This peas recipe takes just 5 minutes! Cooking frozen peas with garlic and lemon makes them taste incredible. It's an easy side dish that everyone loves!

Ingredients

2 cups frozen peas (about 10 ounces)
2 garlic cloves
1 tablespoon salted butter
1 tablespoon olive oil
1/4 teaspoon kosher salt
Fresh ground pepper
Zest of 1/2 lemon, optional

Steps:

Rinse the peas under warm water and shake off excess liquid.
Smash and peel the garlic cloves.
Add the butter and olive oil to a large skillet over medium-high heat. Add the smashed garlic and frozen peas and cook for 2 minutes until warmed through but still bright green.
Season with the kosher salt, fresh ground pepper and lemon zest. Discard the garlic cloves and serve immediately.

Great for busy moms and dads to make a bunch on a Sunday and freeze for the weeks ahead. This can be used with other first foods for your baby! Apples or pears are fun or even green beans. Make sure it is mild enough for your baby's developing digestive system. Brussels sprouts or broccoli probably aren't the best first foods. You can also use fresh peas instead of frozen if you have them.

Ingredients

3 cups frozen peas
½ cup breast milk

Steps:

Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add peas, cover, and steam until tender, about 15 minutes.
Place peas and breast milk in a blender or food processor and puree until creamy. Strain the mixture through a fine-mesh sieve to remove any lumps.
Spread pea mixture into an ice cube tray, cover with plastic wrap and freeze until solid, 2 to 3 hours. Transfer frozen cubes to a resealable plastic bag and store in the freezer.
To serve, heat cubes in the microwave for about 30 seconds until warm but not hot. Stir thoroughly.

2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
16 ounces frozen green peas
1 tablespoon chicken stock
salt and ground black pepper to taste

Steps:

Heat olive oil in a skillet over medium heat. Stir in onion; cook until softened, about 5 minutes. Stir in garlic and cook for 1 minute. Add frozen peas, and stir in stock. Season with salt and pepper. Cover, and cook until the peas are tender, about 5 minutes.

That way, if we have guests over for a party that night, I can use part of this basic recipe to make "Texas Caviar" which is a fantastic salsa/dip to eat with tortilla chips. (that recipe follows)

1 (16 ounce) package dried black-eyed peas
6 cups water
1 medium onion, chopped
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon sugar
1 ham hocks or 2 cups cooked ham, cut into small cubes
1 -2 jalapeno pepper, seeds removed and chopped

Steps:

Sort and wash peas; place in a large Dutch oven.
Add remaining ingredients and bring to a boil.
Cover, reduce heat and simmer for 1- 1 1/2 hours, or until peas are tender.
