CREOLE STYLE STEWED OKRA



Creole Style Stewed Okra image

Classic stewed okra and tomatoes with onions, peppers, celery and creole seasoning. A great side dish recipe for any southern or Cajun meal!

2 tbsp oil
2 pounds okra (, sliced)
1 onion (, diced finely)
1 orange pepper (, diced)
1 can (28oz) diced tomatoes
2 tsp cajun seasoning

Steps:

  • Heat oil in a large sized dutch oven or saucepan.
  • Add the sliced okra, diced onion and pepper. Sauté over medium heat stirring often, until the onions and translucent. About 7-8 minutes.
  • Stir in the diced tomatoes and seasoning. Bring to a boil and lower heat to a simmer.
  • Cover with lid and let the okra and vegetables simmer for 30-45 minutes. Stir occasionally to ensure that it does not stick to the bottom of the dutch oven.
  • Serve.

This is a traditional Arabic recipe and is called bamee. This dish is really delicious is very tasty. You can serve it with plain rice.

2 lbs fresh okra or 2 lbs frozen okra
1 -1 1/2 lb lamb (stew meat size)
3 large chopped tomatoes or 1 (28 ounce) can diced tomatoes
1 large chopped onion
6 diced garlic cloves
1/4 cup olive oil or 1/4 cup vegetable oil
2 cups water
3 teaspoons salt
1 teaspoon black pepper
1/2 teaspoon allspice
1/2 cup chopped fresh cilantro (optional) or 1 teaspoon coriander (optional)

Steps:

  • Wash okra and trim off stems, and dry.
  • Sprinkle okra with oil and place under broiler until lightly browned or fry in vegetable oil until lightly browned (do not use same oil for browning meat).
  • Sauté chopped onions, diced garlic, lamb meat, salt, and spices in olive oil(stirring occasionally) until meat is lightly browned.
  • Add water and stir, bring to boil and then cover and cook on low heat until meat is tender.
  • Add browned okra, chopped tomatoes or (28 oz can diced tomatoes) and ½ cup fresh cilantro or 1 teaspoon coriander (optional).
  • Mix well, cover and simmer until okra is tender.
  • This meal is excellent when served hot with rice. See my recipe for rice.

4 (4 ounce) skinless, boneless chicken breast halves
1 (14.5 ounce) can diced tomatoes with garlic and onion, undrained
⅔ cup low-sodium chicken broth
2 cloves garlic, crushed
¼ teaspoon salt
⅛ teaspoon cayenne pepper
1 (10 ounce) package frozen cut okra, thawed
2 tablespoons water
1 ½ tablespoons all-purpose flour
¼ teaspoon hot pepper sauce
2 cups cooked long-grain white rice

Steps:

  • Heat oil in a skillet over medium-high heat. Add chicken; cook until browned, about 2 minutes per side. Add tomatoes, chicken broth, garlic, salt, and cayenne. Cover, reduce heat, and simmer for 8 minutes. Add okra, cover, and simmer for 3 minutes more.
  • Combine water and flour in a small bowl and add to the skillet. Simmer, uncovered, until thick and chicken is no longer pink in the centers, about 2 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Stir in hot sauce. Serve over rice.

6 -7 large fresh tomatoes
1 (15 ounce) can lima beans
1 (15 ounce) can black-eyed peas
1 cup chopped fresh okra
1 onion, chopped
2 -3 garlic cloves, chopped
1 tablespoon cajun seasoning
salt & pepper
1 -2 teaspoon olive oil

Steps:

  • Heat olive oil in a large stew pot.
  • Add chopped onions and garlic and saute for 2-3 minutes.
  • Add chopped tomatoes, lima beans, blackeye peas and cajun seasoning.
  • Bring to a boil, stir well.
  • Reduce heat and simmer on low 30 minutes, stirring occasionally.
  • If the stew gets too thick add water as needed.
  • Add chopped okra, stir well.
  • Simmer another 15 minutes.
  • Serve over rice.

½ large onion, chopped
2 cloves garlic, minced
½ green bell pepper, chopped
1 (16 ounce) can diced tomatoes in juice
⅜ teaspoon dried thyme
2 tablespoons chopped fresh parsley
¼ teaspoon cayenne pepper
salt and pepper to taste
1 (16 ounce) package frozen cut okra

Steps:

  • Heat the olive oil in a large skillet over medium heat. Saute the onion and garlic until limp. Add the green pepper; cook and stir until tender. Drain the tomatoes, reserving juice, and pour them into the skillet. Season with thyme, parsley, cayenne, salt, and pepper. Simmer for 5 minutes over medium heat.
  • Add the frozen okra, and pour in enough of the reserved juice from the tomatoes to cover the bottom of the pan. Cover, and cook for 15 minutes, or until okra is tender.

This Okra Stew is a hearty Lebanese style recipe with robust flavors of stewed tomatoes, cilantro, garlic and sauteed onions - the whole family will enjoy!

1 pound beef tips
3 tablespoons olive oil (divided)
3 garlic cloves (minced)
¼ cup fresh cilantro (chopped)
1 small onion (finely chopped)
2 14-ounce packages frozen baby okra
1 teaspoon 7 Spice
1 teaspoon salt
½ teaspoon black pepper
4 ounces tomato paste
4 vine-riped tomatoes (chopped)

Steps:

  • In a heavy bottomed saute pan over medium-high heat, heat 1 tablespoon olive oil, add the beef and cook for 4-5 minutes without touching. Flip over and cook for an additional 4-5 minutes. Set the beef aside
  • In the same pan, add the remaining olive oil along with the garlic, cilantro and onions and cook until soft and fragrant, about 2 minutes.
  • Add the frozen okra, salt, pepper and 7 Spice to the garlic cilantro mixture and stir well, coating the okra with the mixture and breaking up the frozen okra. Cook the okra, stirring occasionally until the okra is fully cooked, about 10 minutes.
  • Add the tomato paste, fresh cut tomatoes and 4 cups of water to the pan. Then return the beef tips, and mix to incorporate everything together. Lower heat to low and simmer covered for 15 minutes until sauce thickens.
  • Serve over traditional Arabic rice pilaf and sprinkle fresh cilantro for garnish.

2 pounds peeled and deveined medium shrimp (30-40 per pound)

Steps:

  • Heat the olive oil in a skillet over medium heat. Stir in the bell pepper and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes.   • Stove Top Method: Method 1 - Wash fresh okra. Remove stems and cut okra into 1/2 inch rounds. In a heavy saucepan or Magnalite cookware, cook the okra, onions, tomatoes in the oil over medium low heat stirring continually for about 45 minutes to 2 hours (depending on the amount you are cooking) until the okra is no longer slimy and has achieved a light greenish brown color. Don't forget to stir, stir, stir to prevent sticking and burning. Do not use cast iron as the acid in the okra will remove the seasonings in your cast iron pot. Also never warm up any okra dish in a cast iron pot.
  • Stove Top Method: Method 2 - Some cooks will sauté the onions and bell pepper in one tablespoon of oil until wilted in a separate skillet all the while cooking the okra in a separate pot until the okra is a light greenish brown color . Then will combine the okra, tomatoes, salt and Tabasco; cook for 10 minutes longer or until the tomatoes have cooked down, Again do not forget to stir, stir, stir to prevent sticking and burning.
