Fabulous Five-Minute Fudge image

Melt and stir. It's that easy when you use your microwave for this ultra-rich chocolate dessert. Store in an airtight container at room temperature for up to 1 week.

Provided by BHG Test Kitchen

Time 35m

Number Of Ingredients 5

1 12 ounce package semisweet chocolate pieces (2 cups)
0.667 cup sweetened condensed milk (one-half of a 14-ounce can)
1 tablespoon water
0.75 cup chopped walnuts, toasted if desired
1 teaspoon vanilla

Steps:

  • Line a cookie sheet with parchment or waxed paper; set aside. In a medium microwave-safe bowl, combine chocolate pieces, sweetened condensed milk, and water.
  • Microwave, uncovered, on 100% power (high) for 1 minute; stir. Microwave about 1 minute more, or until chocolate is melted and mixture is smooth, stirring every 30 seconds. Stir in nuts and vanilla. Pour mixture onto prepared cookie sheet and spread it into a 9x6-inch rectangle, or drop mixture by rounded teaspoons onto prepared cookie sheet.
  • Chill fudge about 30 minutes or until firm. Cut fudge into 1-1/2-inch squares. Makes 24 pieces

5 MINUTE FUDGE WREATH - RACHAEL RAY

5 Minute Fudge Wreath - Rachael Ray image

I got this recipe watching the Oprah Winfrey show with Rachel Ray. This was a big hit with everyone!!! This is the recipe that everyone loves so much!! I have 2 other variations also listed, so that you can try them also. When I make this recipe I am not much of a measurer I get 2 small bags of chips and just pour both in. I will use chocolate, peanut butter, white chocolate, or butterscotch. I will use just one kind or mix them up. I found its easier and just as good!!!

Provided by Creation In Hope

Categories     Candy

Time 6m

Yield 1 Wreath, 4-12 serving(s)

Number Of Ingredients 7

12 ounces semi-sweet chocolate chips
1 cup butterscotch chips
14 ounces sweetened condensed milk (save the can & wrap in saran Wrap)
1 teaspoon pure vanilla extract
8 ounces walnuts, plus more for topping
1/2 cup raisins or 1/2 cup fruit
candied red and green cherries (like holly) or green and red M&M' (like holly)

Steps:

  • Grease a round cake pan to prevent it from sticking.
  • Place your wrapped can in the middle.
  • Pour your chips, vanilla and sweetened condensed milk in a pan.
  • Heat on low till it melts.
  • Add your raisins and walnuts stir till well blended. This will stick to your pan and burn if not stirred consistently.
  • Pour your fudge into the cake pan around the can making sure your can stays in the middle of your cake pan.
  • Allow the top to stay all bumpy.
  • Cut your green candied cherries in half and use the red and green cherries to make holly on the top of the fudge. You can also use the red and green M&M's for the holly. Use a pill splitter to cut the green M&M's in half for the leaves and the red ones I make sure you can see the 'M' on them.
  • Place in the fridge till it cools hard and take it out of the pan wrap in cellophane to give as a gift.

FIVE-MINUTE FUDGE WREATHS

Five-Minute Fudge Wreaths image

Saw Rachael Ray and Oprah make this on an Oprah holiday party show. It took me 7 minutes, but who's counting! To give as a gift, wrap in cellophane and tie with a bow. Add an ornament or candy cane to make it festive. Variations include Recipe #146386 and Recipe #146387.

Time 35m

Yield 2 pounds

Number Of Ingredients 8

1 (12 ounce) package semi-sweet chocolate chips
1 cup butterscotch chips
1 (14 ounce) can sweetened condensed milk (save the can)
1 teaspoon pure vanilla extract
1 cup walnuts, coarsely chopped (plus more for decoration)
1/2 cup raisins or 1/2 cup dried currant
candied red cherries
candied green cherries, to decorate top (like holly)

Steps:

  • Butter an 8-inch round cake pan with softened butter.
  • Pour the chocolate and butterscotch chips, condensed milk and vanilla into a medium saucepan. Put the pan on the stove and turn the heat to low.
  • Cover the empty condensed milk can with plastic wrap and put it in the center of the round cake pan.
  • Stir the chips and milk until they melt together, about 3 minutes. (Make sure fudge is warm, smooth and shiny--warm enough that it won't set up instantly when you stir in the cooler nuts and raisins). Stir in nuts and raisins. Scoop the fudge into the cake pan all around the plastic-covered can in the center to form a wreath or ring shape. Let it be all bumpy on top. If the fudge moves the can off center, move it back in place.
  • Cut the red cherries in half with scissors and the green cherries into quarters. Use the green pieces to make leaves and the red to make holly berries. Decorate the fudge with several groups of holly berry sprigs made from the cherries and garnish with walnuts between the sprigs.
  • Put the fudge in the refrigerator and chill until firm (about a half hour). Remove the can from the center, then loosen the sides and bottom of the fudge with a spatula. Cut the fudge into thin slices to serve.

1 (12-ounce) bag semisweet chocolate morsels
9 ounces (3/4 of a 12-ounce bag) butterscotch morsels
1 (14-ounce) can sweetened condensed milk
1 teaspoon vanilla extract
1 (8-ounce) can walnut halves
1/2 cup (a couple of handfuls) currants
8-inch cake pan, lightly greased with softened butter

  • Cover empty condensed milk can with plastic food wrap and center it in the greased cake pan. Spoon fudge into pan around can, making sure to recenter can if it drifts.

Place the pan on a pot holder so it does not burn the kitchen counter. Stir in the nuts and raisins. Scoop the fudge into the cake pan all around the plastic-covered can in the center to form a wreath or ring shape. Let it be all bumpy and funky on top. Keep pushing the can back to the center if the fudge moves it away from there. Cut the red cherries in half with scissors and the green cherries into quarters. Use the green pieces to make leaves and the red to make holly berries. Decorate the fudge with several groups of holly berry sprigs made from the cherries and garnish with walnuts between the sprigs.
