These bars are the ultimate treat. With chocolate and cherries you can't go wrong (in my opinion :).

3/4 cup butter, softened
2 large eggs
1/2 cup granulated sugar
1/4 cup firmly packed brown sugar
1 1/2 teaspoons vanilla
1 teaspoon almond extract
2 cups flour
1 teaspoon baking soda
1/2 teaspoon cinnamon
1 (21 ounce) can cherry pie filling
1 1/2 cups milk chocolate chips

Steps:

  • Preheat oven to 350°.
  • Grease a 10 x 15 pan.
  • Combine butter, eggs, sugars and extracts in a large bowl and beat at medium until well blended.
  • Combine flour, soda and cinnamon and mix into creamed mixture until just blended.
  • Stir in pie filling and chocolate chips.
  • Spread in pan.
  • Bake for 25 minutes or until lightly browned.
  • Cool completely in pan on wire rack.
  • Sprinkle with confectioner's sugar or drizzle with melted chocolate, if desired.
  • Cut into 2 1/2 x 2 inch bars.

2/3 cup white sugar
3 tablespoons flour
3 tablespoons cornstarch
2 1/2 cups milk
3 large egg yolks
1 large egg
3 tablespoons butter
1 teaspoon pure vanilla extract
1 teaspoon almond extract
1/2 cup semi-sweet chocolate chips
1 tablespoon water
1 pre-baked 9 inch pie shell
1 (17 ounce) can pitted sweet cherries, drained and patted dry
1/2 cup heavy cream
1 cup semisweet chocolate morsel
1 tablespoon butter, at room temp

Steps:

  • In a heavy saucepan mix together sugar, flour, and cornstarch.
  • Stir in some of the milk until a heavy paste forms.
  • Gradually stir in remaining milk.
  • Cook over medium heat, stirring until nicely thickened, aroound 8-10 minutes.
  • Whisk together egg yolks and egg until slightly frothy.
  • Stir in 1 cup of the thickened milk mixture whisking well.
  • Pour into remaining milk mixture in pan.
  • Cook over medium heat, stirring constantly until bubbles JUST appear.
  • Remove from heat.
  • Stir in butter, vanilla and almond extracts, continuing to stir until the butter is melted and well incorporated.
  • Press a piece of plastic wrap on the surface and cool completly.
  • In the top of a double boiler over simmering water melt the chocolate morsels with water.
  • Spread evenly over the bottom of the pre-baked crust.
  • Arrange cherries over chocolate layer.
  • Pour filling slowly around the cherries and over crust.
  • In a medium saucepan heat cream until small bubbles appear around edge of pan.
  • Remove from heat.
  • Stir in chocolate morsels until well combined and glossy.
  • Stir in butter.
  • Pour into a bowl, cool until slightly thickened.
  • Pour frosting over pie smothing the top evenly.
  • Chill.

The cherries are soaked overnight in a few tablespoons of liquor. I used Jack Daniels because it's what I had on hand, but any liquor will work-try brandy or even Grand Marnier.

To soak the cherries:
24 maraschino cherries with stems
3 tablespoons bourbon or liquor of choice
For the Fondant:
1 cup granulated sugar
1/3 cup water
4 tablespoons liquid from maraschino cherry jar
1 tablespoon light corn syrup
To Dip the Cherries:
8 ounces bittersweet chocolate, finely chopped

Steps:

  • Place cherries in small bowl with liquor. Cover and rest overnight, stirring occasionally.
  • Place cherries on paper towel-lined pan to dry, standing each cherry upright. In small saucepan, combine sugar, water, cherry juice, and light corn syrup. Cook over medium heat, stirring to dissolve sugar. When mixture comes to boil, stop stirring and continue to cook until mixture registers 240°F (116°C) on instant-read thermometer, occasionally brushing edge of pan with water to dissolve crystals.
  • Pour sugar syrup onto large marble slab or rimmed baking sheet set over a towel, and let cool until just barely warm, about 25 minutes. Using a bench scraper, scrape syrup up and over itself. Continue this motion while moving mass of thickened syrup back and forth across pan. Syrup will begin to thicken as it cools. Use an offset spatula to scrape syrup from bench scraper. Continue working fondant until mixture begins to turn from translucent to opaque, about 15 minutes.
  • Continue to work mixture back and forth across marble until it begins to thicken considerably, to the point of becoming a thick paste, about 15 minutes more. Transfer fondant to a small saucepan and set over low heat, stirring until just melted. Remove from heat.
  • Line baking sheet with parchment paper and set aside. Holding cherry by the stem, dip in fondant to coat, and set on prepared baking sheet. Remelt fondant if it thickens before cherries are finished dipping. Let fondant dry onto cherries, about 10 minutes.
  • Place chocolate in heatproof bowl set over pan of barely simmering water. Stirring gently, heat until about half of chocolate is melted. Remove bowl from heat and continue to stir chocolate until completely melted.
  • One by one, dip fondant-covered cherries in chocolate, covering completely and then allowing excess chocolate to drip from cherry. Set each cherry back on parchment-lined baking sheet. Chill at least 48 hours before serving.

3/4 cup flour
1/3 cup finely chopped almonds
2 1/2 tablespoons sugar
1/3 cup butter
1 tablespoon milk
1/4 teaspoon almond extract
Chocolate Sauce
5 tablespoons cocoa (scant)
2 tablespoons oil
1/2 cup warm water
2/3 cup sugar
1/4 cup butter
1 1/2 teaspoon vanilla extract
Batter
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 1/4 cup powdered sugar
1/4 cup butter, softened
1/2 cup milk
1 egg
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
Extras
2/3 cup chopped medium almonds
1/2 can (20 ounce size) cherry pie filling
whipped cream

Steps:

  • For Crust: Combine until crumbly flour, finely chopped almonds, sugar, butter, milk and almond extract. Press into bottom and sides of a lightly greased deep 10-inch glass pie dish. Preheat oven to 450 degrees F and bake for about 5 minutes or until light golden. Cool. For Chocolate Sauce: Combine in a small saucepan cocoa, oil and warm water. Heat until mixture is smooth. Add sugar. Bring to a boil, stirring constantly. Remove from heat and add 1/4 cup butter and vanilla. Stir until butter melts. Set aside. For Batter: In a small mixer bowl of electric mixer, combine flour, sifted with baking powder, salt, powdered sugar, butter, milk, egg, vanilla, and almond extract. Beat for 2 minutes or until smooth. To Assemble: Have ready chopped medium almonds and half a can of cherry pie filling. Spoon cherry pie filling into bottom of crust. Carefully spoon all of the batter to cover cherries. Stir chocolate sauce and pour over batter. Lastly sprinkle with almonds. Preheat oven to 325 degrees F and bake pie for 45-50 minutes or tests done. Cool pie, then chill. Serve with whipped cream.

If you really want to impress your guests or family with a dessert then this is it! This is a never-fail pie that I have made on many occasions, it's absolutely fantastic! --- plan ahead the pie needs to chill for a minimum of 8 hours before serving --- it's also wonderful even without the chocolate-dipped cherries, the first time I made it I did use the cherries, the second time I made this I just drizzled the melted chocolate on the cold pie, then dolluped whipped cream around the edge of the pie :)

1 (6 ounce) ready-made chocolate crumb crusts
1 (12 ounce) package semi-sweet chocolate chips
1/2 cup whipping cream (unwhipped)
1/4 cup butter (cut into small pieces)
1 (21 ounce) can cherry pie filling
1 (8 ounce) package cream cheese, softened
1/3 cup powdered sugar
1 large egg
1/4 teaspoon almond extract
16 maraschino cherries (with stems attached) (optional)
2 cups whipped cream (or use Cool Whip topping, thawed)

Steps:

  • Microwave the semi-sweet baking chips with 1/2 cup whipping cream until the chocolate begins to melt (about 1 minute) remove and whisk in 1/4 cup butter until smooth; let cool, whisking occasionally for about 10 minutes, or until the mixture reaches a spreading consistency.
  • Spoon half of the mixture over the ready-made pie crust.
  • Cover and chill remaining chocolate mixture.
  • Spoon the cherry pie filling evenly over the chocolate mixture in the pie crust; place the crust on a baking sheet.
  • In a bowl beat softened cream cheese with powdered sugar, egg and almond extract at medium speed using an electric mixer until smooth.
  • Pour the cream cheese mixture evenly over the cherry filling (the pie will be very full but shouldn't overflow when baked, but place the pie on a baking sheet anyway!).
  • Set oven to 350 degrees.
  • Bake for 25-30 minutes or until the center is set; remove from oven and cool to about room temperature.
  • Refrigerate for a minimum of 8 hours.
  • This next step with the cherries is optional, you can just drizzle the top of the cooled pie with melted chocolate and then dollop with whipped cream.
  • Place 16 maraschino cherries with the stems on paper towels; pat them dry.
  • Microwave the reserved chocolate mixture at MEDIUM for about 1 minute or until spreading consistency, stir until smooth.
  • Dip the cherries into the warmed chocolate mixture, then place on a baking sheet.
  • Chill the cherries for about 20 minutes (or longer).
  • Spread any remaining chocolate over the pie, then spoon 8 dollops of whipped cream (or Cool Whip topping) around the outer edges of the pie.
  • Place 2 chocolate-covered cherries on top of each dollop.
  • Delicious!

14 ounces sweetened condensed milk (not evaporated milk!)
1 cup semi-sweet chocolate chips
1/2 teaspoon salt
21 ounces cherry pie filling
1/4 teaspoon almond extract
1 (9 inch) graham cracker pie crust
chocolate whipped cream (to garnish)
maraschino cherry (to garnish)

Steps:

  • In a saucepan, combine milk, chocolate chips & salt.
  • Cook and stir over very low heat just until chocolate melts. (can also use microwave to do this easily & quickly).
  • Combine chocolate mixture with pie filling & extract.
  • Pour into pie crust & chill 2-3 hours or until firm.
  • Garnish with chocolate whipped cream (Cool Whip makes a chocolate flavor) & cherries.

3 c marshmallows, mini
1/2 c milk
1/2 c maraschino cherries,drained and chopped
1/4 c cherry liqueur
1 c whipping cream, whipped
1 9 inch baked chocolate cookie crumb crust

Steps:

  • 1. Combine marshmallows and milk in a 2 1/2 qt. glass mixing bowl. Microwave, uncovered, at power level high for 4 to 5 min. or until marshmallows melt and puff. Stir until smooth. Add chopped cherries and liqueur, blending throughly. Let cool to room temp. about 30 min. Fold whipped cream into marshmallow mixture and turn filling into prepared pie crust. Refrigerate for at least 4 hours. Garnish, if you wish, with additional whipped cream and maraschino cherry halves.

1 single pie crust/ baked
2 lb fresh strawberries
8 oz 6 or 8 oz fresh raspberries
1 pkg private selection cherry cordial hot coco mix
1 2/3 c water divided
1/2 c sugar
3 Tbsp corn starch

Steps:

  • 1. SEPARATE OUT 2 CUPS OF THE WORSE LOOKING STRAWBERRIES AND 1/3 OF THE RASPBERRIES. Crush the berries in a small sauce pan, add 1 cup of the water and the sugar.
  • 2. bring the berries to a slow boil for about 10 minutes, crush more with a masher.
  • 3. mix the corn starch in with the remaining 2/3C. water. When the berries have boiled for 10 minutes add the corn starch/water mixture while stirring.
  • 4. continue to stir constantly until the mixture thickens and turns clear (not cloudy white from the corn starch) Add the package of coco mix or any other coco mix that you like i.e.Quick.
  • 5. pour a portion of the mixture into the pie shell, spread around all the remaining cleaned strawberries and raspberries into the pie shell; pour the remainder of the strawberry mix over the strawberries. Spread around.
  • 6. refrigerate the pie until cool. sprinkle with chocolate pieces or whipped cream if you like before serving.
