These Chocolate Banana & Oatmeal Muffins taste super naughty, but are good enough to eat for breakfast ,lunch AND Dinner

Number Of Ingredients 10

1 cup banana (mashed (3 small bananas))
½ cup peanut butter
2 eggs
1/3 cup maple syrup
¼ cup plain yogurt
1 tsp vanilla extract
1 cup oat flour
½ cup cacao (or unsweetened cocoa)
¾ tsp baking powder
1/8 tsp salt (just a pinch)

Steps:

  • Preheat oven to 350F. Line a 12 hole muffin tray with muffin liners.
  • In a large mixing bowl: Mix together mashed bananas,peanut butter, eggs, maple syrup, vanilla and yogurt.
  • Add in oat flour, cacoa, baking powder and salt. Whisk until smooth.
  • Spoon into prepped muffin tray, try to get roughly same amount in each hole.
  • Add a couple dark choc chips to the top of each muffin (this step is optional)
  • Bake for 20 - 25 minutes. Transfer to a wire rack to cool.

I am now actually "watching" my diet, and in the process am trying to make my favorites in a "low fat" manner. I took my favorite muffin recipes and combined them, made some adjustments and came up with this great recipe. Hope you enjoy them!

3 large bananas, mashed
1/2 cup white sugar
1 egg, beaten
1 teaspoon baking soda
1 teaspoon baking powder
1 cup flour (you can use whole wheat for a change if you like)
1/2 cup rolled oats (instant is fine)
1/3 cup applesauce
1/2 teaspoon salt
1/2 cup chocolate chips

Steps:

  • Add sugar to mashed bananas and mix.
  • Add beaten egg and mix.
  • In a separate bowl mix all dry ingredients.
  • Add dry ingredients to the banana mixture and mix well.
  • Mix in applesauce.
  • Add chocolate chips and Stir.
  • Spoon into medium size muffin tin (I use paper muffin cups so they won't stick) and fill 3/4's full.
  • Bake for 20-25 minutes at 350.
  • Enjoy!

1 ½ cups whole wheat flour
1 cup rolled oats
½ cup white sugar
2 teaspoons baking powder
1 teaspoon baking soda
½ cup semi-sweet chocolate chips
2 large eggs
½ cup unsweetened applesauce
¼ cup skim milk
1 cup mashed banana

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease 12 muffin cups or line with paper liners.
  • Stir whole wheat flour, rolled oats, sugar, baking powder, baking soda, and chocolate chips together in a bowl. Make a well in the center. Whisk eggs in a separate bowl until frothy; mix applesauce, skim milk, and banana into eggs. Pour moist ingredients into well made in dry ingredients; stir just to moisten. Batter will be lumpy. Fill prepared muffin cups about 3/4 full.
  • Bake in the preheated oven until a toothpick inserted into the center of several muffins comes out clean, 16 to 18 minutes. Cool in pan for 5 minutes before removing to finish cooling on wire racks.

½ cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
3 ripe bananas, mashed
1 tablespoon milk
1 teaspoon allspice
2 cups all-purpose flour

1 teaspoon baking soda
1 pinch salt
½ cup old-fashioned oats
½ cup chopped walnuts

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Line 12 muffin cups with papers liners.
  • Beat sugar and butter with an electric mixer in a large bowl until smooth and creamy. Beat first egg into the butter until completely blended; beat in the vanilla extract with the remaining egg.
  • Mix bananas, milk, and allspice together in a separate bowl; stir into the creamed butter mixture. 1/2 cup brown sugar
2 tablespoons oil
1/3 cup applesauce
1 egg, beaten
1 1/2 cups whole wheat flour

1 cup oats (any type oatmeal)
1 cup sour milk
1 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup lightly packed brown sugar
1 egg, beaten
1/4 cup melted butter
1 teaspoon vanilla
1 cup mashed ripe banana
2/3 cup milk chocolate chips

Steps:

  • Combine oats and milk in medium bowl, let stand at least 5 minutes.
  • Combine next 5 dry ingredients in a large bowl.
  • Add egg, melted butter and vanilla to oat mixture, mixing well.
