Steps:
- Spray a large saucepan with the cooking spray and cook the onion on a medium heat until it begins to soften. You don't need to be too precise about the chopping, as it's all going in the blender later.
- Add the carrot and celery and continue to fry for a few minutes until starting to soften.
- Then add all the other ingredients.
- Bring to the boil, cover and simmer for about 45 minutes, until the lentils are soft. Cool slightly then blend in batches and serve straight away.

This hearty soup has made French-Canadian cuisine famous.

Steps:
- Drain peas, rinse under cold water and drain again; set aside. (Note: If you do not have time to soak the peas overnight, place them in a pot, cover with water and simmer for 2 minutes. Remove from heat and let them stand for 1 hour; drain and use as directed.)
- Heat oil in a large stockpot over medium-high heat. Add onion, celery, carrots and bacon; sauté until soft, about 3 minutes. Add thyme, salt and pepper; stir to coat.
- Add peas and broth; bring to a boil. Reduce heat, partially cover and simmer until peas are tender, about 50 to 60 minutes. Serve hot. Yields about 1 cup per serving.

- Heat oil in large saucepan over medium heat. Add onion, carrot, celery, and garlic.
- Cook, stirring until onion is softened, about 5 minutes.
- Add split peas, potato, broth, oregano, and pepper and bring to a boil.
- Reduce heat and simmer, covered, until split peas are very tender, about an hour.
- Stir in turkey and cook until heated through, about 5 minutes.
WW HERBED SPILT PEA SOUP
Original recipe is weight watchers... but it is in my nature to tweak even the best recipe. My biggest change was adding stock for half the water and beefing up the vegetables.

Steps:
- Heat olive oil in a large soup pot over medium heat.
- Add onions, celery, carrots, garlic, thyme and oregano.
- Cook and stir until veggies are softened, about 6 minutes.
- Add remaining ingredients, except parsley.
- Bring soup to a boil.
- Reduce heat to low.
- Cover and simmer for 1 hour.
- Remove ham from soup -- and let cool slightly.
- Puree half the soup in a food processor and return to pot with remaining soup.
- Cover to keep hot.
- Cut meat from ham shank and return meat to pot.
- Discard bone.
- Stir in parsley.
- Taste soup and adjust seasonings, if desired.
- If soup is too thick, add water or chicken broth to water it down.

SPLIT PEA SOUP WITH HAM
I came up with this when I was craving split pea soup and there was no hambone in the freezer. With both bacon and ham steak, I don't think it requires salt. Be sure to add the hot sauce to your bowl...the heat and vinegar mellows the soup.

Steps:
- Fry the bacon in your soup pot and reserve for garnish.
- Add the olive oil to the rendered bacon fat.
- Add chopped onions and carrots. Cook & stir for 10-15 minutes.
- Push to one side of the pot to make a hot spot.
- Drop the red pepper flakes and garlic into the spot.
- Cook the garlic/pepper a minute in that spot.until golden.
- Add the bay leaf, split peas, ham, broth, water and bring to a boil.
- Cover the soup and let it simmer for 60 minutes.
- Remove the bay leaf and add the half and half.
- The peas, onions and carrots should cooked enough to make the soup thick and vegetables indistinct, if not - use a hand blender -- but you'll lose the lovely ham cubes if you're too vigorous.
- Serve with reserved bacon and hot sauce dribbled on top.

CROCKPOT SPLIT PEA, LENTIL, AND BARLEY SOUP AKA WEIGHT WATCHERS
I made split pea and barley soup and was left with only a little bit of each left. I made Lentil soup, and was left with only a little bit of the bag left. I really, really wanted split pea soup tonight, so I decided to put a little bit of each in and see how it goes. I also added some turkey pepperoni instead of ham (so feel free to use whatever smoky meat you want) because...I didn't have any ham! The outcome was something unexpectedly delicious, and I think I'll be making this quite a bit in the future! By the way, each portion of this is 6 very filling Weight Watchers points (recalculating for the new system) without the turkey pepperoni. With the turkey pepperoni, it's 7.
