1 lb linguine pasta (or fettuccine (spaghetti, etc))
1/2 - 1 1/2 Tbsp red pepper flakes (amount depends on how spicy you want it)
2 Tbsp vegetable oil
1/3 - 1/2 cup toasted sesame oil
1 1/2 tsp chili paste
6 Tbsp soy sauce
6 Tbsp honey
Scallions (carrots, peanuts, cilantro, Sriracha, and sesame seeds to garnish)

Steps:

  • Chop garnishes and set aside.
  • Boil pasta, drain.
  • While pasta is boiling, heat oils in a large skillet with red pepper flakes.
  • Once oil is hot, strain pepper flakes, reserving the oil in a bowl. Add reserved oil back into the skillet and add the chili paste. Whisk in soy sauce and honey.
  • Toss pasta in the skillet with the sauce.
  • Can be served hot, room temperature or cold. Top with garnishes and enjoy!

The cook was certain that eating this cold dish during the cold northern winter would be bad for my stomach, but it never was! This makes a wonderfully refreshing lunch during the hot summertime.

4 ounces spaghetti, or as needed
2 cups very cold ice water
½ cup white vinegar
2 tablespoons soy sauce
2 tablespoons white sugar
2 teaspoons sambal oelek (chile paste)
½ teaspoon salt
1 cucumber, cut into matchsticks
½ cup kimchi
¼ cup roasted peanuts
1 hard-cooked egg, halved
2 slices deli ham, cut into bite-sized pieces

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
  • Meanwhile, combine ice water, vinegar, soy sauce, sugar, and sambal oelek in a bowl. Refrigerate sauce to chill until spaghetti is cooked.
  • Rinse cooked spaghetti in cold water until totally cooled off; drain well.
  • Divide sauce between 2 chilled servings bowls. Add equal amounts of spaghetti, cucumber, kimchi, peanuts, egg, and ham to each bowl. Serve immediately.

This is an easy crowd pleaser. I have been making it for years. This is my first attempt to write it down (I may come back and make some edits to the "dressing". I have always just kind of mixed things together. I have found that using some authentic ingredients does make it stand out. Fish Sauce and sriracha hot sauce are availabe in the Asian section of most supermarket today. White pepper is hit or miss. Spice stores and many ethnic grocery stores carry it. The French use it in white sauces so you get the pepper flavor, but you do not the specs. This is not an exacting recipe. If you want is spicier add more hot sauce. If not, use less. More tart add vinegar, etc. Add grilled chicken or cooked shrimp and make it a meal. Prep time is about 30 minutes. It does need to chill 2 hours before serving.

1 lb spaghetti or 1 lb linguine
1/2 cup smooth peanut butter
1/2 cup peanut oil (or canola or lite olive)
1/3 cup low sodium soy sauce
1/3 cup rice wine vinegar
2 tablespoons fish sauce (substitute with 1/4 cup low sodium soy sauce)
2 tablespoons Asian chili sauce, recommend sriracha
2 tablespoons sesame oil
1 tablespoon sugar
1 teaspoon ground pepper (preferably white)
1/2 teaspoon garlic powder
1 cucumber, seeded and chopped
1 red bell pepper, seeded and chopped
1 bunch green onion, chopped (set aside half of chopped green tops)
vegetables (snow peas - 1 cup, chopped Napa cabbage - 1 cup, bean sprouts - 1 cup) (optional)
2 tablespoons sesame seeds
1/4 cup chopped cilantro (optional)

Steps:

  • Cook noodles al dente (do not overcook - mushy noodles won't work).
  • Strain and rinse under cold water until cooled.
  • Mix or wisk together all "dressing" ingredients (peanut butter through garlic power)until blended.
  • In large bowl stir together noodles, 2/3 sauce (reserve 1/3 for later), and vegetables (reserve 1/2 chopped greens from green onion).
  • Chill minimum 2 hours.
  • Transfer to a bowl or platter, if you you want.
  • Before serving pour reserved "dressing" over noodles.
  • Sprinkle sesame seeds and reserved green onions (and cilantro if used).

4 ounces snow pea pods, fresh, trimmed, cut diagonally into thirds
1/2 medium red bell pepper, cut into thin lengthwise strips
1/2 lb medium shrimp, cooked, deveined, peeled
1/2 cup peanut sauce, Thai (I used the dipping sauce from Thai Burgers)

Steps:

  • Bring a large pot of water to a rolling bowl
  • Add the spaghetti and cook as directed on package; rinse with cold water to cool.
  • While the spaghetti is cooking, combine the pea pods, bell pepper, shrimp and peanut sauce in a large bowl.
  • Add the cooked spaghetti; toss gently to mix and serve.

My husband asked me to recreate a spicy Thai noodle dish he had while traveling (that I had never tasted before)...after a little trial and error I came up with this and we love it! You can use just about any protein you like and if you want it really spicy just add more thai chilis or red pepper. If you can't find thai basil you can use other basil varieties like spicy globe or cinnamon or just leave it out, but it does add a nice flavor.

8 ounces rice noodles
1 tablespoon coconut oil
2 Thai chiles, minced (or 1/2 teaspoon red pepper flakes)
1 carrot, thinly sliced
1 green bell pepper, thinly sliced
4 green onions, thinly sliced
9 ounces shrimp, peeled and deveined (or ground turkey, chicken, or pork)
4 garlic cloves, minced
1 1/2 tablespoons fish sauce
3 tablespoons soy sauce
1 1/2 tablespoons palm sugar
1/4 cup Thai basil

Steps:

  • Bring a medium pot of water to a boil. Remove from heat and add rice noodles. Soak for 10 minutes. Stir a couple times to keep from sticking. After 10 minutes, drain and rinse with cold water.
  • In a large non-stick pan, heat oil and thai chilis over medium to medium-high heat. (If using ground turkey, chicken, or pork, add to pan and brown with oil and chilis before adding vegetables.).
  • Add vegetables, shrimp, and garlic and cook for 2 minutes.
  • Add softened noodles, fish sauce, soy sauce, and sugar and cook until noodles are tender and warmed through (about 1-2 minutes more). Add a tablespoon (or more) of water if it looks like you need more sauce.
  • Stir in basil leaves and serve immediately.

16 ounces rice noodles or 16 ounces rice vermicelli
2 cups mung bean sprouts
1 cup slivered carrot
8 scallions, cut into 1 inch pieces
1 yellow bell pepper, seeded and chopped
1 red bell pepper, seeded and chopped
1 stalk lemongrass, white part only,sliced thin
10 Thai chiles, stemmed and split (optional)
cooking oil
1/4 cup chopped peanuts
2 tablespoons chopped cilantro (coriander)
2/3 cup creamy peanut butter
4 tablespoons brown sugar
6 tablespoons soy sauce
4 tablespoons fish sauce
1/4 teaspoon ground cayenne pepper
1 teaspoon grated fresh ginger

Steps:

  • Cook noodles in boiling water until tender; drain.
  • Mix ingredients for sauce in a bowl with a whisk until smooth; set aside.
  • Heat 2 tablespoons cooking oil in a wok or large skillet over high heat (add more oil as necessary during cooking).
  • Add lemongrass and Thai chiles and cook until fragrant.
  • Add carrot, scallions, and bell peppers and cook until carrot starts to become crisp-tender.
  • Add bean sprouts and cook 1-2 minutes more.
  • Add drained noodles to the pan and pour sauce over noodles.
  • Using two utensils, lift vegetables from bottom to integrate throughout noodles and mix well.
  • Garnish with chopped cilantro and chopped peanuts and serve with hot chili sauce (sriracha), if desired.
  • Cooking tip: you may cut noodles into smaller pieces after cooking with kitchen shears to make them easier to work with.

This is a recipe that I've tweeked and adjusted to yield a warm noodle side-dish. It can also stand alone as a main dish. It's quick and easy and full of flavor! I serve it with Chicken Satay. Leftovers are yummy hot or cold.

12 ounces linguine
4 tablespoons sesame oil
1/2 cup green onion, chopped
1 cup finely shredded carrot
2 cups frozen stir fry vegetables
3 tablespoons minced fresh garlic
1/2 tablespoon ground ginger or 1 tablespoon fresh ginger, minced
1/4 cup honey
1/4 cup creamy peanut butter
1/4 cup soy sauce
3 tablespoons rice vinegar
1/2 tablespoon chili-garlic sauce

Steps:

  • Cook pasta in a large pot of salted water according to package directions.
  • Drain and return to pot.
  • Add 2 TBSP sesame oil and toss to coat.
  • Set aside.
  • Heat remaining 2 TBSP sesame oil in heavy pot over medium-high heat.
  • Add green onions, carrots, stir-fry veggies, garlic and ginger.
  • Saute until vegetables soften, about 4 minutes.
  • Add honey, peanut butter, soy sauce, vinegar and chili-garlic sauce and mix well.
  • Simmer sauce 2 minutes.
  • Pour sauce over pasta and toss well.
  • Transfer to platter and serve warm.
  • Garnish with additional green onions, if desired.
  • Yields 8 side dish servings or 4 main dish servings.
  • **Chili-Garlicsauce can be increased or decreased depending on how spicy you like your dish.
  • As written, this recipe has some heat, but is still edible for my toddler son.

This is my favorite cold noodle salad! I loved it so much, we made mass quantities for my wedding. There are some similar recipes out there, but after testing over and over, here is the combination that I think works best. I kept the recipe vegetarian, but I usually add cooked bay shrimp. You can add any kind of meat or veggies!! You can also omit or add more of the cayenne depending on your "spicy tolerance"! You can certainly substitute spaghetti for the Soba noodles, but Soba noodles really work best.

1 lb soba noodles
3 tablespoons sesame oil (the oil is strong, don't add more)
4 tablespoons canola oil
6 tablespoons honey
6 tablespoons soy sauce
4 tablespoons balsamic vinegar
3 tablespoons rice wine vinegar
1 1/2 teaspoons cayenne
1 tablespoon grated fresh ginger
5 red bell peppers, sliced thin and long
4 cups peas (frozen works fine)
16 green onions
1 1/2 cups honey roasted peanuts (leave whole)
1 1/2 cups cilantro, chopped coarse
2 limes, cut in wedges for garnish

Steps:

  • Cook pasta in a large pot of salted water. Check cooking directions, soba noodles can cook literally in minutes. Drain pasta well. Let pasta dry a bit or water on the pasta will dilute the dressing.
  • Whisk sesame oil, canola oil, honey, soy sauce, vinegars, ginger and cayenne in a small bowl to blend.
  • Season with salt.
  • Heat a few tablespoons of dressing in saute pan over medium high heat (be careful, dressing can burn easily).
  • Add peppers to pan for about 2 - 3 minutes to ligtly soften, they should still be crunchy.
  • Add all other ingredients to pasta along with remaining dressing. Mix salad well, you will probably need to use your hands.
  • Garnish with lime wedges.
  • Serve right away or chill as long as overnight.
  • Add peas shortly before serving. If you add them too early they will turn a "lovely" shade of grey.
