SEAFOOD CHOWDER

Seafood Chowder image

Are you looking for a quick but delicious seafood soup? Can't wait to make that stock and take all that extra time? Well.. this is the soup for you. It's thick and creamy and comforting. I know many of you out there frown upon the use of condensed soups. But try this.. it tastes like a restaurant quality soup without all the fuss. Use whatever seafood you like. Just use at least 1 1/2 pounds of it. You can even use chopped cooked chicken if you don't like seafood. Want a curry flavor? Just add some curry powder while cooking the onions and celery. You can turn this into a creamy curried vegetable soup by omitting the seafood and using more onions and celery with the addition of carrots and whatever other vegetables are your favorites. Leave out the curry powder for a satisfying creamy vegetable soup. Just try it.. you'll like it.

Time 30m

Yield 6 serving(s)

Number Of Ingredients 11

1/2 cup butter
1 stalk celery, minced
1 small onion, minced
1/4 teaspoon cayenne pepper
1/4 teaspoon dried thyme
1/4 teaspoon dried marjoram
3 tablespoons flour (I use buttermilk baking mix) or 3 tablespoons baking mix (I use buttermilk baking mix)
3 1/2 cups milk (or more if you like a thinner soup More milk can be added as needed after soup is completed.)
2 (10 1/2 ounce) cans condensed cream of potato soup (undiluted)
1 1/2 lbs clams (whatever you want your soup to be I like to use shrimp, scallops and whole baby clams.) or 1 1/2 lbs crab (whatever you want your soup to be I like to use shrimp, scallops and whole baby clams.)
chopped fresh parsley (to garnish)

Steps:

  • Melt butter in 3-quart saucepan over low heat.
  • Saute' celery and onion until tender.
  • Add cayenne pepper, thyme, marjoram and flour or baking mix and stir until smooth.
  • Add milk and condensed soup and stir until piping hot.
  • Meanwhile clean and chop seafood as you like.
  • I usually halve the shrimp and then cut one half in half and leave the other half whole.
  • If using extra large scallops I usually quarter them.
  • When soup is piping hot add seafood and stir on medium heat until seafood is cooked through.
  • Serve in bowls topped with some fresh parsley along with some crusty bread or oyster crackers and a nice salad.

CORN CHOWDER

Corn chowder image

To make this super-comforting chowder even more of a meal, try adding a bit of fish or seafood

Provided by Jamie Oliver

Categories     Healthy meals     Vegetables     Gorgeous Winter Soups     Bonfire night recipes     American     Light meals

Time 25m

Yield 4

Number Of Ingredients 10

1 stalk celery
1 medium onion
olive oil
½ teaspoon dried thyme
1 tablespoon plain flour
840 ml semi-skimmed milk
1 medium potato, peeled and cut into little cubes
3 spring onions
175 g frozen corn
¼ cup fresh chives, chopped, or parsley

Steps:

  • Pull the leaves from the celery stalks and set them aside. Chop your celery and onion. Heat the olive oil in a medium saucepan over a medium heat. Add the celery (not the leaves), onion, and thyme. Stir until the vegetables start to brown.
  • Sprinkle the flour over the veggies and stir for a few more minutes. Pour in the milk, add the potato and bring to a boil, stirring the whole time so the soup doesn't stick to the pot. Cook until the potatoes are tender, but not mushy - this will take around 10 minutes.
  • Meanwhile, chop the celery leaves, trim the ends off the spring onions and slice them thinly. When the potatoes are tender, stir in the corn, spring onion and celery leaves. Bring the soup back to the boil, then serve.
  • This is delicious with a crusty brown roll or a Parmesan crisp.

Add sherry; cook, stirring occasionally, until alcohol has cooked off, about 1 minute. Add ½ cup clam juice; bring to a simmer. Cook, stirring occasionally, until vegetables are very soft, about 5 minutes. Add stock and remaining 2 cups clam juice and bring to a boil. Add potatoes and simmer, uncovered, adjusting heat as needed, until just tender, about 5 minutes. • Smoky Ham-and-Corn Chowder. Simmering the ham rind and corn cobs in water makes a quick, tasty stock that gives the chowder a deep flavor.
  • Corn Chowder with Spicy Red Pepper Cream. A dollop of spicy red pepper cream added to chowder at serving time brightens the taste of the corn without overwhelming the fresh flavor.
  • Southern–Style Corn Chowder. Chef Emeril Lagasse fashioned this version after traditional Southern–style corn soup, because it pairs corn with one of its very best friends—bacon.
  • Corn-and-Cod Chowder. With its all-American ingredients, this New England–style chowder is a comfort-food classic.
  • Salmon-and-Corn Chowder with Lima Beans. Where most chowders have milk as their base, this one uses chicken stock and pureed corn, with a little half-and-half stirred in just before serving to make it nice and creamy.
  • Corn and Shrimp Chowder with Mashed Potatoes. Instead of the traditional cubes of potato throughout the chowder, try adding a mound of creamy mashed potatoes in the center of the bowl.
