My great-aunt made an incredible sweet potato casserole for our holiday dinners. I've lightened it up a bit, but we love it just the same. -Beth Britton, Fairlawn, Ohio

3 pounds sweet potatoes (about 3 large), peeled and cubed
TOPPING:
3/4 cup all-purpose flour
3/4 cup packed brown sugar
3/4 cup old-fashioned oats
1/8 teaspoon salt
1/3 cup cold butter, cubed
FILLING:
1/2 cup sugar
1/2 cup 2% milk
2 large eggs, lightly beaten
1/4 cup butter
1 teaspoon vanilla extract
2 cups miniature marshmallows

Steps:

  • Preheat oven to 350°. Place sweet potatoes in a 6-qt. stockpot; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 10-12 minutes. Meanwhile, make topping by combining flour, brown sugar, oats and salt; cut in butter until crumbly. , Drain potatoes; return to pan. Beat until mashed. Add sugar, milk, eggs, butter and vanilla; mash. Transfer to a broiler-safe 13x9-in. baking dish. Sprinkle topping over potato mixture. , Bake, uncovered, until topping is golden brown, 40-45 minutes; let stand 10 minutes. Sprinkle with marshmallows. If desired, broil 4-5 inches from heat until marshmallows are puffed and golden, 30-45 seconds.

Delicious, sweet, crunchy topped sweet potato dish that is to die for. Make it for your special occasion!

3-4 c. sweet potatoes (mashed)
1/2 c. raw sugar
1/2 c. melted butter
pinch salt
2 beaten eggs
1/3 c. bourbon (optional)
1/2 c. whipping cream
1/3 c. melted butter
1 c. raw sugar
1/2 c. flour
1 c. chopped pecans (I am allergic to tree nuts, so I replace this with old fashioned rolled oats)

Steps:

  • Roast and mash sweet potatoes. (I dump them into my kitchen aid and mix them up good)
  • Mix 1/2 c. raw sugar, 1/2 c. melted butter, salt, eggs, bourbon and whipping cream together with sweet potatoes.
  • Put into a 9 x 13 baking dish.
  • Mix rest of ingredients and sprinkle over top of potato mixture.
  • Bake at 350 for 25 minutes.

Instead of the 'traditional' sweet potatoes for Thanksgiving, this is what our Southern family has had on the table for at least 3 generations. Great Aunt Margie (pronounced MAH-gee) was born in 1902.

1 cup white sugar
½ cup butter, melted
1 egg, beaten
¼ teaspoon ground cinnamon
¼ teaspoon salt
1 pinch ground nutmeg
2 cups grated raw sweet potatoes
1 orange, zested
½ orange, juiced

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Mix sugar, butter, egg, cinnamon, salt, and nutmeg together in a bowl. Stir in sweet potatoes, orange zest, and orange juice until evenly incorporated. Pour mixture into a shallow 9x13-inch baking dish.
  • Bake in the preheated oven until cooked through and bubbling, 1 hour. Serve hot or cold.

1/2 cup flour

Steps:

  • Mix first seven ingredients and spread in a 13" x 9" baking dish.
  • Mix topping ingredients and spread over sweet potato mixture.
  • Bake 25 minutes in 350 degree oven.

I detested this stuff growing up...it was bland sometimes bitter & always the dish that MANY at my family gatherings would pass on over the years. Some years ago I became intrigued by wanting to make this traditional holiday fare into something that would be scrumptious to taste and be eaten up, so I worked and experimented. Finally I came up with this recipe. My family really LOVES it and often friends and family go back for 2nd and 3rd helpings. Without further ado.. here is Sweet Potato/Yam casserole.

7 yams or 7 sweet potatoes
1/2 cup butter
1 1/2 teaspoons cinnamon
2 teaspoons vanilla extract
1 cup dark brown sugar
1/4 cup caramel sauce
white miniature marshmallow

Steps:

  • Preheat oven at 400°F.
  • Take washed yams/sweet potatoes and wrap in foil.
  • Place wrapped yam/sweet potatoes in oven with seam of foil up.
  • Bake for 1 1/2 hours or till done.
  • Take foil off and let cool for 10 - 15 minutes.
  • Peel skin off of each potato, which comes off super easy, and put each potato in a large mixing bowl.
  • Add butter, cinnamon, vanilla, brown sugar to sweet potatoes and mix with an electric mixer. Make sure it is mixed well with no clumps.
  • Take mixture and add to a 2 1/2 quart or 13x9 bake dish which has been buttered or sprayed with cooking spray.
  • Spoon over the top the caramel sauce.
  • Return to oven at 375°F for 20 minutes
  • Cover top with mini marshmallows--enough to cover the whole top of dish. Return to oven for 10 more minutes. The marshmallows should be melted and crispy but not dark browned.
  • Take out and let sit for 10- 20 minutes.
  • Serve and enjoy.

Use up sweet potatoes in this creamy dessert. Made with sweet potatoes, milk, eggs and spices, it's topped with a pecan crumble for extra texture

500g sweet potatoes
125g butter, plus extra for the dish
125g light brown soft sugar
150ml whole milk
3 eggs
grating of nutmeg
½ tsp ground cinnamon
1 tsp vanilla bean paste
35g butter
75g plain flour
75g light brown soft sugar
50g pecans, chopped

Steps:

  • Fill a large pan with boiling water from the kettle and set over a medium-high heat. Carefully drop in the whole, unpeeled sweet potatoes and cook for 30 minutes until very tender when pierced with the tip of a sharp knife. Drain well and leave to cool for 10 mins, then peel.
  • Heat the oven to 180C/160C fan/gas 4. Tip the peeled sweet potatoes into a large bowl, add the butter and mash with a potato masher until completely smooth. Tip in the brown sugar, milk, eggs, spices and vanilla and whisk until everything is combined and smooth.
  • Lightly butter a 20 x 30cm baking dish, then scrape in the sweet potato mixture. To make the topping, rub the butter into the flour, then stir in the brown sugar, pecans and a good pinch of salt. Sprinkle the topping evenly over the sweet potato filling, then bake for 45-50 mins until golden on top.
