PARMIGIANO AND HERB CHICKEN BREAST TENDERS



Parmigiano and Herb Chicken Breast Tenders image

This recipe is so versatile: serve these tenders hot or cold. Cold, pair them with pasta salad. Hot, they're good as is with a simple mixed green salad. Or, top the tenders with tomato sauce and cheese, and serve them with a side of spaghetti for an extra tender quick Chicken Parm.

Olive oil, for frying
1 1/2 pounds chicken breast tenders
Salt and pepper
1 cup all-purpose flour
2 large eggs, beaten with 1/4 cup water
2 cups Italian style bread crumbs
1 cup shredded Parmesan
6 sprigs or stems fresh thyme leaves, stripped and chopped, 2 to 3 tablespoons
6 sprigs fresh rosemary leaves, finely chopped, 3 tablespoons
2 handfuls chopped flat-leaf parsley leaves
4 cloves garlic, finely chopped
1 teaspoon crushed red pepper flakes
Chicken Parmigiano, recipe follows
2 tablespoons extra virgin olive oil
1 small white onion, finely chopped
3 cloves garlic, minced
1 (14 ounce) can chunky style crushed tomatoes
1 (28 ounce) can crushed tomatoes
1 cup chicken broth or stock
A handful fresh basil leaves, torn into small pieces
Coarse salt
1 1/2 cups shredded provolone
1/2 cup grated Parmigiano-Reggiano
1 pound spaghetti, cooked to al dente

Steps:

  • Preheat oven to 350 degrees F. Place a nonstick cookie sheet in oven with a tin foil liner.
  • Heat 1/2-inch oil in a large nonstick skillet or frying pan over medium to medium high heat.
  • Season chicken tenders with salt and pepper. Wash hands. Place flour in a shallow dish. Beat eggs with water in a second dish along side the flour. In a third dish, combine the breading ingredients. Coat chicken in flour, then egg, then bread and cheese mixture. To keep your hands clean, ask for plastic gloves at the butcher counter. To ease your clean up, try using disposable tin pie tins for the flour, egg and bread crumbs.
  • Cook chicken until deeply golden on each side, 3 to 4 minutes. Transfer to cookie sheet in preheated oven and finish off for another 5 minutes cooking time. Cook chicken 5 or 6 tenders at a time in a single layer, adding additional oil if necessary. If the chicken begins to brown too quickly lower heat slightly. Serve chicken hot or cold with green salad or, complete as a Parmigiano.
  • Set water on to boil for pasta and prepare according to package directions for al dente. Before coating chicken, add oil, onions and garlic to a saucepan to cook medium low heat. Stir occasionally for 10 minutes while you are working on the chicken. Add both cans of tomatoes and a cup of chicken broth and bring sauce to a bubble. Reduce heat to a simmer until ready to serve. Stir in torn basil and season sauce with salt, to your taste.
  • Place a little of the sauce on the chicken tenders, top with the shredded provolone and Parmigiano. Place in oven or broiler to melt the cheese and then serve. Coat the hot, cooked pasta lightly with sauce then serve.

2 large boneless skinless chicken breasts, cut into 8 to 10 strips
1/4 cup milk
1 egg, beaten
2/3 cup parmesan cheese, grated
2/3 cup plain breadcrumbs (like Progresso)
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
3/4 teaspoon dried thyme
1 1/2 teaspoons dried basil
1/4 teaspoon black pepper
1 teaspoon paprika

Steps:

  • Spray a baking sheet with non-stick spray.
  • In a shallow dish, combine milk and egg.
  • In a plastic zipper bag, combine Parmesan cheese, bread crumbs, onion powder, garlic powder, thyme, basil, pepper and paprika.
  • Dip chicken strips first in milk mixture, then toss to coat evenly in the breadcrumb/cheese mixture.
  • Place on baking sheets and bake at 400 degrees F for 20 minutes or until golden.

½ cup flour
¼ teaspoon garlic powder
¼ teaspoon onion powder
1 teaspoon paprika
2 teaspoons italian seasoning
3 eggs
1 cup bread crumbs
½ cup parmesan cheese

Steps:

  • Preheat oven to 400˚F (200˚C).
  • Cut chicken breasts into strips and season with salt and pepper.
  • In a re-sealable plastic bag, combine flour, garlic powder, onion powder, paprika, and Italian seasoning.
  • Add the seasoned chicken strips into the flour mixture and seal the bag. Shake until the chicken strips are well coated with the flour mixture.
  • Beat 3 eggs in a small bowl and dip each piece of chicken until well coated.
  • In another bowl, combine bread crumbs and parmesan cheese and coat each piece of chicken with the mixture.
  • Place the coated chicken strips on a greased baking sheet and bake for 35-40 minutes, flipping halfway, and bake until golden brown (times and temperatures may vary based on oven).

1 lb chicken breasts, sliced into strips or 1 lb chicken tenders
1 cup flour
2 cups plain breadcrumbs
2 tablespoons roast chicken seasoning (I like Emerils Chicken Rub seasoning) or 2 tablespoons garlic and herb seasoning (I like Emerils Chicken Rub seasoning)
1 teaspoon garlic powder
1/4 cup grated parmesan cheese
1 egg
nonstick cooking spray
salt and pepper

Steps:

  • Place flour in shallow dish, add salt and pepper to taste.
  • In another shallow dish beat egg.
  • In third shallow dish mix breadcrumbs, seasoning, garlic powder, cheese, and salt & pepper to taste.
  • Dip chicken strips in egg.
  • Dredge chicken in flour.
  • Dip flour dredged chicken in egg.
  • Coat in the breadcrumb mixture.
  • Place coated chicken pieces on cooking sheet that has been sprayed with non-stick cooking spray.
  • Lightly spray tops of chicken pieces with non-stick cooking spray.
  • Place chicken in preheated 350 degree oven 20 -25 minutes (or longer depending on the size of your strips). For extra crunch turn oven to 425°F for last 3-4 minutes.

1 cup all-purpose flour
1 teaspoon kosher salt

Steps:

  • Cut chicken into strips.
  • Combine salt, pepper and flour on a plate.
  • Beat eggs with 1 tablespoon water in a pie plate.

1 teaspoon parsley

Steps:

  • Cut the chicken breast into strips--the size is your choice.
  • Crush the seasoned croutons and place in a dish.

4 large boneless skinless chicken breast halves (cut into 1 inch strips)
3 tablespoons honey
3 tablespoons Dijon mustard
1 teaspoon granulated garlic
1 teaspoon onion powder
2 1/2 cups panko breadcrumbs, crushed
1 teaspoon salt
1 teaspoon black pepper, freshly ground
1 tablespoon dried oregano
1 tablespoon dried basil

Steps:

  • In a Ziploc bag, mix together the bread crumbs, salt, pepper, oregano and basil. Set aside.
  • In a medium sized bowl, wisk together the honey, dijon mustard, garlic and onion powder.
  • Coat each strip of chicken with the spiced honey mustard. Be careful not to put too much, or it will get goopy. Just a thin, even coat is all you need.
  • Place a few strips at a time into the ziploc bag filled with breadcrumbs. Seal the bag. Shake to toss and coat the strips thoroughly.
  • Place the breaded strips on a baking sheet sprayed with cooking spray. Repeat with remaining strips of chicken.
  • Bake for 20 min in a preheated 400 degree oven. (or until chicken is done and juices run clear).
  • Flip each strip over during the last 5 minutes of cooking to brown and crisp on both sides.
