BROWN BUTTER MASHED POTATOES

- Peel and wash the potatoes, then cut into small 1- to 2-inch chunks. Place the potatoes into into a large pot and fill with enough cold water to cover the potatoes by one inch, then salt with around two teaspoons of salt.
- Cover the pot and bring to a boil over high heat, then reduce the heat to medium and cook until the potatoes are soft and you can easily insert a fork in them (around 25 minutes). Drain well in a colander.
- While the potatoes cook, melt the butter in a small pan over medium heat. When the butter begins to bubble and foam, lower the heat to medium-low and stir the butter occasionally, monitoring carefully so that the butter does not burn. Add the minced garlic. The butter will turn a deep caramel color and browned bits will accumulate in the bottom of the pan. Remove from heat.
- Add about half of the garlic browned butter to the potatoes, along with the cream cheese and half of the milk. Mash or beat the potatoes with a potato masher or electric mixer. Taste the potatoes and add salt (1/2 teaspoon at a time, if necessary) and the 1/4 teaspoon pepper, along with any additional milk as needed to the potatoes and stir.
- Serve the mashed potatoes either individually plated or family style with the remaining garlic browned butter for drizzling over the top of the potatoes. Garnish with chopped chives, green onions, or parsley, if desired.

- Peel and dice potatoes, making sure all are relatively the same size. Place in a large saucepan, add the salt, and cover with water. Bring to a boil over medium-high heat and then reduce heat to maintain a rolling boil. Cook until potatoes fall apart when poked with a fork.
- Heat the half-and-half and the garlic in a medium saucepan over medium heat until simmering. Remove from heat and set aside.
- Remove the potatoes from the heat and drain off the water. Mash and add the garlic-cream mixture and Parmesan; stir to combine. Let stand for 5 minutes so that mixture thickens and then serve.
BROWN BUTTER MASHED POTATOES WITH ROASTED GARLIC

- Heat the oven to 400° F.
- Peel away excess layers of papery white skin from the garlic, but leave enough layers so the head of garlic stays together. Cut about 1/4-inch from the top of the cloves so that you can see inside the individual cloves of garlic.
- Place the garlic on a small square of aluminum foil. Drizzle with olive oil and sprinkle with salt and pepper.
- Wrap up the foil around the garlic and place on a baking sheet.
- Bake until the cloves inside are light brown and soft, 40 to 70 minutes. Check on the garlic every so often to see how it is progressing.
- Remove from the oven and let cool slightly. Then squeeze at the base of the garlic to remove the roasted cloves.
- If desired, peel the potatoes and place in a large stockpot. Cover with water and add in about 1 tablespoon of kosher salt. Bring to a boil and cook for 15-25 minutes or until fully cooked and easy to pierce with a knife.
- Drain out the water and add the cooked potatoes to the bowl of a stand mixer fitted with the paddle attachment.
- Add in the brown butter and roasted garlic cloves. Turn the mixer on low until the potatoes are fully mashed.
- Add in the sour cream, heavy cream, herbs, salt and pepper and whip the potatoes until creamy and fluffy.
- Taste and adjust seasonings if desired.

- Peel the potatoes, rinse in cold water and cut into fourths. Place the potatoes in a large pot and cover with water. Bring to a boil and cook until fork-tender, 20 to 25 minutes.
- Meanwhile, add the butter to a saucepan over medium heat. Allow the butter to brown, 2 to 3 minutes, being careful not to burn it. Swirl the pan as you go, stopping when the solids turn medium to deep golden brown.
- Drain the potatoes, then return them to the pot. With the burner on low heat, mash the potatoes with a potato masher; the more steam that's released while you mash, the better. Mash for about 5 minutes. Turn off the burner.
- Add the cream cheese, half-and-half, cream, some salt and pepper and three-quarters of the brown butter to the pot and stir to combine. If the mixture needs thinning, add some milk. Check the seasonings, adding salt and pepper to taste. Drizzle the remaining brown butter over the top. Sprinkle with fresh parsley.

- Preheat the oven to 350 degrees F.
- Dice the potatoes and boil in a pot of water until fork tender, 25 to 30 minutes. Drain and return to the pan over low heat. Mash the potatoes for 5 minutes to allow a lot of the steam to escape.
- Add the butter, cream cheese, half-and-half, cream, some salt, pepper and roasted garlic. Stir/mash to combine. Test and adjust the seasonings.
- Spread the potatoes into a large buttered baking dish. Dot the top with butter. Bake until heated through, about 30 minutes.

- Slice off the very top of the garlic head. Drizzle head with olive oil and wrap in foil. Place on a sheet tray and bake until tender and fragrant, roughly 35 minutes. Remove from the oven and let cool. Remove the cloves and mash with a wooden spoon.
- Place potatoes in a large stockpot and cover with cold water. Add salt and bring to a boil. Cook until fork tender and drain. Mash the potatoes until smooth.

- Separate head of garlic into individual cloves.
- Toss in olive oil and wrap tightly in small piece of aluminum foil.
- Bake in 350°F (180°C) oven for 45 minutes.
- When the garlic has cooled to the touch you should be able to squeeze it out of the 'paper' shell of the individual cloves.
- Mash the roasted garlic with a fork, or force through a fine strainer.
- If you use a ricer as recommended below, simply rice the garlic along with the potatoes.
