8 ounces uncooked penne
1 small onion, chopped
2 tablespoons butter
4 garlic cloves, minced
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 package (8 ounces) cream cheese, softened and cubed
1 cup heavy whipping cream
1 cup 2% milk
1 jar (4-1/2 ounces) sliced mushrooms, drained
1/2 cup shredded part-skim mozzarella cheese
1/2 cup shredded Parmesan cheese
1/2 cup shredded Swiss cheese
1/4 teaspoon ground nutmeg
1/4 teaspoon coarsely ground pepper
2 cups cubed cooked turkey breast
TOPPING:
1/2 cup seasoned bread crumbs
3 tablespoons butter, melted

Steps:

  • Cook penne according to package directions. Drain; set aside., Meanwhile, in a large skillet, saute the onion in butter until tender. Add garlic; cook 2 minutes longer. Add the soup, cream cheese, cream and milk; cook and stir just until cream cheese is melted. Stir in the mushrooms, cheeses and spices; cook just until cheeses are melted. Add turkey and penne; heat through., Transfer to a greased 2-1/2 qt. baking dish. In a small bowl, combine topping ingredients; sprinkle over pasta mixture. Cover and bake at 350° for 25 minutes. Uncover; bake 10-15 minutes longer or until bubbly and golden brown.

Cheesy Penne with Turkey & Spinach is a light and quick one-pot meal to serve any night of the week.

1 lb penne pasta
1 1/2 cup cooked turkey, diced
1 Tb extra virgin olive oil
3 cloves garlic, grated
2 cups baby spinach leaves
1/3 cup light cream cheese
1/2 tsp sea salt
1/2 tsp black pepper
1/2 tsp ancho chile powder
1/3 cup grated Parmesan cheese

Steps:

  • To begin, in a Dutch oven cook a pound of penne pasta according to package directions. When the pasta is done cooking, scoop out a half cup of the pasta water and set it aside for now. Pour your pasta into the colander to drain.
  • Back in the Dutch oven, drizzle in a tablespoon of extra virgin olive oil. Add in the grated garlic and let it cook for just a minute.
  • Add in the baby spinach and let it cook until wilted, about 2 minutes.
  • Add in the diced turkey, light cream cheese and reserved pasta water. Let those melt all together.
  • Stir in the salt, pepper and ancho chile powder.
  • Add the pasta back into the pot ,along with the parmesan cheese - stir it all together.
  • Serve topped with a little extra parmesan if you like. Enjoy!

1 pound whole wheat or multi grain penne
3 garlic cloves
2 ounces goat cheese
1 ounce reduced fat cream cheese
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
6 ounces fresh baby spinach leaves
2 tablespoons freshly grated Parmesan

Steps:

  • Bring a large pot of salted water to boil. Add the penne and cook until it is tender but still firm to the bite, stirring occasionally, about 12 minutes.
  • Mince the garlic in a food processor. Add the goat cheese, cream cheese, 3/4 teaspoon of salt, 1/2 teaspoon of pepper, and half of the spinach leaves. Blend until the mixture is smooth and creamy. Set the cheese and spinach mixture aside.
  • Meanwhile, place the remaining spinach leaves in a large bowl.
  • Drain the pasta, reserving 1 cup of the cooking liquid. Spoon the pasta atop the spinach leaves in the bowl. Scrape the cheese and spinach mixture over the pasta mixture and toss to coat, adding enough reserved cooking liquid to moisten. Season the pasta, to taste, with salt and pepper. Sprinkle the Parmesan over and serve.

2 tablespoons unsalted butter
1 medium white onion, finely chopped
1 cup (8 ounces) cream cheese, softened
2 (10-ounce) boxes frozen spinach, thawed and squeezed dry
1 teaspoon freshly grated nutmeg
Kosher salt and ground white pepper

Steps:

  • Heat the butter in a 12-inch saute pan over moderate heat. Add the onions and cook until soft, about 8 minutes. Whisk in the cream cheese and let melt. Fold in the spinach until evenly combined. Add up to 3 tablespoons water if the mixture seems too dry. Sprinkle the nutmeg on top and season with salt and pepper.
  • BYOC: Lemon zest and juice would bring a little bit of sunshine to this dish. Just add with the salt and pepper.

2 tablespoons olive oil
3 cloves garlic, minced
1 medium to large white onion, diced
1 (29 to 32-ounce) can crushed tomatoes
1/4 cup finely chopped parsley leaves, plus about 12 small sprigs to garnish
1/2 teaspoon dried marjoram, or 1 teaspoon finely chopped fresh marjoram
1/2 teaspoon dried thyme, or 1 teaspoon finely chopped fresh thyme leaves
1/4 cup cornstarch
Salt and freshly ground black pepper
1 (16-ounce) package penne pasta
1/2 stick (2 ounces, or 1/4 cup) butter, cut into chunks
4 ounces cream cheese, cut into chunks
1 large ripe tomato, diced

Steps:

  • Bring a pot of salted water to a boil for the pasta.
  • Heat olive oil over medium-high heat in a medium saucepot, and saute garlic and onion until the onions become translucent, being careful not to burn them. Add crushed tomatoes, fresh parsley, marjoram and thyme. Create a slurry by gradually whisking cornstarch into 1/2 cup water. Add the slurry to the sauce to thicken and season, to taste, with salt and pepper. Bring to a boil, then reduce heat to low, cover and simmer about 20 minutes, checking periodically to make sure the sauce doesn't burn.
  • While the sauce is cooking, boil the penne until al dente, about 10 minutes. Drain through a colander and set aside.
  • Remove the sauce from the heat, and whisk in butter and cream cheese. Add the boiled pasta to the sauce and gently fold in along with the diced tomatoes. Transfer to serving dish and garnish with fresh parsley.

1/2 cup milk
2 teaspoons Dijon mustard
3/4 cup heavy cream
4 ounces aged English white Cheddar, grated
Kosher salt
Fresh finely ground black peppercorns

Steps:

  • Bring a large saucepan of salted water to a boil over high heat. Add pasta, cook until al dente, and drain. Return pasta to the saucepan.
  • Whisk milk with Dijon in small bowl and add to the pot with cooked pasta, along with cream and grated Cheddar. Stir over medium-low heat until the cheese melts and the mixture is nice and thick. Season with salt and freshly ground pepper and serve. Happy indulging!

Nonstick cooking spray
Kosher salt
One 12-ounce box fiber-and-calcium-enriched penne
1 tablespoon olive oil
1/2 teaspoon fennel seeds, crushed
3 cloves garlic, thinly sliced
One 28-ounce can no-salt-added crushed tomatoes
1 sprig fresh basil plus 1/2 cup leaves, torn, for garnish
Freshly ground black pepper
One 8-ounce block part-skim mozzarella (half grated, half cubed)
One 16-ounce container 1-percent cottage cheese
1/4 cup grated Parmesan
One 10-ounce block frozen chopped spinach, thawed and squeezed dry

Steps:

  • Preheat the oven to 400 degrees F. Mist a 2 to 2 1/2-quart rectangular or oval baking dish with nonstick cooking spray.
  • Bring a large pot of salted water to a boil. Add the penne and cook according to package directions for al dente.
  • While the pasta cooks, heat the oil in a medium pot set over medium heat. Add the fennel seeds and garlic and cook until aromatic, about 2 minutes. Add the tomatoes, basil sprig, 1 teaspoon salt and 1/4 teaspoon pepper. Simmer, lowering the heat if the sauce bubbles too vigorously, until the sauce has thickened slightly, the flavors have blended together and the raw tomato taste has cooked out, 10 to 15 minutes. Remove from the heat, discard the basil and season with additional salt and pepper. Pour over the cooked pasta and toss well to coat. Add the cubed mozzarella and transfer half the pasta to the prepared baking dish.
  • Put the cottage cheese in the bowl of a food processor and process until smooth. Add the shredded mozzarella and Parmesan and pulse two to three times. Combine half the cottage cheese mixture with the spinach and mix to break up the spinach. Drop in spoonfuls over the pasta in the baking dish. Top the spinach layer with the rest of the pasta and then the remaining cottage cheese mixture.
  • Bake until bubbly and golden brown on top, about 30 minutes. Let stand for 10 minutes, and then scatter the torn basil over the top.

1 tbsp olive oil
2 large leeks , total weight about 450g/1lb, thinly sliced
500g packets penne rigate or your favourite pasta shape
200ml tub crème fraîche
1 tbsp wholegrain mustard
125g packet Danish blue cheese , roughly diced
8 sundried tomatoes in oil, drained and thinly sliced
225g bag baby spinach leaves

Steps:

  • Melt the butter with the oil in a large pan, tip in the leeks and splash in a little hot water. Cover and cook over a low heat, stirring occasionally, for about 10 minutes until no longer squeaky.
  • While the leeks are cooking, boil the penne in salted water according to the packet instructions. Meanwhile, tip the crème fraîche, sundried tomatoes and mustard into the leeks, add three-quarters of the cheese and season well. Stir until the cheese melts. Take off the heat.
  • Drain the pasta, reserving the cooking water. Tip the pasta into the sauce and stir, adding enough cooking water to make the sauce coat the pasta. Stir in the spinach, a big handful at a time, until it wilts, splashing in a little more water if needed. Toss in the remaining cheese and serve.

2 cups packed fresh basil leaves
1 tablespoon fresh lemon juice

12 ounces sweet Italian turkey sausage (3 to 4 links)

Steps:

  • Preheat oven to 450 degrees. In a food processor, combine 4 cups spinach, basil, lemon juice, 1/2 cup peas, and olive oil; process until combined. Pulse in cheese; season with salt and pepper. Using kitchen shears, snip sausage into 1-inch pieces. Drizzle with oil; roast on a rimmed baking sheet until undersides are brown, 7 to 8 minutes. Flip and push to one side. 500g pack penne
2 large leeks , sliced
85g butter
85g plain flour
2 tsp ready-made English mustard
good grating nutmeg
1l milk , plus a bit extra
350g pack mature cheddar , grated
4 slices French bread , diced
85g walnut piece
400g bag spinach

Steps:

  • If you are eating one of the pasta bakes now, heat oven to 190C/170C fan/ gas 5. Boil the pasta with the leeks for 10 mins, then drain.
  • Meanwhile, put the butter, flour, mustard, nutmeg and milk in a large pan with some seasoning. Gently heat, stirring all the time, until bubbling and thickened, then cook for 2 mins more, stirring frequently. Remove from the heat and stir in two-thirds of the cheese. Toss the remaining cheese with the bread and walnuts.
  • Cook the spinach in the microwave, or pour a kettle of boiling water over it to wilt, then squeeze out the excess water. Stir into the sauce with the pasta, leeks and some seasoning. If necessary, add a little extra milk to loosen. Divide between 2 ovenproof dishes and scatter the bread mixture on top. If eating straight away, bake for 40 mins until golden, or cool to freeze.
