Great veggie burger. I like serving these guys in a pita (because the patties are delicate and tend to break... but in a pita pocket, it's all good! You know!) with lettuce, cucumber and raita or chutney.

Number Of Ingredients 6

1 cup ground almonds
1/4 cup tahini
1/2 onion, diced fine
1 carrot, diced fine
1/4 cup tamari
1 lemon, juice of

Steps:

  • Mix together the almonds, tahini, onion and carrot in a bowl.
  • Stir in half the tamari and half of the lemon juice.
  • If mixture seems dry, add up to the remaining half of each ingredient until the mixture holds together in patty form, but is not sloppy.
  • (NOTE: you can add additional ground almond if the mixture gets too wet... but it's easier to control things with the liquid.) Form 6 patties and fry in a little oil or broil until golden brown and a bit crispy.
  • Serve on a roll or in a pita pocket with your favorite condiments.

6 cups water
1 cup brown lentils
2 tablespoons olive oil
3/4 cup finely chopped carrot
1/3 cup finely chopped shallot
1/3 cup finely chopped celery
1/4 cup sliced almonds
1 teaspoon chopped fresh thyme
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
1 large egg yolk
1 tablespoon lemon juice

Steps:

  • Bring water to a boil, stir in lentils and simmer until very tender, about 25 minutes, or 30 minutes for green lentils. Drain.
  • Meanwhile, heat 1 tablespoon oil in a skillet. Add carrots, shallots and celery and cook until soft, about 3 minutes.
  • Add almonds, thyme, salt and pepper. Cook a couple more minutes.
  • Transfer to a food processor and add 1 cup of the cooked lentils. Pulse several times until coarsely ground.
  • Transfer to large bowl and add rest of the lentils. Cool 10 minutes. Stir in yolk and lemon juice.
  • Cover and chill one hour.
  • Form into 5 patties. Heat remaining tablespoon oil in large skillet medium high. Cook patties about 4 minutes, flip and cook until lightly brown and heated through.
  • Serve immediately.

The original of this recipe came from Bon Appetit -- I clipped it years before I actually made it. I love meatless entrees, though though we're not vegetarian. These burgers are so, so delicious on a bun with ketchup, or stuffed into a pita.

1 (12 ounce) box extra firm tofu
oil, for sauteeing
1/2 cup chopped yellow onions or 1/2 cup green onion
1 clove garlic, minced
1 teaspoon grated fresh ginger
1/2 cup almonds, toasted and ground or 1/2 cup almond meal, toasted
1 teaspoon toasted sesame seeds
1 egg
1 tablespoon soy sauce
1 teaspoon sesame oil

Steps:

  • Press as much liquid as possible out of the tofu in this way: Wrap the tofu in a clean kitchen towel, place on a plate, top with another plate and weight down with heavy canned goods.
  • Leave for 1 hour.
  • Unwrap the tofu, place in a bowl, and mash with a potato masher.
  • Heat the oil in a medium-size skillet over medium heat and saute the onion or green onion, the garlic and ginger until very tender and golden.
  • Add to the tofu.
  • Add the toasted almond meal and egg to the tofu.
  • Stir in soy sauce and sesame oil, plus salt to taste.
  • (At this point, you may chill the mixture for up to a day.) Shape the almond-tofu mixture into patties and either grill or pan-fry in a tiny amount of oil until hot, about 3 minutes per side.
  • Serve by themselves, on buns or bagels, or top with cheese.

Add almonds, thyme, salt and pepper; continue cooking until the almonds are lightly browned, about 2 minutes. Transfer the mixture to a food processor; add 1 cup of the cooked lentils. Pulse several times, scraping down the sides once or twice, until the mixture is coarsely ground. Transfer to a large bowl; stir in the remaining lentils. Let cool for 10 minutes. Mix in egg yolk and lemon juice. Cover and refrigerate for 1 hour.
  • Form the lentil mixture into 5 patties. Heat the remaining 1 tablespoon oil in a large nonstick skillet, preferably cast-iron, over medium-high heat. Add the patties and cook for 3 to 4 minutes. Turn gently and continue to cook until lightly browned and heated through, 3 to 4 minutes more. Serve immediately.
