FUSILLI WITH SPINACH AND ASIAGO CHEESE

Steps:
- Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain pasta reserving 1/2 cup of the cooking liquid.
- Meanwhile, warm olive oil in a large, heavy skillet over medium-high heat. Add the garlic and cook until fragrant, about 2 minutes. Add the spinach and tomatoes and cook until the spinach wilts, about 2 more minutes. Add the cooked pasta and toss. Add the cheeses, salt, pepper, and the pasta cooking liquid and stir to combine.
- Transfer the pasta to a serving plate and serve.
FUSILLI CHEDDAR BAKE
An old recipe that my mum used to cook when we were younger. A quick and easy twist on Mac'n'cheese. You could make it lighter by using all low-fat products.

Steps:
- Oven at 350°F.
- Cook noodles as per package directions.
- Sautee onions in butter till softened.
- Divide cheese into 2 amounts, 1 1/2 cups and 1/2 cup.
- Mix all ingredients in a casserole dish, reserving 1/2 cup of cheese.
- Top with reserved cheese.
- Bake for 30 minutes, until hot and bubbly.

FUSILLI AND CREAM CHEESE SAUCE
Had the ingredients in the refrigerator. Found a cream cheese sauce. Adapted the sauce to my taste by adding the grated parmesan and Tabasco. Very rich. Serve with a light salad.

Steps:
- Saute garlic in butter until golden.
- Remove from heat.
- Cook pasta.
- Add cream cheese to garlic and heat gently.
- Gradually stir in 1/2 cup heavy cream and Tabasco to taste.
- Continue stirring gently until mixture is warmed through.
- Salt and pepper to taste.
- Drain pasta.
- Add Parmesan cheese to pasta and toss.
- Add cream cheese sauce to pasta and toss.
- Serve at once.

- Boil Fusilli Pasta in a bowl having some water. Add some salt and vegetable oil to speed up the process.
- Chop Onions, Garlic, whole basil leaves. Saute them in a non-stick skillet over medium heat until the onions are slightly brown. Add tomato Concassé and stir well for few minutes. (If you don't have canned tomato Concassé then you can boil two large tomatoes in a bowl filled with water. You can even boil it in your microwave oven. Now, replace the boiling hot water with cold water. Peel the tomato skin and chop your tomatoes into small pieces.)
- Add grated parmesan cheese and Heavy Whipping Cream. Stir well for about 30-seconds. Take it out on a plate. Garnish it with some crushed sweet basil leaves, Whole Fresh Basil Leaves, Parmesan cheese (grated and whole) and some dried Red Chili Flakes or dried Red Pepper Flakes.
