6 slices bacon
5 eggs
1/2 cup heavy cream
1/4 teaspoon sweet paprika
1/4 teaspoon cayenne pepper
2 teaspoons Dijon mustard
Kosher salt and freshly ground black pepper
1 cup frozen peas
3 ounces shredded Gruyere cheese
One 14.5-ounce package refrigerated pie dough
Nonstick cooking spray

Steps:

  • Preheat the oven to 375 degrees F.
  • Add the bacon to a medium skillet, turn the heat to medium high and cook until browned and crispy on both sides, about 7 minutes. Drain on paper towels, then dice. Set aside.
  • To a medium bowl, add the eggs, heavy cream, paprika, cayenne, Dijon and some salt and pepper; whisk to combine. Add the bacon, peas and Gruyere; fold to combine. Set aside.
  • Unroll the pie dough and cut out 7 rounds using a 3-inch round cookie cutter. (If necessary, roll out the scraps and cut out more rounds.) Spray a 12-cup muffin tin with nonstick spray. Press each dough round into a muffin tin cup, crimping the edges.
  • Divide the egg mixture between the 7 pie dough cups. Bake until just set, about 30 minutes. Let cool slightly before serving.

1 1/2 cups green peas (about half a 1-pound bag)
1 bunch fresh mint leaves
3/4 cup feta cheese, crumbled (about 6 ounces)
1 unbaked 9-inch deep dish pie pastry
6 large eggs
3/4 cup milk
1 tablespoon unbleached all-purpose flour
1/8 teaspoon salt
fresh ground black pepper
3 tablespoons green onions, finely minced

Steps:

  • Preheat the oven to 375°F.
  • Place the peas in a colander and run them under room-temperature water for about 30 seconds to defrost. Shake to drain, then leave the colander in the sink for a few minutes to drain further.
  • Pull about 10 mint leaves from the bunch, and cut them into tiny strips with a sharp knife. Set aside the rest of the bunch - you'll need it a little later.
  • Scatter the crumbled feta into the pie crust. Shake the peas in the colander a couple more times, then dump them into the crust on top of the cheese. Tilt and gently shake the pie pan a few times to evenly distribute the peas.
  • In a medium bowl, whisk together the eggs, milk, flour, salt, and a few grinds of black pepper. Stir in the scallions and minced mint.
  • Pour the egg mixture carefully over the feta and cheese - filling right up to the top of the crust. (If it doesn't all fit, don't force it inches Maybe save it and add to your scrambled eggs for tomorrow's breakfast.).
  • Carefully transfer the pie to a baking tray (this is your insurance policy against possible spills) and place the tray in the center of the oven. Bake for about 1 hour, or until the crust is golden, the filling is puffed up and the top surface feels tender but solid when you (carefully!) touch it with a finger tip. If the edges of the crust become too dark before the hour is up, cover the quiche very loosely with aluminum foil to protect it.
  • Remove the tray from the oven and let the quiche rest for 10 minutes before serving. During this time, cut the remaining mint leaves and use these to top each serving.

1 frozen puff pastry sheet
2 tablespoons oil
1 onion, cut into half and thinly sliced
2 bunches of rainbow chard leaves, washed and roughly chopped
4 eggs
3/4 cup heavy cream
fresh ground pepper
fresh ground nutmeg
8 ounces feta cheese

Steps:

  • Roll the puff pastry dough to fit the gratin dish and bake for 15 minutes at 400°F After it's done, lower the oven temperature to 375°F and place the pie pan on a wire rack to cool.
  • Saute the onion and the chopped chard stem with olive oil over a medium heat for about 8 minutes or so until the onion is soft and starting to caramelize.
  • Add the chopped chard leaves, cook for 8 more minutes over a medium high heat until the liquid is evaporated.
  • Add a third of the cheese on the bottom of crust until it's all covered, top with the vegetable mixture and then cover with the remaining cheese.
  • Mix together the eggs with the heavy cream and season with freshly ground pepper and nutmeg.
  • Pour over the vegetable mixture and cheese.
  • Bake for 30-35 minutes and cool on a wire rack for about 10-15 minutes before slicing.

Pastry for a 9-inch quiche
1 pound Swiss chard
2 tablespoons butter
1 large onion, sliced
1/2 cup dried currants
Cayenne pepper or hot sauce
Salt
3 eggs
1/2 cup heavy cream
1 1/2 cups milk
1/3 cup freshly grated Gruyere cheese

Steps:

  • Preheat oven to 375 degrees. Line a nine-inch quiche pan with pastry. Refrigerate until ready to use.
  • Rinse the Swiss chard and chop it fine.
  • Melt the butter in a large skillet, add the onion and saute until just turning golden. Add the Swiss chard and continue to saute about 10 minutes, until the Swiss chard has wilted. Stir in the currants and season with Cayenne pepper and salt. Spread the Swiss chard mixture into the prepared quiche pan.
  • Beat the eggs and mix with the cream and milk. Pour over the Swiss chard in the pan. Sprinkle with cheese.
  • Bake about 40 minutes, until puffed and browned. Serve warm or cool.

Vacherin Cheese is made in the Valais region of Switzerland - it is semi-hard, with a coarse, greasy brown rind and a pale yellow paste with a scattering of holes. It has a rich nutty flavour, a little like Italian fontina. Food.com must have never heard of Vacherin cheese (wouldn't let me list as such), so I listed as Fontina. The original recipe comes from the Seattle Times, March 2011.

1 refrigerated pie crust (deep dish-Marie Callendars in the freezer section are pretty darn good)
4 slices bacon (laroons are prefered but bacon can be used or chopped)
1/4 cup onion (chopped)
1 bunch swiss chard (tough stems removed-chopped)
6 eggs
1 1/2 cups half-and-half
salt & freshly ground black pepper
1 tablespoon fresh thyme (chopped)
1 1/2 cups Fontina cheese (Vacherin Cheese-Shredded)

Steps:

  • In a large skillet over medium high , cook bacon until just turning cirspy (5 minute or so), if there is lots of grease, drain some off; add swiss chard and onions cook until tender, set aside to cool for 10 minute use a slotted spoon to drain excess liquid.
  • In a medium bowl, whisk eggs, half and half, salt pepper and thyme.
  • Add shredded cheese to chard and bacon, transfer to prepared pie crust, pour the egg mixture into the crust, stir gently to eliminate any large clumps or air bubbles.
  • Bake for 20 minute at 400 degrees.
  • Reduce oven temperature to 325, bake until center is set, about another 40 min, allow to cool for 15 minute before slicing.
  • Serve warm or cool.

This is a remarkable quiche recipe for a few reasons: The dough is intentionally generous so that it can be formed into tall walls all around, and the filling is jam-packed full of healthy greens. They balance out the butter and cream, right?

Crust:
1 teaspoon kosher salt
2 cups all-purpose flour, plus more for surface
11 tablespoons chilled unsalted butter, cut into pieces
Filling and assembly:
1 tablespoon olive oil
1/2 small shallot, chopped
1 garlic clove, finely chopped
1 small head of broccoli (about 8 ounces), halved lengthwise, chopped (about 3 cups)
1 bunch small Swiss chard, ribs and stems removed, leaves coarsely torn (about 4 cups)
4 ounces feta, crumbled (about 1 cup)
2 ounces sharp cheddar, grated (about 1 cup)
6 large eggs
3 large egg yolks
1 3/4 cups heavy cream
1 cup half-and-half or heavy cream or whole milk
3 tablespoons chopped chives
1 teaspoon kosher salt
Freshly ground black pepper
Special Equipment
A 9-inch springform pan

Steps:

  • Crust:
  • Whisk salt and 2 cups flour in a large bowl to combine. Work in butter with your fingers until largest pieces are pea-size. Drizzle in 1/4 cup ice water and rake with your fingers to combine. Turn dough out onto a work surface and lightly knead to work into a shaggy dough (no dry spots should remain). Flatten into a disk; wrap in plastic and chill until firm, at least 2 hours and up to 2 days ahead.
  • Place a rack in middle of oven; preheat to 350°F. Roll out dough on a lightly floured surface to a 14" round. Transfer dough to pan. Lift up edges and allow dough to slump down into pan, then pat into corners and up around the sides of pan. Smooth out dough so it doesn't have any creases or folds and trim to just below the rim. (Save any scraps for patching.) Freeze until very firm, about 20 minutes.
  • Line dough with 2 layers of overlapping parchment paper and fill with pie weights or dried beans (ideally right up to the rim; pillage the pantry for old dried beans and rice to get you there). Bake until crust is golden brown all the way around edges (peek below the parchment), 60-75 minutes. Carefully remove parchment and pie weights. If needed, patch any cracks with reserved dough trimmings and bake crust just until patches are opaque, about 5 minutes. Let crust cool.
  • Filling and assembly:
  • Reduce oven heat to 325°F. Heat oil in a large skillet over medium. Cook shallot and garlic, stirring occasionally, until softened, about 5 minutes. Add broccoli and cook, tossing occasionally, until crisp-tender, about 5 minutes. Add Swiss chard leaves and cook, tossing often, just until wilted, about 2 minutes. Let cool. Stir in feta and cheddar.
  • Whisk eggs, egg yolks, cream, and half-and-half in a medium bowl just to combine. Mix in chives and salt; season with pepper. Scrape vegetable mixture into crust, then carefully pour in egg mixture. Bake quiche until filling is lightly browned and set across the surface but slightly wobbly in the center inch or two, 75-90 minutes. Let quiche cool in pan before unmolding and slicing.
  • Do Ahead
  • Quiche can be baked 2 days ahead. Cover and chill.

300g frozen pea
3 tbsp olive oil
handful mint leaves
2 eggs
284ml pot double cream
4 spring onions , finely sliced
200g mild goat's cheese , crumbled
280g plain flour , plus extra for dusting
140g cold butter , cut into pieces

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Follow steps 1 and 2 of the Sticky onion & cheddar quiche recipe, opposite page. 2 While the pastry is chilling, cook the peas in boiling water for 3 mins, then drain and refresh under cold water. Use a hand blender to purée the peas with the olive oil, then stir in the chopped mint and season.
  • Lightly prick the base of the tart with a fork, line the tart case with a large circle of greaseproof paper or foil, then fill with baking beans. Blind-bake the tart for 20 mins, remove the paper and beans, then continue to cook for 5-10 mins until biscuit brown.
  • While the tart is cooking, beat the eggs in a large bowl. Gradually add the cream and stir in the onions. Season. When the case is ready, spoon and spread the peas over the base, pour over the egg mix, then finally scatter over the goat's cheese. Bake for 20-25 mins until set and golden brown. Leave to cool in the case, trim the edges of the pastry, then remove and serve in slices.
