CHEESEBURGER SUB WITH SPECIAL SAUCE

- To make the special sauce, add the mayonnaise to a small bowl and stir in the remaining ingredients. Store in an airtight container in the refrigerator. You can do this up to a week in advance.
- To make the cheeseburger subs, in a large skillet over medium heat, add the oil. Once the oil warms, add the ground beef and sprinkle with salt, pepper and paprika. Cook the beef, using a wooden spoon to break up the meat during the cooking process. Add the garlic and cook for 30 seconds, constantly stirring. Turn off the heat and drain the beef.
- Divide the beef among four sub rolls. Top each with 1/4 cup shredded cheddar. Place in the broiler until the cheese melts. This should only take about a minute, so keep a close eye to make sure the bread doesn't burn. Remove from the broiler and dress with special sauce and desired toppings. Lightly brush the sub rolls with melted butter. Enjoy!

- Heat a large cast-iron skillet over medium-high heat. Add the vegetable oil, then add the onion, ground beef, 1/2 teaspoon salt and a few grinds of pepper. Cook, undisturbed, until the beef starts to develop a crust, 1 to 2 minutes. Flip with a spatula, breaking up the meat. Continue cooking until browned, about 30 more seconds. Stir in the pickled peppers, then arrange the cheese over the meat mixture; remove from the heat and let melt.
- Spread the mayonnaise on both sides of the rolls. Divide the beef among the roll bottoms using a spatula. Top with lettuce, tomatoes, ketchup, hot sauce and the roll tops. Serve with potato chips.

- Preheat oven to 350. Place bread dough on cutting board, stretch slightly. Cut dough into four equal portions. Cut three diagonal slits on top of each portion of dough; place seam side down and 3 inches apart on cookie sheet. Bake 20-22 minutes or until golden brown. Immediately remove loaves from baking sheet to a cooling rack. Cut two slices of the cheese into small pieces. In a 10-inch skillet, cook and stir beef, onion, and garlic over medium heat 8-10 minutes or until no longer pink, breaking beef into crumbles. Drain. Stir in ketchup, mustard, Salt and Pepper, and cut-up cheese; stir until cheese is melted. Remove skillet from heat. Slice each loaf lengthwise, end to end, cutting halfway through to center of loaf; spread open. Fill evenly with beef mixture; place on baking stone. Bake 6-8 minutes or until bread is toasted and meat mixture is heated through; remove from oven. Cut remaining cheese slices diagonally in half; top each sandwich with one cheese traingle. Top sandwiches with lettuce.

- In a skillet, cook beef over medium heat until no longer pink; drain. Stir in tomato sauce, cheese, onion, bouillon and garlic powder. Cover and simmer for 10 minutes or until bouillon is dissolved and cheese is melted. Cut the bread in half widthwise and lengthwise.
