- Peel russet potato and cut into 12 wedges. Pour 3 cups water into a medium bowl and submerge potato wedges for 15 minutes. Drain off water and replace with fresh water. Soak wedges for 15 more minutes.
- Meanwhile, mix together flour, cornstarch, salt, garlic powder, baking soda, and baking powder in a bowl. Pour in 1/2 cup malt beer and stir to combine. If batter seems too thick, add remaining beer 1 tablespoon at a time.
- Place cod fillets on a rimmed baking sheet lined with a drip rack. Spoon 1/2 of the batter over the fillets. Place rack in freezer to allow batter to solidify, about 35 minutes. Flip fillets over and coat the remaining side with the batter. Return to freezer for an additional 35 minutes.
- Preheat the air fryer to 400 degrees F (200 degrees C) for 8 minutes.
- Cook frozen fish fillets for 15 minutes, flipping at the halfway point.
- Meanwhile, drain off water from potato wedges and blot dry with a paper towel. Toss with oil, salt, and pepper. Air fry for 15 minutes.

- In a large mixing bowl, mix all of the beer batter ingredients, and mix well. Cover and refrigerate for about an hour.
- In a medium-sized mixing bowl, mix the flour dredge.
- Cut your fish into equal-sized portions.
- Spray your air fryer basket with olive oil spray.
- Dip the fish pieces into the beer batter, shake off the excess, and then place them in the flour dredge. Use your hands to really make sure the fish is coated.e sure the fish is coated.
- Place the breaded fish onto the air fryer basket and spray the fish's tops with olive oil spray.
- Set the temperature to 380 degrees F, air fryer setting, for 12 minutes, flipping halfway and respraying the olive oil.

- Preheat the air fryer to 400 degrees.
- Peel and then cut the potatoes lengthwise into thick slices that are about 1/2 inch thick. Pat them dry.
- Place the potato slices into a large bowl and drizzle with the olive oil, salt, and pepper. Toss to combine.
- Cook the potatoes in a single layer in the air fryer for 7-10 minutes, toss the fries and cook for an additional 5-7 minutes (or until the fries have reached your desired crispness). [Note: You will likely need to do multiple batches in order to cook all the fries. Do not overcrowd your air fryer or they will not get crispy.]
- Cut the white fish into filets that are about 4 inches each.
- In a medium bowl, combine 1 cup of the all-purpose flour with the cornstarch, baking soda, egg, and beer. You should have a thick batter.
- In another bowl, combine the remaining flour with the salt, pepper, old bay, garlic powder, and onion powder.
- Dip each filet of white fish first into the flour mixture so that they are all coated.
- Then use tongs to dip each filet into the beer batter, gently shaking off any excess batter, and then into the flour mix again, making sure to evenly coat each side.
- Finally, recoat the filet in the batter and place it on a piece of greased aluminum foil cut to fit your air fryer basket.
- Cook the fish in a single layer in the air fryer for 5-7 minutes before flipping and cooking an additional 5-7 minutes, or until golden brown.
- Depending on the size of your air fryer, you may need to cook the fish in two batches so that it can cook and brown evenly. Do not overcrowd your fryer.
- Serve immediately.

- Preheat oven to 450 degrees F. Combine fish and 1/4 cup beer in a medium bowl. Cover and chill for 1 hour. Place potatoes on a jelly-roll pan coated with cooking spray. Drizzle with 1 tablespoon oil, and sprinkle with 1/4 teaspoon salt; toss well. Bake at 450 degrees for 20 minutes or until browned and crisp, stirring after 10 minutes.

BEER-BATTERED FISH AND CHIPS
Here's my twist on classic fish and chips. The challenge of making a batch of this pub favorite is timing it so both elements (fish and potatoes) get out hot on the plate without the cook having to set up two fryers. My trick is to blanch the chips in boiling water to precook them, then fry and hold the chips in a warm oven while I fry the fish.

- Preheat the oven to 250 degrees F.
- For the chips: Fill a 6- to 8-quart Dutch oven with oil to a depth of about 5 inches. Heat to 365 degrees F on a deep-fry thermometer.
- Cut the potatoes in half lengthwise, then cut each half into thirds lengthwise, making wide strips. Place the potatoes in a medium saucepan with enough cold water to cover by about 1 inch. Salt the water generously and bring to a boil over high heat. Reduce the heat and simmer for about 5 minutes. Drain the potatoes and transfer them to a sheet pan lined with paper towels to dry for about 10 minutes. Once the potatoes are very dry, working in 2 batches, gently transfer them to the oil and fry until golden brown and crispy, 3 to 6 minutes.
- Transfer the chips to a rack set over a baking sheet and sprinkle immediately with 1 to 2 teaspoons salt. Keep warm in the oven while you fry the fish. (You can also reheat them with a quick second fry while fish is cooling slightly.)
- For the fish: Place the fillets on a small baking sheet or large plate, blot dry with paper towels and sprinkle on all sides with 1 teaspoon salt and 1/2 teaspoon pepper. Move the fish to one side and place 1/2 cup of flour on the other side (this flour is for dusting the fish just before dipping it in batter). Season the flour with a pinch of salt and a few grinds of pepper.
- To make the batter, place the remaining 1 cup flour, garlic powder, paprika, baking powder, a pinch of salt and a few grinds of pepper in a medium bowl. Stir together with a fork until combined. When ready to fry, pour in the beer and whisk until smooth. The batter should be the consistency of fairly thin pancake batter.
- Dredge the fish on all sides in the flour on the baking sheet. Shake off any excess. Working in 2 batches, coat one fillet at time in the batter, letting excess drip back into the bowl. Gently lower the fillet into the hot oil. Repeat with the remaining fillets. Fry until GBD (golden brown and delicious), 4 to 6 minutes, turning over midway through cooking.
- Drain the fillets on a rack set over a sheet pan. Serve immediately with the chips. Classic condiments to serve alongside include malt vinegar, tartar sauce or HP Sauce.
AIR-FRYER BEER-BATTERED FISH
We love a crispy piece of beer-battered fish, but we don't always want the calories that come with deep-frying. So we turned to the air fryer to develop a recipe with all the characteristics of the traditional dish-a light, crunchy-yet-airy exterior and a flaky, luscious interior. The secret to this recipe is in the method. Traditionally, the fish would go into a wet beer batter and then cook in hot oil. But in order to work in the air fryer, we needed to make some important changes. Get all the step-by-steps below, and learn how we tweaked the process, from the dredge to the oil, to create crispy air-fried fish.

- Pat fish dry; refrigerate while making batter.
- Whisk 3/4 cup flour, garlic powder, paprika, cayenne, 1/4 teaspoon salt and pepper in a shallow dish; set aside. Whisk the remaining 1 cup flour and baking soda in a medium bowl. Add beer and egg and whisk until smooth (the batter should be thick). Refrigerate the batter.
- Preheat air fryer to 390°F (see Tip). Coat the basket generously with cooking spray. Remove the fish and batter from the refrigerator and set a large rimmed baking sheet on the counter. Pat the fish dry again. Lightly dredge each piece of fish in the flour-spice mixture, tapping off excess, and transfer to one half of the baking sheet. Spread the remaining flour-spice mixture on the other half of the baking sheet.
- Using 2 forks, dip a piece of fish into the batter, letting excess batter drip off, then place in the flour-spice mixture, gently flipping until well coated. Repeat with the remaining fish. Once all the fish is coated, spray the top side with cooking spray until no dry flour remains. Arrange the fish pieces sprayed-side down in the air-fryer basket, without touching. Generously spray the tops and sides of the fish with cooking spray. Cook until the coating is golden brown and the fish flakes easily with a fork, about 13 minutes. Gently remove the fish with a flexible spatula (some batter may stick to the bottom of the basket). Sprinkle with the remaining 1/4 teaspoon salt and serve immediately.
