CREAMY FRUIT SALAD I
This is a sweet, creamy recipe that has been handed down in my family. We always have it at Thanksgiving and Christmas.

Steps:
- In a large bowl, combine fruit cocktail, bananas and cherries. Reserve 3 slices of banana and 1 cherry for garnish.
- In a mixing bowl, whip the cream to soft peaks with an electric mixer. Add sugar and vanilla, and whip to combine.
- Fold the whipped cream into the fruit. Garnish with a fan of banana slices. Place cherry at the bottom of the banana fan.

BERRIES AND CREAM
This is a simple, lovely way to serve fresh summer berries. I made this for brunch today and found it a refreshing end to the meal. This dish could also be made year-round using unsweetened frozen berries that have been thawed. Note: Preparation time includes time needed for berries to sit at room temperature.

Steps:
- In a medium bowl, combine berries, lemon zest and sugar. Gently toss, being careful not to break the blackberries and raspberries too much.
- Allow berry mixture to sit at room temperature for 30 minutes until berries begin to create their own juice, and sugar is dissolved.
- Serve in four small serving bowls (or dessert bowls) with around 2 tbs. cream drizzled attop per bowl.

- Toss strawberries, blueberries, 2 tablespoons of soda and mint together in a medium bowl; set aside for 10 minutes.
- Meanwhile, combine ricotta, remaining 2 tablespoons of soda and lemon zest in another bowl.
- Whip with a hand-held mixer until light and fluffy; stir in sour cream.
- Place about 3/4 cup of berry mixture in each of 4 small bowls and top each serving with 1/3 cup of cream.

Similar to a strawberry pretzel salad, but with a much better crust! I'm not sure where this recipe came from; my aunt made it for years.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, beat egg whites until foamy. Add cream of tartar and sugar and beat on medium speed until stiff. Fold in cracker pieces, walnuts and vanilla. Spread into the bottom of a 9x13 inch pan. Bake in preheated of for 25 minutes, remove from oven and set aside to cool.
- In a medium bowl, mix together the cream cheese and 1/2 cup sugar. Fold in whipped topping and spread atop cooled crust.
- In a medium bowl, whisk the boiling water into the gelatin to dissolve. Mix in strawberries and let stand for 15 minutes. Pour over the cream cheese layer, cover and chill until serving.

A wonderful fruit salad to make when fruit is at its best! It can be made a day ahead and you can use any fruit that you like.

- In small bowl, combine cream cheese, yogurt, sugar, and lemon juice. Beat at medium speed until smooth. Add whipped topping and almond extract, continue beating until smooth and thick. Refrigerate.
- In large glass bowl, layer blueberries, peaches and strawberries. Spoon on half of topping mixture. Layer on grapes and mandarin oranges. Spoon on remaining half of topping over fruit to within one inch of edge. Sprinkle with almonds. Garnish with whole strawberries. The salad can be made a day ahead and any fruit combination can be used.

CREAMY FRUIT SALAD
My husband loves this fruit salad. It is not only delicious, but also very easy to put together and economical. Chill at least and hour before serving for best taste.

Steps:
- Combine the cream cheese and condensed milk; blend until very smooth.
- Drain the juice from the fruit cocktail and add to cream cheese mixture. Toss in the banana pieces and cherries. Mix with a large spoon.
- Cover with saran wrap and chill. Mix well and serve cold.

- Mix together the box of jello and boiling water in a large bowl. Stir until all jello is dissolved. Mix in can of pineapple and can of pie filling until combined. Pour jello mixture into a 9x13 pan and refrigerate until set (about 4-5 hours).
- Mix together cream cheese, sour cream, sugar, and vanilla and beat until smooth. Place a spoonful of cream on each serving. Garnish with fresh berries.

- Whip first 4 ingredients together until stiff peaks form.
- Wash berries and gently pat dry.
- Gently fold blueberries into whipped cream, cap and slice strawberries before adding. Gently fold strawberry slices into whipped cream.
