3/4 cup reduced-fat butter, softened
1-1/4 cups packed brown sugar
1 egg
1/4 cup 2% milk
1-1/2 teaspoons vanilla extract
1 cup all-purpose flour
1-1/4 teaspoons ground cinnamon
1/2 teaspoon salt
1/4 teaspoon baking soda
1/4 teaspoon ground nutmeg
3 cups quick-cooking oats
1-1/2 cups dried cranberries
1 cup chopped peeled tart apple
1/2 cup chopped walnuts

Steps:

  • In a large bowl, cream butter and brown sugar until light and fluffy. Beat in the egg, milk and vanilla. Combine the flour, cinnamon, salt, baking soda and nutmeg; gradually add to creamed mixture and mix well. Stir in the oats, cranberries, apple and walnuts., Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 375° for 12-15 minutes or until lightly browned. Cool for 2 minutes before removing to wire racks.

0.5 cup(s) Dried apple(s) chopped
0.5 cup(s) Dried cranberries
0.5 tbsp(s) Chopped walnuts
1 spray(s) Butter flavour cooking spray

Steps:

  • Preheat oven to 350°F.
  • Combine margarine and sugar in the bowl of an electric mixer; beat until light and fluffy, about 1 minute. Add eggs and beat for 30 seconds; add applesauce and beat just to mix.
  • In another bowl, stir together flour, salt, cinnamon and baking soda; add to mixer and beat to form batter. Add oats, apples, cranberries and walnuts; combine by hand.
  • Line cookie sheet with parchment paper or coat with cooking spray. Drop batter by heaping tablespoons 1 inch apart. Bake until cookies are lightly browned and firm, about 13 to 15 minutes.
  • Remove from oven and let stand 10 minutes. Move to wire rack and cool completely. Yields 1 cookie per serving. (Note: Store leftovers in an airtight plastic bag or container in the freezer.)

500 ml cake flour, sifted
500 ml oats
500 ml granola cereal or 500 ml coconut
350 ml brown sugar
275 ml butter or 275 ml margarine
250 ml dried cranberries or 250 ml raisins
30 ml maple syrup or 30 ml honey
2 big apples or 2 big pears, grated
1 egg, whisked
5 ml bicarbonate of soda, dissolved in a little milk
5 ml vanilla essence
2 ml cinnamon
3 ml salt

Steps:

  • Preheat the oven to 180 degrees Celsius.
  • Spray a few baking sheets with nonstick spray or smear with butter lightly.
  • Mix the dry ingredients together: Sift the cake flour, salt and cinnamon and then stir in the oats, muesli and cranberries.
  • Mix well.
  • Beat the butter and brown sugar together until light and fluffy.
  • Add the egg, then add the golden syrup and vanilla and blend well.
  • Add the remaining wet ingredients: grated apple, bicarbonate of soda (dissolved in milk) and mix with the dry.
  • Mix well and knead the dough throughly.
  • Shape into small palm sized balls and place on the pre-greased baking sheets.
  • Flatten with a fork to create a pattern on the top and bake for 12-15 minutes or until golden brown.
  • Allow a few minutes for the cookies to cool on the baking sheets then transfer to wire racks to rest.
  • Store in airtight containers.

1 cup granny smith apple, washed, pared and chopped
1 cup frozen fresh cranberries, chopped if wished (I leave mine whole)
1 teaspoon organic grated orange rind
1/2 cup minus 2 tbs dark brown sugar
2 tablespoons butter or 2 tablespoons a little oil
plain yogurt (to serve)

Steps:

  • Preheat oven to 350°F.
  • Combine all ingredients except yogurt and through into a small baking dish.
  • Bake 25 minutes.
  • Serve warm or room temperature with plain yogurt on top.

Steps:

  • Preheat oven to 350°; position oven rack in the middle of oven; spray cookie sheets with nonstick cooking spray.
  • In a big mixing bowl, add half the cake mix along with cinnamon, oil, and eggs; blend with an electric mixer on med-high speed, 1-2 minutes, until blended and smooth.
  • Stir in the remaining cake mix, apple, and cranberries with a wooden spoon until all dry ingredients are moistened.

¾ cup cranberries
¼ cup white sugar
3 teaspoons ground cinnamon
1 teaspoon ground nutmeg
⅓ cup quick-cooking oats
⅓ cup all-purpose flour
½ cup packed light brown sugar
¼ cup butter, cut into pieces
½ cup chopped pecans

Steps:

  • Preheat oven to 375 degrees F (190 degrees C.) Butter an 8 inch square baking dish.
  • In a large bowl, mix together apples, cranberries, white sugar, cinnamon and nutmeg. Place evenly into baking dish.
