan (10" x 5") - like I do - it will work just fine. (If you're working with the larger size loaf pan, form the loaf, place it into the loaf pan, but don't press it into the corners). You can also use a baking sheet lined with a piece of parchment paper. The bread holds its shape during baking really well, so the loaf pan is not necessary.
- Mist with water and sprinkle some seeds on top (I use a mix of flaxseeds, sesame seeds, and sunflower seeds). Gently press down on the seeds with your palm to make them stick better.
- Note: if you watched the video that goes with this recipe, I said that I let the bread rest, covered, for a few minutes. Well, if you're using the baking soda, you want to do the opposite. When you mix baking soda (base) with apple cider vinegar (acid), you get a chemical reaction. A product of this reaction is carbon dioxide, producing a lift in your baked goods. The reaction starts as soon as the base and the acid are mixed. So, get the bread in the oven immediately after you mix the two, before the reaction tapers off.
- Bake the bread for 60 minutes. The crust should be golden brown (if using golden flaxseeds).
- Remove the bread from the oven and let it cool inside the loaf pan for 10 minutes. Transfer the bread on a cooling rack, and let it cool completely before slicing.
- Store the flaxseed bread in an airtight container in the refrigerator for 7 days. For longer term storage, freeze in an airtight container for up to 3 months. I like to slice the bread prior to freezing, but you can freeze the whole loaf as well.

Steps:
- In a small bowl, whisk flaxseed and water. Let sit for about 10 minutes while you are getting other ingredients ready.
- Preheat oven to 350 degrees F, line large baking sheet with unbleached parchment paper and spray with cooking spray.
- In a large bowl, mash bananas. Add coconut oil, vanilla extract, cinnamon, baking soda and salt.
- Add flaxseed mixture and whisk really well.
- Add oats and oat flour; stir to combine. Add nuts and dried fruit; mix well. Dough will be very thick.
- Using large ice cream scoop, place batter on previously prepared sheet and flatten with the back of a scoop into large size cookies. Cookies do not spread. I had about 6 cookies per sheet. Bake in batches for 20 minutes or until nuts start to brown a bit.
- Remove from the oven and let cookies cool for a minute, then transfer onto a cooling rack to cool off completely. Enjoy for breakfast, snack or a healthy dessert!

FLAX SEED HONEY COOKIES
I came up with this recipe when I wanted my 17 month old daughter to start taking flax. They are simple tasting, chewy and fairly easy to make. I flatten them down twice during baking with a spatula; once after 5 minutes of baking and then about a minute before they come out of the oven. DO NOT USE FLAX OIL in this recipe or any baking recipe for that matter as it breaks down into a substance that is not safe for ingestion. Only use flax seeds for baking or flax meal. Prep time doesn't include chill time.

- Preheat the oven to 350º. In a large bowl, whisk together the flour, flax seed meal, baking soda, baking powder, and kosher salt. In a separate bowl, mix the butter, sugar, eggs, and vanilla, manually or with a hand mixer. Beat until the mixture is fluffy.
- Combine the two mixtures, stirring until the flour is fully incorporated, then add the oats, raisins, and flax seeds. Mix well, but don't over mix.
- Prepare a baking sheet with a non-stick baking mat or parchment paper. Scoop out heaping tablespoons of cookie dough, and gently form each into a ball, and place them 2 inches apart on the baking sheet. Sprinkle the top of each cookie with whole flax seeds. Bake for 11-14 minutes, uncovered, until the cookies turn golden brown (but are still moist in the middle). Rotate the baking sheet halfway through to ensure evenly baked cookies. Let the cookies cool on the baking sheet for 3 to 5 minutes before transferring to a wire rack or towel to cool. If using only one baking sheet, repeat until you’ve used all of the dough.

10 SUPER EASY FLAXSEED RECIPES TO TRY THIS WEEKEND
From tasteofhome.com
- Swirl into Smoothies. Flaxseeds are jam-packed with heart-healthy omega-3 fatty acids. Put a couple tablespoons of flaxseeds in your blender and pulse for 10 seconds to mill the seeds, or simply buy them ground.
- Add to Granola. Most Americans fall well below the recommended 25-35 grams of dietary fiber daily. Since 2 tablespoons of flaxseeds have 4 grams of dietary fiber, they can help you reach that goal.
- Replace Oil in Baked Goods. Studies show that adding 3 tablespoons of flaxseeds to your diet daily can slash blood cholesterol. Work toward that goal by giving your baking a boost: Substitute ground flaxseeds for some of the oil in a ratio of 3 parts flaxseed to 1 part oil.
- Swap Out Eggs. You don’t have to be allergic to eggs or vegan to try this simple swap. Flaxseeds create a viscous liquid that mimics an egg, so if you’re out of eggs, mix together 1 tablespoon of ground flaxseeds and 3 tablespoons of water; let the mixture rest while you gather your recipe ingredients.
- Make a Better Breading. Who doesn’t love crispy, crunchy breaded chicken nuggets? Create a better breading by swapping 2 tablespoons of flaxseeds, whole or ground, for 2 tablespoons of flour for every cup of flour in recipes like these zucchini fries and coconut shrimp.
- Opt for a Meaty Substitute. Whether you’re trying to save your pennies or joining the Meatless Monday movement, adding flaxseeds to a vegetarian burger recipe is a great way to create a meaty flavor (umami).
- Pour on Nutrition-Packed Salad Dressings. Flaxseeds provide a stout amount of minerals such as phosphorous, magnesium, manganese, zinc, selenium, calcium, copper and iron.
- Make a Healthier Spread. Flaxseeds, much like sunflower seeds, have enough healthy fats to create a creamy, buttery spread. The taste of flaxseed butter on its own may not be as appealing to you just yet, so for a simple start, add ground flaxseeds to your favorite peanut butter or other nut spread.
- Boost Soups. Swap out part of the butter or cream for 2 tablespoons of ground flaxseeds in a creamy soup, creating a velvety and nutty finish in soups.
- Sprinkle on Top. Looking for the easiest way to add in flaxseeds every day? Simply sprinkle ground flaxseeds on any kind of oatmeal or yogurt for a healthy start to your morning.
